HOME-MADE BAKED BEANS
Adding salt to boiling water is almost a reflex action for many cooks. But when cooking dried pulses, such as beans, it is important not to add salt at the beginning of the process. If salt is added, this will harden the bean skins, making them less palatable. For the desired soft texture from dried beans, add salt at the end of the cooking time.

- This is a regular on our menu at this time of year with sausages or even a piece of fish. You can omit the bacon for a perfect vegetarian dish. Preheat oven to 180C. Drain beans and place in a large saucepan. Cover well with cold water and bring to the boil. Simmer until cooked, about 30 minutes. Drain and reserve. Heat olive oil in a heavy-based saucepan. Add onion, garlic, bacon, pepper and salt and cook gently until soft, about 15 minutes. Add tomato paste and cook for two minutes. Add wine and reduce by two-thirds. Add tomatoes, bay leaves, sugar and beans. Bring to the boil, cover with a lid and bake for one hour, stirring occasionally.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2 1/2-quart baking dish.
- Place bacon in a large skillet and cook over medium-high heat until crisp, about 10 minutes; drain and cool on paper towels. Crumble bacon once cooled.
- Mix bacon, beans, water, brown sugar, onions, ketchup, molasses, vinegar, mustard, salt, and garlic powder together in the prepared baking dish. Cover dish with aluminum foil.
- Bake in preheated oven until bubbling, 45 minutes.

Australians love their baked beans. Most homes keep a supply of the canned variety (made by Heinz). They are often eaten for breakfast, or at least as a part of breakfast. They are eaten on crusty bread.

- Soak the beans overnight in cold water; drain.
- In a Dutch oven, place the beans, the ham hock, and enought water to cover; bring to a boil, cover, reduce heat, and simmer 30 minutes.
- Remove the hock and cut off the meat and shred; drain beans, reserving 1/2 cup of the cooking liquid.
- Heat the oil in the Dutch oven, cook the onion and garlic until they begin to soften, about 3 minutes; add tomato, reserved liquid, the Worcestershire sauce, maple syrup, Dijon mustard, shredded meat, and beans to the pot.
- Cover and simmer until beans are tender and the liquid has thickened, about 30 minutes; season with salt and pepper.
- Serve over crusty toast with wilted spinach.

EASY BAKED BEANS
I have been making this for almost 40 years. The original recipe calls for all ketchup; it was my idea to make that half ketchup and half barbeque sauce. I do love spicy. I have never had a baked bean recipe that was this good and also this easy. Nobody will know you didn't spend all day on it.

- Preheat oven to 325 degrees F (165 degrees C). Prepare a 9-inch baking dish with cooking spray.

BAKED BEANS FROM SCRATCH

- Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Or, bring the beans and water to a boil in a large pot over high heat. Once boiling, turn off the heat, cover, and let stand 1 hour. Drain and rinse before using.
- Place the beans in a large saucepan with 4 cups of water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 1 hour.
- Preheat an oven to 375 degrees F (190 degrees C). Stir the ketchup, maple syrup, brown sugar, molasses, Worcestershire sauce, salt, pepper, and chili powder together in a small bowl; set aside.
- Once the beans have simmered for 1 hour, drain, and reserve the cooking liquid. Pour the beans into a 1 1/2 quart casserole dish and stir in the chopped onion and the molasses sauce. Stir in enough of the reserved cooking liquid so the sauce covers the beans by 1/4 inch.
- Cover, and bake in the preheated oven for 10 minutes, then reduce the heat to 200 degrees F (95 degrees C), and cook 6 hours longer. Stir the beans after they have cooked for 3 hours. Once the beans are tender and the sauce has reduced and is sticky, remove from the oven, stir, recover, and allow to stand 15 minutes before serving.

- Preheat the oven to 160°C (140°C fan-forced).
- In a medium saucepan, combine beans, bicarbonate of soda and cover with water. Bring to the boil, remove from heat and allow to stand for at least two hours. Return saucepan to the heat, bring to the boil, drain.
- Heat oil in a large enamelled cast-iron casserole and sauté onion and garlic.
- Add the remaining ingredients, including the beans and bring to the boil.
- Place the ham hock on top of the beans, cover and place casserole in preheated oven for 4-5 hours.
- Remove hock from casserole, discard skin and bone, shred meat. Remove bay leaves before returning shredded meat to the beans. Serve on toast.

- In a large saucepan or Dutch oven, bring beans, salt and 2 qt. water to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. Return beans to pan. Cover with remaining water; bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 2 hours or until beans are tender. Drain, reserving liquid. In a greased 2-1/2 qt. baking dish, combine beans, 1 cup liquid, onion, molasses, bacon, brown sugar, mustard and pepper. Cover and bake at 325° for 3 to 3-1/2 hours or until beans are as thick as desired thickness, stirring occasionally. Add more of the reserved cooking liquid if needed.
