I have used this recipe for over 30+ years. I first saw it in a cookbook put together by factory workers. I received this cookbook as a gift and have since made it my main and favorite cookbook. It is so ragged and well used. I hope you enjoy them as much as I have making them.

2 packages dry yeast
1/3 cup warm water
1/4 cup sugar
1/4 cup butter
2 teaspoons salt
1 cup scalded milk
2 eggs
4 1/2-5 cups flour

Steps:

  • Soften yeast in warm water.
  • In large mixing bowl combine sugar, butter, salt and milk.
  • Cool to luke warm.
  • Stir in eggs and yeast.
  • Gradually add flour to form a stiff dough, beating well after each addition.
  • Knead methold: Knead on floured surface until smooth and satiny (about 5 minutes).
  • Cover; let rise in warm place until doubled, about 1 hour.
  • Work done, cover, let rise again until about double, put into rolls and let rise again for another hour.
  • Bake for 12 to 15 minutes at 350 degrees.

4 to 4-1/3 cups bread flour
2-1/4 teaspoons active dry yeast
1-1/2 teaspoons salt
1 cup warm milk (70° to 80°)
1/2 cup butter, softened
1/4 cup sugar
2 large eggs, lightly beaten, room temperature

Steps:

  • In a large bowl, combine 3 cups flour, yeast and salt. In a small saucepan, heat milk, butter and sugar to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add eggs; beat to combine. Stir in enough remaining flour to form a soft dough (dough will be sticky). , Turn dough onto a lightly floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down dough. Turn onto a lightly floured surface. Divide into 24 portions; shape into balls. Place in a greased 13x9-in. baking pan. Cover and let rise in a warm place until almost doubled, about 1 hour. Bake at 375° until golden brown, 15-18 minutes.

1 egg, beaten

5 cups flour, plus more, as needed
6-cup, 3-inch muffin tin pan

Steps:

  • In a standing mixing bowl with dough hook, dissolve yeast in warm water. Let sit until lightly foamy, then stir in sugar and add egg, salt, warm milk, and 4 ounces of butter. Slowly add 5 cups flour, adding more as needed to make an elastic dough. Mix well, then roll out to floured surface and knead dough for about 5 minutes.
  • Place dough in buttered bowl, cover with towel, and set in a warm place to rise until double in bulk, about 1 hour.
  • Lightly oil the muffin pan. Punch down dough and form dough into 1-inch balls. Place 3 balls in each muffin tin. Fill muffin pan, cover with towel, and allow to rise an additional 1/2 hour.
  • Preheat oven to 425 degrees F.
  • Brush with remaining melted butter. Bake in preheated oven for 10 to 15 minutes, until golden brown.

Steps:

  • Make the dough: In the bowl of a stand mixer fitted with the dough hook, combine the milk and yeast and let stand until foamy, about 10 minutes. Increase the speed to medium and knead the dough until it is smooth and elastic, about 5 minutes.

4 sticks (1 pound) salted butter
24 frozen unbaked dinner rolls
1 1/2 teaspoons chopped fresh rosemary
1 1/2 teaspoons dried thyme
1 lemon, zested

Steps:

  • Melt 1/2 stick (4 tablespoons) of the butter and brush two 12-cup muffin tins with it. Put the frozen rolls in the cups of the muffin tins. Cover and allow to rise for several hours at room temperature or in the fridge overnight.
  • Melt the remaining 3 1/2 sticks butter in a skillet over medium-low heat. Mix in the rosemary, thyme and lemon zest and heat until warmed through. Lightly brush the risen rolls with the butter mixture.
  • Bake the rolls according to the package directions (usually 400 degrees F for 6 to 8 minutes), until the rolls are a deep golden brown on top. Dab with more of the butter mixture and serve warm.

5 ½ cups all-purpose flour
3 tablespoons white sugar
2 teaspoons salt
1 ½ teaspoons active dry yeast
1 ½ cups milk
½ cup water
⅝ cup butter, divided

Steps:

  • Combine 3 cups of the flour, the sugar, salt and yeast in a large bowl. Stir well and set aside.
  • Combine milk, water and 1/4 cup of the butter in a saucepan and cook over medium heat until butter melts, stirring occasionally. Remove from heat and let mixture cool to 120 to 130 degrees F (49 to 54 degrees C).
  • Gradually add milk to flour mixture and beat at low speed of an electric mixer for 30 seconds. Then beat for 2 minutes at high speed. Gradually stir in the remaining flour to make a soft dough.
  • Turn dough out onto a lightly floured surface and knead for about 8 to 10 minutes or until dough is smooth and elastic. Place dough in a well greased bowl, turning to grease top. Cover and let rise in a warm place for about 1 hour and 15 minutes. Punch dough down, cover and let rest for 10 minutes.
  • Melt remaining 1/4 cup plus 2 tablespoons butter.
  • Shape dough into 40 balls and dip each one in the melted butter. Place the balls in two greased 9 inch square baking pans. Cover and let rise for 45 minutes.
  • Bake in a preheated 375 degrees F (190 degrees C) oven for 15 minutes or until rolls are golden. Brush warm rolls with any remaining melted butter.

3 cups all-purpose flour
2 (1/4 ounce) packages active dry yeast
1 teaspoon salt
2 tablespoons granulated sugar
1/4 cup nonfat dry milk powder
1 1/4 cups warm water (105 to 115 degrees F)
1 large egg, slightly beaten
8 tablespoons butter, melted
2 tablespoons butter flavor shortening
1 cup butter, softened
1/3 cup condensed milk, chilled
1/2 teaspoon corn syrup
3/4-1 teaspoon cinnamon, to taste

Steps:

  • For the Rolls:.
  • Place 2 cups flour in a large mixing bowl.
  • Add yeast, salt, sugar and dry milk. Set aside.
  • In a mixing bowl, combine water and egg and stir to blend.
  • Make a well in the center of the dry ingredients.
  • Pour water mixture into the well.
  • Mix by hand, beating 150 strokes and frequently scraping bottom and sides of bowl.
  • Add 1/2 of the melted butter and beat to incorporate.
  • Add remaining flour, about 1/3 cup at a time, beating to incorporate each addition.
  • Cover bowl with plastic wrap. Set dough in a warm, draft free place such as oven with a pan of the hottest tap water on the rack below.
  • Allow batter to rise until doubled in bulk, about 1 hour.
  • Coat cups, bottoms and sides of 12 cup muffin pan (or two small round pans) with shortening.
  • Punch down batter (batter will be extremely soft and sticky).
  • Drop by hand or spoonful into prepared muffin cups to make 12 rolls (or in pan touching the next).
  • Brush dough with 1/2 remaining melted butter.
  • Let rise uncovered in a warm draft free place until doubled in bulk, about 30 minutes.

  • Place all ingredients in a food processor and blend until mixture is smooth.
