Hoisin-BBQ-Glazed Chicken Thighs image

Baste grilled chicken thighs with an Asian-style BBQ sauce, and serve extra for drizzling.

2 tablespoons vegetable or peanut oil, plus more for oiling the grill grates
8 bone-in skin-on chicken thighs
Kosher salt and freshly ground black pepper
2 tablespoons finely grated peeled fresh ginger
2 cloves garlic, chopped
1/2 cup ketchup
1/2 cup hoisin sauce
1/2 cup dry sherry
2 teaspoons toasted sesame oil
2 teaspoons soy sauce
1 1/2 teaspoons Asian chili garlic sauce
Cooked broccoli and white rice, for serving

Steps:

  • Preheat an outdoor grill for medium heat.
  • Sprinkle the chicken thighs generously with salt and pepper. Lightly oil the grill grates. Grill the chicken until grill marks appear and an internal temperature of 170 degrees F, about 15 minutes per side.
  • While the chicken cooks, make the sauce: Heat the vegetable oil in a small saucepan over high heat. Add the ginger and garlic and cook until soft, 1 to 2 minutes. Add the ketchup, hoisin, sherry, sesame oil, soy sauce and chili garlic sauce. Whisk until smooth and bring to a boil. Remove from the heat and let cool.
  • Brush the chicken thighs with about 1/2 cup of the sauce several times in the last 5 minutes of cooking time. Serve the chicken with the extra sauce and with cooked broccoli and white rice.

2 chickens (2 1/2 to 3 pounds each), quartered, with backs removed
1 recipe Barbecue Sauce, recipe follows
1 1/2 cups chopped yellow onion (1 large onion)
1 tablespoon minced garlic (3 cloves)
1/2 cup vegetable oil
1 cup tomato paste (10 ounces)
1 cup cider vinegar
1 cup honey
1/2 cup Worcestershire sauce
1 cup Dijon mustard
1/2 cup soy sauce
1 cup hoisin sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1/2 tablespoon crushed red pepper flakes

Steps:

  • Marinate the chickens in 2/3 of the barbecue sauce for a few hours or overnight in the refrigerator.
  • Heat the coals in a charcoal grill. Spread the bottom of the grill with a single layer of hot coals and then add a few more coals 5 minutes before cooking, which will keep the fire going longer. Place the chicken quarters on the grill, skin side down, and cook for about 45 minutes, turning once or twice to cook evenly on both sides. Brush with the marinade as needed. The chicken quarters are done when you insert a knife between a leg and thigh and the juices run clear. Discard any unused marinade.
  • Serve with extra barbecue sauce on the side.
  • In a large saucepan on low heat, saute the onions and garlic with the vegetable oil for 10 to 15 minutes, until the onions are translucent but not browned. Add the tomato paste, vinegar, honey, Worcestershire sauce, mustard, soy sauce, hoisin sauce, chili powder, cumin, and red pepper flakes. Simmer uncovered on low heat for 30 minutes. Use immediately or store in the refrigerator.
  • Yield: 1 1/2 quarts

  • While the broiler heats, combine the hoisin, honey, vinegar, and oil in a small saucepan; bringing to a boil over medium-high heat. Combine cornstarch and water; add to hoisin mixture, stirring with whisk. Bring to a boil; cook 1 minute stirring constantly. Remove from heat.
  • Combine salt and next 4 ingredients (salt through five-spice powder); rub evenly over both sides of chicken. Place chicken on a broiler pan coated with cooking spray, and broil 5 minutes. Brush with hoisin mixture; broil 4 minutes or until done, basting frequently with hoisin mixture.

This recipe calls for boneless chicken breasts WITH the skin on. This is a quick recipe- Most of the prep/cook time is just spent allowing the chicken to marinate. While this recipe uses the grill, I don't see why you can't do it on the stove top or under the broiler with a little modification. From Cooking Light.

3 1/2 cups water
1/3 cup kosher salt
3 tablespoons brown sugar
2 tablespoons Chinese five spice powder
4 (6 ounce) boneless chicken breast halves
1 cup ice
2 tablespoons hoisin sauce
2 teaspoons dark sesame oil
2 teaspoons fresh ginger, minced
1 1/2 teaspoons brown sugar
1 1/2 teaspoons reduced sodium soy sauce
1/4 teaspoon Chinese five spice powder
cooking spray

Steps:

  • Combine water, kosher salt, 3 Tbsp brown sugar, and 2 Tbsp soy sauce in a large bowl and stir until salt and sugar have dissolved.
  • Stir in 2 Tbsp five-spice powder.
  • Pour mixture into a large ziplock bag.
  • Rinse chicken with cold water.
  • Place chicken and ice in bag with the salt mixture.
  • Refrigerate for 2 hours, turning several times.
  • Remove chicken from bag and pat dry with paper towels.
  • Discard the brine/marinade.
  • Combine hoisin sauce, sesame oil, ginger, 1 1/2 tsp brown sugar, 1 1/2 tsp soy sauce, and 1/4 tsp five-spice powder in a small bowl.
  • Heat one side of the grill to medium and leave the other side turned off.
  • Place chicken, skin side down, on grill rack coated with cooking spray.
  • Close lid and grill for 8 minutes on each side, brushing it occasionally with the hoisin sauce mixture.
  • Place chicken skin side up on the unheated side of the grill; brush again.
  • Grill an extra 5 minutes or until done.
  • Discard skin and serve.

1/2 cup hoisin sauce
1 teaspoon finely grated peeled fresh ginger
4 garlic cloves, minced
1/2 teaspoon dried hot red pepper flakes
1/2 teaspoon Asian sesame oil
1 tablespoon soy sauce
1 tablespoon rice vinegar (not seasoned)
8 chicken thighs with skin and bones (2 3/4 pounds)

Steps:

  • Preheat oven to 500°F.
  • Whisk together all ingredients except chicken, then coat chicken all over with sauce. Arrange thighs, skin sides up in 1 layer without crowding, in a foil-lined large shallow baking pan (1 inch deep). Roast in upper third of oven until chicken is cooked through and glaze is brown, 20 to 30 minutes.

Place chicken in a freezer bag and seal. Pushing out as much air as possible. Allow sauce to cool and place in its own freezer bag. Place both bags inside one large bag, seal, label and freeze. To serve: Thaw in fridge. Cook as directed in recipe. The cooked chicken can be frozen as well. Just allow to cool, then place in a freezer bag."
