HOMEMADE BBQ SAUCE

1 tablespoon canola oil
2 cloves garlic, minced
1/2 onion, diced
1 cup ketchup
1/3 cup molasses
1/3 cup brown sugar
4 tablespoons minced chipotle peppers in adobo sauce
4 tablespoons distilled vinegar
1 tablespoon Worcestershire sauce
Dash salt

Steps:

  • Heat the oil in a saucepan over medium-low heat. Add the garlic and onions and cook for 5 minutes, stirring, being careful not to burn them. Reduce the heat to low. Add the ketchup, molasses, brown sugar, chipotle peppers, vinegar (or less to taste), Worcestershire sauce and salt and stir. Allow to simmer for 20 minutes. Taste after simmering and add whatever ingredient it needs (more spice, more sugar, etc.).

  • In a saucepan, heat oil and cook onion until tender. Stir in garlic and cook for 30 seconds. Stir in vinegar, ketchup, brown sugar and juice of lemon. Simmer for 15 minutes and season with Tabasco, salt and pepper.

Pinch ground cloves
2 cups ketchup
2 cups water
1/2 cup cider vinegar
1/4 cup dark molasses
1/4 cup firmly packed dark brown sugar
1 tablespoon kosher salt
1 tablespoon soy sauce
1 tablespoon Worcestershire sauce
2 teaspoons English-style dried mustard
1 teaspoon freshly ground black pepper
1 bay leaf

Steps:

  • Heat the oil in a medium saucepan over medium heat. Stir in the garlic, tomato paste, chili powder, paprika, red pepper, allspice, and cloves and cook, stirring, until paste is dark brick red, about 3 minutes. Add the ketchup, water, vinegar, molasses, brown sugar, salt, soy sauce, Worcestershire, mustard, black pepper, and bay leaf. Adjust the heat to maintain a gentle simmer and cook until the flavors come together, about 30 minutes. Remove and discard bay leaf before using.

  • Heat oil in a saucepan and add the onion. Cook over a gentle heat 4-5 mins, until softened. Add the remaining ingredients, season and mix. Bring to the boil, then reduce heat and simmer for 20-30 mins, until thickened. For a smooth sauce, simply whizz the mixture in a food processor or with a hand blender for a few seconds.

I have been tweaking a couple of BBQ sauce recipes and came up with one that I am really happy with. I am putting it here for safekeeping. I guess I would describe it as sweet, spicy and slightly tangy. If you would like it to have a little more kick, you could add 1/4 teaspoon more of chili powder. Please feel free to tweak my recipe to make it your own. I look forward to your comments.

This is a great BBQ sauce that I saw get made on FoodTV, I think an Ina Garten show. I made it the same day and did a few changes, based on our preferences. This sauce is thick and rich, a little bit sweet and a little spicy. This makes a lot, make half the first time you make it, then double it the next time so that you can freeze it in batches, which is what I've done.

1 1/2 cups finely chopped yellow onions (1 large onion and the food processor works well here)
3 garlic cloves, minced
1/2 cup vegetable oil
2 (4 ounce) cans tomato paste

3/4 cup honey
1/2 cup Worcestershire sauce
3/4 cup Dijon mustard
1/2 cup soy sauce
1 cup hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Steps:

  • In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned.
  • Add the remaining ingredients and bring to a low boil.
  • Simmer uncovered on low heat for 30 minutes. Use immediately or store in the refrigerator.
