ALMOST-FAMOUS SHAMROCK SHAKE
Green food for St. Patrick's Day is a purely American tradition - thanks in part to McDonald's. The chain dyed milkshakes green as a promotion in 1970 and is still cranking them out 50 years later. Shamrock Shakes have developed a bit of a cult following. Fans debate the flavor (it's officially vanilla-mint, but some insist there's a hint of lime) and frantically visit multiple locations to get their hands on one. Only certain spots sell them, and only in February and March. If you can't find one, get your fix with this recipe from our test kitchen.

- Combine 3 cups vanilla ice cream, 1/4 cup whole milk, 2 tablespoons vanilla-flavored syrup, 1/4 teaspoon mint extract (not peppermint) and 4 drops green food coloring in a blender. Puree until smooth and creamy, adding 1 to 2 more tablespoons milk if needed. Divide between 2 large glasses. Top with whipped cream and a cherry.
HUNGRY GIRL CRAVIN' CAPTAIN CRUNCH SHAKE - WW 3 POINTS
Ok I admit, I've been intrigued by Hungry Girl! The website has fantastic info (so does the book) and they include Weight Watchers POINTS too!! This particular shake is HG's take on Carl Jr.'s Captain Crunch Shake. Makes 1 shake = 3 points.

Steps:
- Place all the ingredients in a blender, and then blend with 3 ice cubes.
- One at a time, add more ice cubes and then resume blending, until your ideal consistency is reached. (I like my shakes pretty thick, so I end up using about 5 - 7 cubes in total.)
- Then pour your shake into a glass, and top it off with the Reddi-wip!

- Preheat the oven to 450°F.
- Spray a large roasting pan and rack with nonstick spray. Drain the juices from the turkey; pat dry with paper towels. Discard the neck and giblets. Loosely stuff the body and neck cavities with the stuffing. Close the cavities with metal skewers and tie the legs together with kitchen string.
- Place the turkey, breast side up, on the rack in the pan. Pour the Madeira over the turkey; sprinkle with the salt and pepper. Pour 2 cups water into the pan. Place the pan in the oven. Immediately reduce the temperature to 350°F Roast until an instant-read thermometer inserted at least 2 inches into an inner thigh (without touching the bone) registers 180°F and the center of the stuffing registers 165°F, 3 3/4-4 1/2 hours.
- Transfer turkey to a cutting board. Tent with foil and let stand 20 minutes.
- Meanwhile, make the gravy. Transfer the stuffing to a bowl. Carve the turkey and serve with the gravy and stuffing. Remove the skin before eating.

LUCKY SHAMROCK CAKE FOR ST. PATRICK'S DAY- 1 BOWL
This is so festive! It's really yummy and the best part is... it's quick to make with ingredients you probably already have on hand. It's a single layer round cake that's perfect when you don't need a big, giant cake. You can easily double this recipe and make a 13x9 if you have a larger family.

Steps:
- Prepare your choice of pudding according to package directions with the 2 cups of milk. I usually use the cooked chocolate pudding. Chill with a piece of plastic wrap pushed down onto the surface of the pudding so that it doesn't form a skin- yuck!
- Preheat oven to 350. Grease and flour one 8 inch round cake pan.
- In a bowl combine flour, sugar and baking powder. Add milk, butter, egg, vanilla and food coloring. Beat with a mixer on low speed till combined. Beat on medium 1 minute. Pour into cake pan.
- Bake 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
- Cool in pan 5 minutes then remove from pan. Cool completely.
- To assemble cake, put cake layer on serving plate, spread pudding over the top and then spread the whipped cream or cool whip over pudding. I don't cover the sides with the whipped cream unless something goes wrong with the cake and it looks funny or something. I think the layers look pretty showing. Sprinkle green sugar, beads or other green cake decorations over the top to finish. Sometimes you can find little green shamrocks in the cookie decorating department.
SHAMROCK TOFFEE FUDGE
Tiny toffee bits add a delightful crunch to this creamy fudge. Decorate each piece with a green shamrock for St Patrick's day. By changing the design, you have dessert for any occasion.

Steps:
- Line a 9-inch square pan with foil and grease the foil; set aside.
- In a large saucepan, combine the milk and chips. Cook and stir over low heat until chips are melted.
- Add the butter and salt; stir until smooth. Remove from the heat; stir in toffee bits ans extract. Pour into prepared pan. Cover and refrigerate for 2 hours or until firm.
- Using foil, remove frdge from pan; carefully remove foil. Cut fudge into 1 inch squares.
- Place the frosting in a small resealable plastic bag; tint with food coloring. Cut a small hole in a corner of bag; pipe a shamrock onto each square.
