- Combine hominy, garlic, and jalapeno in a saucepan. Bring to a boil, reduce heat, and simmer until hominy is tender, 15 to 20 minutes. Strain out liquid and pour hominy mixture into baking dish. Stir sour cream and butter into hominy mixture; top with Cheddar cheese.
- Bake in preheated oven until cheese melts, about 25 minutes.

- In a large skillet over medium heat, add olive oil and garlic.
- Saute for about 1 minute or until fragrant, add chopped onion and bay leaf. Saute until the onions are lightly brown.
- Transfer everything to a large pot.
- Add carrots, tomatoes, canned hominy, bay leafs, and cumin into the pot.
- Cook for about 5 minutes until it begins to bubble up.
- Pour in veggie stock and bring it to a boil.
- Lower heat and simmer for about 30 minutes until the carrots are done.
- Pour into a bowl. Garnish with choped parsley and squeeze lime on top. Serve and enjoy!

The prep time is nothing. The long haul comes with all the cooking, rinsing and cooking again and again. I filled my quart jars 1/2 full with the hominy, as it does tend to expand during the processing. Make sure you read the box on how to handle the lye safely.

Steps:
- Place corn in an enameled pan; add water and lye.
- Boil vigorously for 30 minutes.
- Let stand for 20 minutes.
- Rinse off lye with several hot water rinses.
- Follow with cold water rinses to cool for handling.
- Work hominy with hands until dark tips of kernels are removed.
- This may take awhile.
- Separate the tips from the corn by floating them off.
- Add water to cover hominy about 1 inch and boil 5 minutes; change water.
- Repeat this step 4 times.
- Add water and cook until kernels are soft (30 to 45 minutes) and drain; saving this hot water you drain off.
- Pack hominy into sterile jars about 1/2 full.
- Add 1 teaspoon salt to each quart jar.
- Fill to within 1/2 inch of top of jar with water in which the corn was last cooked in or boiling water.
- Put on cap, screw band firmly tight.
- Process: using 10 pounds of pressure.
- Pints for 60 minutes.
- Quarts for 70 minutes.
- I used quart jars and only filled them half full with the hominy.
- Because during the processing, the hominy will expand.

BLACK BEAN HOMINY CHILI
Canned white or yellow hominy adds wonderful corn flavor and color. This is even better is it's allowed to sit for a day and get rewarmed. *Serve this chili as "Chili Burritos" by wrapping in tortillas with green onions, shredded sharp cheddar cheese, cilantro, sour cream and salsa for a great 2nd meal!

- Pick over the beans for any debris. Rinse the beans and set aside.
- In a 4 qt or larger heavy saucepan over medium heat, heat the oil and saute the garlic and onion until they are softened but not brown, 5 - 10 minutes.
- Add the chili powder, pepper flakes, sugar, thyme, cumin, oregano, and coriander. Stir and cook for 5 minutes.
- Add the beans, tomatoes (including the juice or puree), vegetable broth, water and salt. Bring to a boil, reduce heat to a simmer, cover and cook for 1 1/2 hours or until the beans are tender. Add the hominy and pepper.
- Taste for salt and add if necessary. Thicken, if desired by adding 1 Tbs cornmeal at a time and simmering for 5 minutes after each addition.
- Can keep covered in the refrigerator for up to 7 days.
CHILI HOMINY BAKE
This is an old family favorite I got from an old Better Homes & Gardens Ground Meat Cookbook. It's super easy and was great after working all day and having to feed 3 hungry growing boys. Now grown, they still request this dish. We like to serve with a salad and a pan of cornbread is a must! If you have a cast iron skillet - use it! No need to dirty another dish. Brown the meat per directions, add everything in and slide it into the oven.

- Preheat oven to 375 degrees.
- In large skillet brown ground chuck and onion till done. Drain well. Stir in stewed tomatoes (including juice), drained hominy, chili powder, flour, salt & pepper. Mix well.
- Pour mixture into 2 quart greased casserole dish.
- Bake for 20 minutes.
- Top with cheese and continue baking for 5 minutes or until cheese has melted.
- *This is exceptional using ground turkey & ground beef (3/4 lb of each). Lightens the dish but still has great flavor!
