HOLIDAY AMBROSIA SALAD
My Mom would make this every Thanksgiving and Christmas, and it has been a family favorite for three generations. The dressing is gently cooked, and the salad so light you can serve it anytime.

Steps:
- Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, 5 to 7 minutes. Drain, transfer to a large bowl, and cool.
- Whisk the sugar, eggs, flour, salt, and reserved pineapple juice together in a saucepan until smooth. Cook and stir over medium heat until the mixture thickens. Pour over cooled pasta, and toss to coat evenly. Cover and refrigerate overnight, or at least 8 hours.
- Stir the pineapple chunks and mandarin oranges into the pasta mixture. Mix in the coconut if desired. Stir in the frozen whipped topping until evenly blended. Chill until serving.

FRUIT COCKTAIL FLUFF {A.K.A. EASY AMBROSIA SALAD}
Three simple ingredients. Incredibly easy. And a family favorite comfort food. Need we say more? Whip up this creamy Fruit Cocktail Fluff Salad in no time. And then watch it disappear ... in no time, too.

Steps:
- Drain fruit cocktail, but not well ... you want to leave a little bit of the juice.
- Place fruit cocktail and marshmallows in a bowl and stir together. Add Cool Whip. Stir gently until well combined.
- Refrigerate for at least six hours, or until marshmallows are soft.
HOLIDAY AMBROSIA FRUIT FLUFF
Whipped cream may be used in place of Cool Whip if desired but the Cool Whip tends to hold up better for this salad, and you may adjust the amount to taste --- not only is this delicious this colourful dessert makes a wonderful presentation to serve at your holiday table, it may be be made well in advance! :)

Steps:
- In a small bowl toss the cranberries with sugar; set aside for 30 minutes at room temperature.
- In a large bowl combine the marshmallows with chopped apples, grape halves, pineapple and chopped pecans.
- Add in the sugar-coated cranberries and toss to combine.
- Fold in the Cool Whip topping.
- Cover and chill until ready to use.
- Before serving sprinkle with coconut.

- Drain the liquid from all the cans of fruit. Thin the sour cream with whichever fruit juice you would like. Mix all the ingredients together with the thin sour cream.

- Drain pineapple, reserving 1/4 cup juice in a saucepan; set pineapple aside. Add brown sugar and orange zest to the juice; heat until sugar dissolves. Peel and section oranges into a large bowl, reserving any juice; add the apples and pineapple. Add pineapple juice mixture and stir gently. Chill. Just before serving, sprinkle with coconut.
