2 cups fat-free milk
1 small (4-serving) package sugar-free fat-free instant vanilla pudding mix
24 reduced-fat vanilla round wafer cookies (recommended: Reduced Fat Nilla)
2 medium bananas, sliced
Fat-free whipped topping (thawed from frozen), optional

Steps:

  • Combine milk with pudding mix in a bowl. Beat with an electric mixer or a whisk for 2 minutes, or until thoroughly blended. Set aside.
  • In a 9-inch square baking pan, arrange a layer of wafers, flat sides down, and then top with a layer of banana slices. Continue alternating layers until all of the wafers and banana slices are in the dish.
  • Top the dish with the pudding and let it seep down in between the wafer and banana layers. Cover and refrigerate for 2 to 3 hours. If desired, add whipped topping before serving.

1 whole wheat tortilla (recipe calls for a La Tortilla Factory Whole Wheat Low-Carb or Low-Fat Tortilla, Large)
1 veggie burger (like Boca Meatless Burger, Original)
1 slice fat-free cheddar cheese
3 slices tomatoes
1/3 cup lettuce, shredded
onion, sliced (optional)
pickle (optional)
ketchup (optional)
mustard (optional)
fat-free mayonnaise (optional)

Steps:

  • Prepare Boca patty according to package directions (in a pan with nonstick spray, or in the microwave).
  • Top patty with cheese slice. Microwave for 20 seconds, or until cheese melts. Set aside.
  • Place tortilla on a plate, and warm it slightly in the microwave. Place lettuce in the center of the tortilla, and top with tomato slices.
  • Chop cheese-topped patty into bite-sized pieces, and then arrange on top of the lettuce and tomato. If you like, top with any (or all!) of the optional guilt-free burger toppings.
  • Wrap tortilla up by folding in the sides first, and then rolling it up tightly from the bottom. Enjoy!

1 (20 ounce) can crushed pineapple in juice (not drained)
1 (6 ounce) package fat-free sugar-free instant vanilla pudding mix, the 6-serving size
2 cups non-fat vanilla yogurt
1 cup Cool Whip Free, thawed
16 reduced-fat vanilla wafers, crushed
fat free Reddi-Wip topping (optional)

Steps:

  • In a medium mixing bowl, combine un-drained pineapple, pudding mix, yogurt and Cool Whip. Mix well. Pour into a medium serving dish (a large pie pan works well). Refrigerate for at least 1 hour, or until ready to serve.
  • Top dish evenly with crushed Nilla Wafers just before serving. If you like, finish off each serving with a dollop of Reddi-wip. Enjoy!
