2 lbs ground beef
1 medium onion, (chopped)
3 cloves garlic, (minced)
1 tsp garlic powder
1 tsp onion powder
1 tsp Cajon seasoning
1 tsp salt
1 tsp pepper
1/2 tsp red pepper flakes
2 tsp green Cholula® hot sauce
1/4 cup tomato paste
3 Tbsp all purpose flour
2 1/2 cups whole milk
2 1/2 cups beef broth
3 cups cheddar cheese, (shredded)
3 cups dry macaroni noodles
1/2 cup sour cream, (plus more as desired)

Steps:

  • In a large cast iron pan or skillet, add ground beef, onions and garlic. Cook until no longer pink and onions are translucent. Drain, return to pan.
  • Sprinkle seasonings, salt and pepper, red pepper flakes, over meat followed by hot sauce, tomato paste and flour. Stir.
  • Pour milk and beef broth into pan, stir.
  • Add macaroni noodles, stir and bring to a boil.
  • Cover, reduce heat to low and cook for 10 minutes or until pasta is tender.
  • Sprinkle with cheese, stir until melted, then add sour cream, stir and enjoy.

1 lb 92% lean ground beef (or your preferred type)
1 cup hot water
2 cups milk
1 1/2 cups elbow macaroni
1 cup cheddar cheese (shredded, plus more for topping, if desired)
1 tablespoon cornstarch
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon garlic
1 teaspoon salt
1 teaspoon sugar

Steps:

  • Brown ground beef in a large skillet. Drain.
  • Add hot water, milk, pasta and "sauce packet" ingredients.
  • Bring to a boil, cover, reduce heat and simmer 12 minutes or until pasta is tender.
  • In the last few minutes of cook time, add cheese, stir and re-cover.
  • When pasta is tender and cheese is melted, remove heat and uncover.
  • Let stand about 5 minutes. Sauce will thicken as it stands.
  • Top with additional cheese if you like.

This is a recipe I found, lost and found again. I got it off a can of stewed tomatoes. DH really likes it. It's simple and a one pot meal. I had to be out of town for a couple of weeks and he made it twice. Posting it here for safe keeping. Feel free to add more spices, green peppers, garlic, etc. The original recipe does not even call for salt and pepper and I always add more cheese.

1 (14 1/2 ounce) can stewed tomatoes
1 cup water
1 cup elbow macaroni

  • Brown beef and onion in large skillet; drain. Salt and pepper to taste. Add undrained tomatoes and one cup water; bring to boil. Stir in macaroni. Bring to boil; reduce heat. 4 slices bacon, diced

2 green onions, sliced, white and part of the green

6 tablespoons ketchup
3 teaspoons yellow mustard
1 (14 ounce) can chopped tomatoes

  • Cook macaroni according to package directions. Keep warm.

1 family size box macaroni & cheese dinner mix (I use Kraft or the store brand with the powdered cheese mix)
1 lb hamburger
salt and pepper
garlic (I usually put in two cloves)
shredded cheddar cheese (optional)

Steps:

  • Make your mac and cheese per the box instructions. Salt and pepper the meat and add a clove or two of garlic, brown meat. Combine the prepared mac and cheese with the hamburger mixture, add additional cheese if desired to make this nice and cheesy! Serve warm!
  • Variation: you can add diced onion to the hamburger and cook it when you brown the hamburger.
  • I usually brown my hamburger in the microwave. I put the meat in a microwave safe bowl along with the garlic (and onion if you like) and then put in microwave for three minutes on high. After three minutes take it out and stir it up, breaking the meat into pieces. Then microwave in 30 second bursts, taking it out and stirring until all the meat is brown. Then when you add the mac and cheese you can just put it in this bowl and serve. This saves how many bowls you have to dirty in the kitchen to make this dinner.
