HOISIN-GLAZED MEATBALLS WITH ROASTED SWEET POTATO AND BABY BROCCOLI
We're big fans of baking, rather than frying, our meatballs for a healthier alternative to this dinnertime staple. But don't worry, the dish is still jam-packed with flavor thanks to a sweet hoisin glaze, roasted sweet potatoes, and crispy veggies. One bite and you'll be hooked.

- Wash and dry all produce. Preheat the oven to 450 degrees. Halve the sweet potato lengthwise, then thinly slice into ¼-inch half moons. Peel and mince the ginger. Thinly slice the scallions, then chop until finely minced.
- Roast the sweet potatoes: Toss the sweet potatoes on a baking sheet with a drizzle of oil and a pinch of salt and pepper. Place in the oven for about 20 minutes, flipping once, until golden brown.
- In a medium bowl, combine the ginger, scallions, beef, panko, and 1 teaspoon sugar. Season with salt (we used ¾ teaspoon kosher salt) and pepper. Form into 1-inch meatballs, and place onto one side of a lightly oiled baking sheet.
- Place the baby broccoli on the opposite side of the baking sheet with the meatballs. Toss with a drizzle of oil and a pinch of salt and pepper. Place in the oven for 15 minutes, until tender and slightly crispy.
- After 15 minutes, glaze each meatball with a little hoisin sauce. Remove the baby broccoli from the baking sheet, then return to the oven for about 5 minutes.
- Finish and serve: Cut the lime into wedges. Serve the meatballs with the baby broccoli and sweet potatoes on the side. Squeeze over a lime wedge and enjoy!

But just to double make sure that they don't disappoint, we're coating them in a sweet hoisin glaze and adding green beans for crispness and crunch. One bite and you'll be hooked on this combination of Asian-inspired flavors.

- Adjust rack to middle position and preheat oven to 450 degrees. Lightly oil a baking sheet. Wash and dry all produce. Peel and mince ginger until you have ½ TBSP (1 TBSP for 4 servings). Trim and thinly slice scallions, separating whites from greens; mince whites.
- In a small pot, combine ¾ cup water (1½ cups for 4 servings) and a pinch of salt. Bring to a boil, then stir in rice, cover, and reduce to a low simmer. Cook until rice is tender, 15-18 minutes. Keep covered off heat until ready to serve.
- While rice cooks, in a medium bowl, combine beef, panko, minced ginger, scallion whites, garlic powder, and 2 TBSP water (3 TBSP for 4 servings). Season with salt (we used ¾ tsp; 1½ tsp for 4) and pepper. Form into 1-inch balls and place on prepared baking sheet. Bake until meatballs are browned and cooked through, 15-18 minutes.
- Meanwhile, in a second medium bowl, combine hoisin and 2 TBSP water (3 TBSP for 4 servings). Once meatballs are cooked through, carefully transfer to bowl with hoisin mixture; toss to coat.
- Heat a drizzle of oil in a large pan over medium-high heat. Add green beans and cook, stirring, 3 minutes. Add 2 TBSP water (4 TBSP for 4 servings) and cover pan with a lid or aluminum foil. Cook until tender, 2-3 minutes more. Uncover and let water evaporate. Season with salt and pepper.
- Cut lime into wedges. Sprinkle meatballs with sesame seeds. Fluff rice with a fork; stir in 1 TBSP butter and season with salt and pepper. Divide rice between plates and top with green beans and meatballs. Garnish with scallion greens. Serve with lime wedges on the side.

- In a large bowl, combine eggs and milk. Add the bread crumbs, onion and salt. Crumble beef over mixture and mix well. Shape into 1-in. balls. Place on greased racks in shallow baking pans. - Heat oven to 220C/200C fan/gas 7. In a large bowl, combine the onion, carrot, half the garlic and half the rosemary with the turkey and some seasoning. Shape into 16 meatballs and put in a small baking tray. Toss the potatoes with the remaining garlic, rosemary and the oil, place in a baking tray, then cook both for 20 mins, with the potatoes on top shelf.
- After 20 mins, drain juices off the meatballs, pour cherry tomatoes over, sprinkle with the Parmesan and season. Toss the potatoes, and swap to bottom shelf with the potatoes on top. Cook for another 20 mins until the potatoes are crisp and the meatball sauce is bubbling.
- When the potatoes and meatballs are almost done, cook the broccoli for 3-4 mins, until tender. Sprinkle the basil on top of the meatballs and serve with the crispy potatoes and broccoli.

- In a large bowl, combine the first 8 ingredients; stir in bread crumbs. Add pork; mix lightly but thoroughly. Shape into 1-1/2-in. balls.
