Steps:
- In a shallow dish whisk the eggs with the milk, set aside.
- In a small bowl, combine smoked paprika, with cayenne, garlic powder, black pepper, and salt.
- In a different dish, combine the flour with milk powder, baking powder, and the spice mix.
- To create a shaggy crust/crumbles, add 2 tablespoons of the egg milk mixture to the dry flour mixture, and rub with your fingertips until the flour mixture is coarse.
- Preheat the oil in a Dutch oven or a deep fryer to 350°F (180°C) degrees.
- To coat the chicken, dip each chicken cutlet in the egg milk mixture, and allow any excess to drip off then dredge in the flour mixture and press down firmly for the flour mixture to adhere.
- Gently shake off any excess and slowly drop in hot oil. Repeat with the remaining chicken cutlets, and fry for 4 minutes. The chicken is ready when the internal temperature registers at 165°F (74°C) degrees. If shallow frying, fry for 3-4 minutes on each side and check the internal temperature with an instant read thermometer.
- Transfer to a wire rack and top with cheese (American, Colby Jack, or Pepper Jack).
- To assemble, toast the hamburger buns, spread the chick-fil-a sauce on both sides of the bun. Top with pickles, lettuce, 2 tomato slices, fried chicken, and cheese. Close sandwich and serve with waffle potato fries.

ALMOST-FAMOUS CHICKEN SANDWICHES
The founder of Chick-fil-A, Truett Cathy, claims that he invented the chicken sandwich, and while we can't be sure he was the first person to put chicken between bread, we can give him credit for turning his own version into a cult phenomenon. People - including a few editors at Food Network Magazine - are fanatical about the chain's simple sandwich: a piece of fried chicken breast served with two pickle chips on a buttered, toasted bun. Apparently, the secret's in the seasoning, as the chefs in Food Network Kitchens discovered while re-creating the recipe. This one's for Karina Wang from Perris, CA, and all the other readers who have been begging for the recipe.

- Cut the chicken breasts in half horizontally to make 4 thin cutlets. Place the cutlets between 2 pieces of heavy-duty plastic wrap and pound to 1/8-inch thick with a mallet or heavy skillet. Season the chicken with 1 teaspoon salt and 1/2 teaspoon each pepper and paprika.
- Heat about 2 inches peanut oil in a heavy-bottomed pot over medium heat until a deep-fry thermometer registers 325 degrees F. Meanwhile, whisk the egg, milk and 2 tablespoons water in a baking dish. Whisk both flours, the malted milk powder, confectioners sugar, baking soda, dry mustard, the remaining 1/2 teaspoon paprika and 1 teaspoon each salt and pepper in another dish. Toss the pickle slices, pickle juice and vinegar in a bowl and set aside.
- Working in batches, dip the chicken in the egg mixture, turning to coat, then dredge in the flour mixture and shake off any excess. Fry the chicken in the hot oil until golden brown, about 4 minutes, adjusting the heat as needed. Drain on paper towels.
- Heat a large skillet over medium heat. Spread the cut sides of the buns with some of the butter and lightly toast in the skillet, buttered-side down; spread with more butter. Put 2 pickle slices on each bun bottom; top with a piece of chicken and cover with the bun tops.
COPYCAT CHICK-FIL-A CHICKEN SANDWICH

- In a medium bowl whisk together wet ingredients, add chicken, making sure to coat evenly. Allow chicken to marinate for 20 minutes. Meanwhile, in a medium sized pot, over medium-high, heat oil to 350°F While oil heats, in a medium bowl, whisk together dry ingredients.
- Reserving the marinade, remove the chicken to a plate. Whisk the egg into the marinade. Dip the chicken into the egg mixture, one piece at a time, shaking off excess egg mixture. Dredge chicken piece in flour mix, making sure to coat evenly on both sides. Repeat the breading process (egg mixture to flour mix) one more time, set chicken aside. Line a baking sheet with paper towels.
- Once oil is heated, cook chicken until golden brown on each side, about 2 to 3 minutes a side. Chicken should be opaque in the center. Place cooked chicken on prepared baking sheet to drain.
- Brush toasted buns with butter, place two pickle slices on each bun and top with chicken.
FRIED CHICKEN SANDWICH
These are pretty darn close to those Chick-fil-A sandwiches found in the mall food court. I like to make them on Sundays. Serve with waffle fries!

- Place each chicken breast between 2 sheets of heavy plastic on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to an even thickness. Cut each breast in half and place in a bowl. Pour pickle brine on top and let sit for 1 hour.
- Meanwhile, mix flour, powdered sugar, salt, paprika, pepper, celery salt, and basil in a bowl.
- Whisk eggs and milk together in another bowl.
- Drain liquid from the chicken and rinse off briefly. Shake any excess liquid from chicken.
- Heat oil in a deep-fryer or large skillet to 350 degrees F (175 degrees C).
- Dip each piece of chicken into the flour mixture, then into the egg-milk mixture, then coat again with the flour. Dip each piece again, if desired.
- Deep-fry chicken, 3 pieces at a time, until golden brown, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Let chicken rest on a cooling rack set over a baking sheet for 5 minutes. While chicken is resting, lightly butter each sandwich bun and toast them in a skillet.
- Add 2 pickle slices to the bottom of each bun, then a chicken piece, then top with the other bun. Repeat to make remaining sandwiches.

- In a large bowl, add Pickle Juice (1 cup) and Milk (1/2 cup). Whisk until combined and place Boneless, Skinless Chicken Breast (1).
- Marinate chicken breast in the mixture for at least 6 hours.
- For the breading, add All-Purpose Flour (1/2 cup), Salt (1 teaspoon), Ground Black Pepper (1 teaspoon), Onion Powder (1 teaspoon) and Powdered Confectioners Sugar (1 teaspoon) into a bowl. Mix well and set aside.
- In another bowl add an Egg (1) and Milk (1/2 cup). Whisk until combined.
- Remove the chicken from the marinade and place into the egg wash coating it all over followed by the flour mixture then back to the egg wash and finally once more in the flour mixture.
- Heat Peanut Oil (as needed) in a deep sauce pan to 350 degrees F (180 degrees C).
- Place the breaded chicken and fry for 8-10 minutes untill the coating is golden brown. Drain with a paper towel.
- To assemble, place Pickle Slices (2 slice) on bottom half of Hamburger Bun (2) then lay the fried chicken on top then top with the other bun.

KINDA LIKE CHICK-FIL-A SANDWICHES
I say kinda because Chick-Fil-A pressure cooks their chicken but this recipes calls for frying. The taste is pretty good. If you love Chick-Fil-A, you'll like this!! 7/8/08 Per reviews, I have changed the amount of salt on the recipe. The original recipe states 2 tbsp, but it does seem like alot, so I have changed it to 1 tbsp. Thanks for all the reviews!!
