1 cup raisins
½ cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
½ cup chopped walnuts
2 eggs
¾ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
  • In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
  • Bake 10 to 13 minutes in the preheated oven, until the edges are golden.

Number Of Ingredients 12

1 cup shortening
1/2 cup brown sugar, firmly packed
1 cup granulated sugar
2 large eggs, beaten
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
3 cups quick-cooking rolled oats
1/2 cup chopped nuts (optional)
1/2 cup semi-sweet chocolate chips (optional)
1/2 cup raisins (optional)

Steps:

  • Preheat oven to 350°F.
  • Cream together shortening and sugars.
  • Add eggs and vanilla, beat well.
  • Sift together flour, salt and soda.
  • Add to creamed mixture.
  • Stir in oats slowly.
  • Mix well. Add nuts, chips or raisins, if desired. Dough will be fairly stiff.
  • Drop by heaping tablespoon on lightly greased cookie sheet. (I use a 4 teaspoon cookie scoop and press them down slightly before baking).
  • Bake for 8-10 minutes.

H.O. 'S OATMEAL COOKIES

I guess I'm showing my age when I remember H.O. oatmeal? I don't know if that brand exists anymore, but the recipe came from the box panel and boy were they good. Nothing fancy, just pure and simple ingredients make these wonderful oatmeal cookies. HO oats were quick cook oats and that they were small and powdery in texture. Maybe that's why there was no flour in the recipe??? Since I use whole oats which are hard to stick together; I put my oats in the food processor and pulse a few times which breaks them down and makes a kind of flour out of them.

3 1/4 cups oatmeal (pulsed in the food processor for a few times to make them kind of floury)
3/4 cup butter, softened
3/4 cup sugar
1 teaspoon vanilla

Steps:

  • Combine all the ingredients.
  • Blend thoroughly with hands until mixture holds together.
  • Press dough into 1-inch balls.
  • Flatten with a fork; Place on ungreased cookie sheet.
  • Preheat oven to 350 degrees for 15-20 minutes or until light brown.
  • (You could add raisins, or chocolate chips to fancy these up).

CRISPY OATMEAL COOKIES

3/4 pound (3 sticks) unsalted butter
1 cup light brown sugar
1 1/8 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla extract
3 cups rolled oats (not instant)
1 1/2 cups all-purpose flour
3/4 teaspoon kosher salt
2 1/2 teaspoons baking soda
1 1/2 cups raisins

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixer, cream the butter until fluffy. Add the sugars, and cream together until light and fluffy. Add the egg and vanilla and mix well.
  • In a bowl, stir together the oats, flour, salt, and baking soda. Mixing, slowly add the oat mixture to the butter mixture and mix just until combined. Add raisins and mix just until combined.
  • Drop by tablespoonfuls onto the baking sheets, leaving at least 2-inches between cookies. Bake until browned and crispy around the edges, about 8 to 10 minutes. Let cool on wire racks and store in an airtight container.

OLD FASHIONED OATMEAL COOKIES

Crisco® Original No-Stick Cooking Spray
3/4 cup Crisco® All-Vegetable Shortening or 3/4 stick Crisco® All-Vegetable Shortening Sticks
1 1/4 cups firmly packed brown sugar
1 large egg
1/3 cup milk
1 1/2 tsps. vanilla extract
3 cups old-fashioned rolled oats
1 cup Pillsbury BEST® All Purpose Flour
1/2 tsp. baking soda
1/2 tsp. salt
1/4 tsp. ground cinnamon
1/2 cup raisins
1/2 cup coarsely chopped walnuts

Steps:

  • HEAT oven to 350 degrees F. Coat baking sheets lightly with no-stick cooking spray.
  • COMBINE shortening, brown sugar, egg, milk and vanilla in bowl of electric mixer; beat at medium speed until well blended.
  • COMBINE oats, flour, baking soda, salt and cinnamon. Mix into shortening mixture at low speed just until blended. Stir in raisins and walnuts. Drop by rounded measuring tablespoonfuls of dough 2 inches apart onto prepared baking sheets.
  • BAKE 8 to 10 minutes or until lightly browned. Cool 2 minutes on baking sheets. Place on cooling racks to cool completely.

CHOCOLATE CHIP OATMEAL COOKIES

1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 cups rolled (old-fashioned) oats
1/2 cup coarsely chopped pecans
8 tablespoons (1 stick) unsalted butter, at room temperature
1/2 cup lightly packed light brown sugar
1/2 cup granulated sugar
1 large egg
1/4 cup maple syrup
1/2 teaspoon vanilla extract
3/4 cup semisweet chocolate chips

Steps:

  • Set 2 racks in the middle and upper thirds of the oven and preheat to 350 degrees F.
  • In a medium bowl, stir the flour, baking powder, baking soda, salt, oats, and pecans together with a whisk or fork.
  • In a large bowl, beat the butter, brown sugar, and granulated sugar together for 30 seconds until blended. Beat in the egg until smooth and barely fluffy. With mixer running on medium high, drizzle in the maple syrup, and vanilla until incorporated. Turn the mixer down to its lowest setting and gradually add the flour-oatmeal mixture. Blend just to combine, then mix in the chocolate chips.
  • Drop walnut-sized balls of dough onto a nonstick or parchment-lined cookie sheet at 3-inch intervals. With moistened fingers, flatten and round out the cookies a little. Bake for 9 minutes, turning the pan once for even baking. The cookies are done when they are lightly browned on top. Set the cookie sheets on a rack to cool.
