More Philly Stuff? You got it! Here's how to make a real Hoagie. The word Hoagie came from the sandwiches that used to get eaten by workers over on a place that was nicknamed "hog island" The workers there would bring crusty rolls with Italian meats and some olive oil and they became known as "hoggies" which eventually morphed into hoagie... Now that I've sounded like a Cliff Claven... the only other thing I have to say is don't make this with a soft roll! It has to be a GOOD crusty Italian Long Roll!

2 teaspoons red wine vinegar
1 tablespoon dried oregano
1 tablespoon olive oil
4 hoagie rolls
1/4 lb prosciutto di Parma, thinly sliced
1/4 lb capicola, thinly sliced
1/4 lb genoa salami or 1/4 lb soprassata salami, thinly sliced
1/4 lb provolone cheese
1 large tomatoes, thinly sliced
1 small onion, thinly sliced
1/8 cup shredded lettuce

Steps:

  • Slice the rolls, but not all the way through.
  • Place the vinegar and oregano in a small bowl. Slowly whisk in the oil until emulsified.
  • Remove some of the bread from the center of each half of roll.(if desired)
  • Drizzle a little of the olive oil mixture on the bread.
  • Place first the meats, then the cheese in layers.
  • Top with the tomatoes, onions, then the lettuce. Drizzle with more of the dressing, as desired.

3 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
Four 6-inch ciabatta rolls
1/2 teaspoon dried oregano
1/4 pound thinly sliced prosciutto
1/4 pound thinly sliced capicola (preferably hot)
4 ounces thinly sliced Genoa salami
1/3 pound thinly sliced provolone
2 plum tomatoes, very thinly sliced
1 1/2 cups shredded lettuce
1/2 red onion, very thinly sliced
4 pickled pepperoncini, thinly sliced
Fresh basil leaves, cut into thin strips (optional)

Steps:

  • Stir together the oil, vinegar and salt and pepper to taste.
  • Using a serrated knife, slice open the rolls. Drizzle half the dressing on the roll bottoms and sprinkle on the oregano. Divide the cold cuts, cheese, tomatoes, lettuce, onion and pepperoncini evenly among the bottom rolls. Top with the basil, if using. Drizzle the remaining dressing on the top halves of the rolls and place on top to make sandwiches. Wrap in wax paper. Slice in half and serve.

2 pickled pepperoncini peppers
1/2 head iceberg lettuce
1 large tomato, halved and seeded
1/4 pound deli-sliced genoa salami
1/4 pound deli-sliced ham
1/4 pound deli-sliced prosciutto
1/4 pound deli-sliced roast turkey
1/4 pound deli-sliced provolone cheese
1/2 cup mayonnaise
1 tablespoon extra-virgin olive oil
1 teaspoon dried oregano
1 1/2 teaspoons dried basil
1/4 teaspoon red pepper flakes
1 10-to-12-inch round loaf Italian bread
8 hoagie rolls, cut into pieces, for dipping

Steps:

  • Chop the onion, pepperoncini, lettuce and tomato into bite-size pieces. Dice the meats and cheese.
  • Combine the chopped vegetables, meats and cheese in a large bowl. Add the mayonnaise, olive oil, oregano, basil and red pepper flakes and stir until everything is all mixed up and tasty. Refrigerate until ready to serve.
  • Carve out the center of the bread loaf to make a bowl (don't cut through the bottom) and cut the scraps into bite-size pieces. Serve the hoagie dip in the bread bowl, with the extra bread and hoagie rolls to scoop it up. Yummers!

2 Italian sandwich rolls or one 9-inch loaf of Italian bread
2 tablespoons mayonnaise if desired
3/4 cup finely shredded lettuce
1/2 small onion, sliced very thin
6 slices of hard salami
6 thin slices of capicola (seasoned smoked ham) or other cooked ham
4 thin slices of provolone
6 thin slices of tomato
3 tablespoons olive oil
1 tablespoon red-wine vinegar
1/2 teaspoon dried orégano, crumbled
2 bottled hot cherry peppers, or to taste, sliced thin

Steps:

  • Halve the rolls horizontally, leaving on edge cut to form a hinge, spread the mayonnaise on the cut sides of the rolls, and on the bottom halves of the rolls layer the lettuce, the onion, the salami, the capicola, the provolone, and the tomato. In a small bowl whisk together the oil, the vinegar, the orégano, the cherry peppers, and salt and pepper to taste, drizzle the dressing over the fillings, and cover the fillings with the top halves of the rolls. Cut each sandwich in half.

I have two versions of what we call our House Dressing that I use for salads. I have been using the first version (the original) for over 40 years, and the second version for about 5. Everyone that has eaten my salads, loves either version, and more people than I can remember asked for the recipe. It is so simple and basic, yet it tastes great. Most of my guests always ask me to use my house dressing as opposed to bottled salad dressings. I never measure, so I will have to estimate, but I would suggest you go with the smaller amounts first, then taste and adjust, if necessary. Of course, the amount will have to be adjusted according to the size of the salad.

1/4 lb salami (hard or sandwich)
1/4 lb deli style sliced ham
1/4 lb hot capicola
1/4 lb pepperoni (hard or sandwich)
1/4 lb sliced provolone cheese
2 medium tomatoes
3/4-1 head iceberg lettuce
1/2 medium onion (can use sweet onion)
1/2 cup mayonnaise (can use miraclewhip)
1/4 cup Italian dressing
1/4 cup red wine vinaigrette dressing
1 teaspoon garlic powder
1 teaspoon oregano
12 hoagie rolls

Steps:

  • Chop salami, ham, pepperoni, capicola, provolone, tomatoes, lettuce and onion into bite size pieces and place in large serving bowl. (don't use a food processor, pieces will be too small)
  • Add both dressings, mayonnaise, garlic powder, oregano and stir together. If you are making this more than a few hours in advance do not add until closer to when you will be eating the dip (will be too soggy).
  • Slice hoagie rolls as if you were slicing a loaf of bread and serve with dip.
