Stove Top Smoker Boneless Chicken Breasts (With or Without Skin) image

When it comes to serving smoked chicken as a main course, most people will offer boneless breasts for the centerpiece of a meal and use smoked thighs as an ingredient in soups, salads, and casseroles. I'm an exception to that rule, choosing legs over breasts for just about any chicken dish I'm preparing. Legs and thighs have more flavor and are easier to keep juicy, although with a stovetop smoker keeping the breasts juicy is less of a problem. From the cookbook "Smokin".

4 (8 ounce) boneless chicken breasts (this amount will fill up the smoker rack at one time) or 6 (6 ounce) boneless chicken breasts (this amount will fill up the smoker rack at one time)

Steps:

  • Trim any fat from the breasts before seasoning them. If you're leaving the skin on in preparation for serving the crispy-skinned version, trim any overhanging skin and smooth the skin into an even layer over the chicken. If not, remove the skin before smoking the chicken.
  • Boneless chicken breasts absorb a lot of flavor and watch well with a wide variety of wood. Use less of the more assertive wood like hickory or mesquite, or more of the milder wood chips like alder or cherry. Use 1 1/2 Tblsp hickory or mesquite OR 2 to 2 1/2 Tblsp alder or cherry wood chips.
  • Season the chicken breasts with 1/2 teaspoon kosher salt and a scant 1/8 teaspoon freshly ground pepper each, adjusting that amount to your taste. Or rub a generous amount of your

  • Close the smoker lid and smoke the chicken breasts until an instant read thermometer registers 170ºF, 18-22 minutes for 6-oz/3/4-inch thick breasts, 22-25 minutes for 7-oz/1-inch thick breasts; 25-30 minutes for 8-oz, 1 1/4-inch thick breasts. Check for doneness with the instant read thermometer about 4 minutes before the end of the time.

DH and I made this wonderful recipe from Christopher Styler's "Smokin" Cookbook, shortly after getting our new Cameron stovetop smoker (which we love--thanks TxGriffLover!). To smoke the chicken, please refer to TxGriffLover's Recipe #293665 293665. We thought this recipe was very tasty. My father-in-law was also impressed by the smoky flavor that was imparted from the stovetop smoker as he is used to outdoor smoking. We used alder in this recipe and began smoking the chicken shortly after starting the piperade.

3 tablespoons extra virgin olive oil
1/2 cup diced smoked ham (1/4 inch dice)
2 large yellow onions, sliced 1/2 inch
kosher salt
fresh ground black pepper
2 red bell peppers, cut into 1/4 inch strips (cores, seeds, membranes removed)
2 yellow bell peppers, cut into 1/4 inch strips (cores, seeds, membranes removed)
1/2 cup dried mushroom
2 teaspoons dried thyme
2 teaspoons kosher salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon sugar
four 7-oz smoked chicken breast
1 tablespoon mushroom, herb rub
1 1/2 tablespoons apple wood chips (can use cherry or alder wood)

Steps:

  • For the Mushroom-Herb Rub: Grind all rub ingredients to a powder in a small electric spice mill (makes about 3 Tb).
  • For the piperade: Heat the oil in a large, heavy skillet over medium heat. Add the ham and cook, stirring occasionally, until lightly browned, about 4 minutes. Sitr in the onions, season lightly with salt and pepper, and cook until softened and lightly browned, about 8 minutes. Stir in the red and yellow peppers and season them lightly with salt. Adjust the heat to medium-low and cook, stirring often, until they are very tender and sweet, about 30 minutes. The piperade can be made several hours in advance and reheated over low heat.
  • For the chicken: To smoke the chicken, pat the chicken breasts dry with paper towels. Massage the herb rub into both sides of the breasts, dividing the rub evenly. Set up the smoker using the wood chips and smoke the chicken breasts according to the directions in Recipe #293665 293665.
  • Reheat the piperade if necessary. Serve the chicken nestled into a bed of piperade.

3 tbsp mascarpone
1 tbsp finely chopped rosemary
1 garlic clove, crushed
2 chicken breasts, skin on
4 slices prosciutto
splash olive oil
juice of half a lemon

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Mix the mascarpone with the rosemary, garlic and seasoning. Place the chicken breasts on a board and lift, but don't detach, the skin. Put a spoonful of the mascarpone mix under the skin of each breast. Wrap 2 slices of prosciutto around each, as neatly and tightly as you can, to keep the filling enclosed.
  • Heat a non-stick frying pan, add the olive oil and quickly brown the chicken on both sides. Transfer to a roasting tin, then finish off in the oven for 15-20 mins until just cooked.
  • Add the lemon juice to the roasting tin and stir over the heat, scraping off any crispy bits. Spoon the juices over the chicken and serve with potatoes and green beans.

4 large skinless, boneless chicken breast halves
2 tablespoons olive oil
1 teaspoon dried rosemary

  • Preheat grill for medium heat and lightly oil the grate.

1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon garlic powder
1 teaspoon smoked paprika
¼ teaspoon red pepper flakes
½ teaspoon dried oregano
½ teaspoon ground mustard
1 tablespoon light brown sugar
6 small chicken drumsticks, or 8 small drumsticks
1 cup applewood chips
heavy duty aluminum foil
vegetable steamer basket

Steps:

  • Soak the applewood chips in cold water for at least 30 minutes. Drain before using.
  • In a small bowl, whisk together the salt, pepper, garlic powder, smoked paprika, red pepper flakes, oregano, ground mustard, and brown sugar.
  • Add the chicken drumsticks to a large bowl and pat dry with a paper towel. Season the chicken with the dry rub and toss to coat evenly. Set aside while you build the stovetop smoker.
  • Line a Dutch oven or large, heavy-bottomed pot with a lid with 2-3 sheets of heavy-duty aluminum foil. Spread the drained applewood chips in an even layer in the bottom of the pot and place the steamer basket on top.
  • Place the pot over high heat. Once the wood chips start to lightly smoke, add the chicken drumsticks to the steamer basket, place another sheet of foil on top, and cover with the lid. Smoke the chicken over high heat for 8-10 minutes, then reduce the heat to medium-low and continue cooking for another 20 minutes. Turn off the heat and allow the chicken to sit in the smoker, covered, for an additional 10 minutes. The internal temperature of the chicken should register between 165-170°F (74-78°C).
  • Arrange a rack in the upper third of the oven. Turn the broiler on high. Remove the chicken from the smoker, place on a rimmed baking sheet, and broil for 5-7 minutes, until the chicken has crisped and charred in spots. Serve immediately.

HERBY SLOW-ROAST CHICKEN

Marinate your bird overnight in bay, rosemary, lemon thyme and sage, then slow-cook for a flavour-packed roast dinner

2 small garlic bulbs, cloves separated but not peeled
1 large bunch rosemary
1 large bunch lemon thyme
1 large bunch sage
1 large bunch bay leaves
2 small lemons , zested
4 tbsp olive oil
1 medium chicken - the best quality you can afford
400g carrot , halved
500g baby new potato , halved
2 medium red onions , cut into wedges
100g butter , softened
150ml white wine

Steps:

  • Roughly bash the garlic cloves and herbs (a rolling pin or meat mallet is good for this), then put in a large food bag or dish with the lemon zest, oil and chicken. Rub everything into the chicken, inside and out. Leave to marinate overnight.
  • Heat oven to 140C/120C fan/gas 1. Remove the chicken from the fridge 30 mins before you want to cook it. Put the vegetables in a large roasting tin and top with the chicken. Scatter the herbs and garlic from the marinade over, around and inside the bird. Push the 2 lemons inside the chicken too, halving to fit if necessary. Rub the butter all over the skin and season generously.
  • Pour the wine into the tin with 150ml water, cover tightly with a tent of foil (so it doesn't touch the top of the bird) and cook for 2 hrs. Remove the foil and continue cooking for 1 hr more, or until the chicken is cooked and the juices run clear. Increase oven to 220C/200C fan/ gas 7 and roast for 25-30 mins more until the skin is really crisp. Lift the chicken from the tin to rest on a plate for 30 mins, covered again with the foil.
  • Meanwhile, put the roasting tin on the hob and bubble to reduce the cooking juices a little. Add any juices from the rested chicken and season to taste. Serve the bird in the middle of the table to share, alongside the buttery veg.

1 (5 1/2 lb) roasting chickens (up to 5 1/2-pounds)
2 1/2 tablespoons wood chips

2 -4 garlic cloves

Steps:

  • Trim any excess skin from the neck end of the chicken and pull out the giblets and any pockets of fat from the cavity.
  • First brine your birds. Put the chicken(s) in a stockpot or Dutch oven. Pour in cold water, one quart at a time until the item is completely covered. Lift out the bird and stir in 3 tablespoons sea or kosher salt for every quart of water you have added. Return the chicken to the brine. Set the container of chicken and brine in the refrigerator. Brine for 1 1/2 hours per pound (minimum of 3 hours). Dry the chicken, and rub some freshly ground black pepper inside, also add some whole cloves of garlic and a few lemon wedges to the cavity.
  • Start the chicken(s) breast side up on the smoker rack with the smoker on the stove top. Use 2 1/2 tablespoons cherry or oak wood chips OR 1 1/2 tablespoons hickory wood chips. Instead of the smoker cover, tent the smoker with heavy-duty aluminum foil. Smoke 40 minutes over medium heat.
  • After the chicken(s) have been smoking 30 minutes, set the oven rack in the center position and preheat the oven to 425ºF. When the chickens are done smoking, remove the aluminum foil and roast the chicken in the oven until an instant-read thermometer inserted into the thickest part of the thigh near the hip joint registers 170ºF, 30-60 minutes, depending on the size and quantity of the chicken(s).
  • After they have rested for 5-10 minutes, serve hot or at room temperature. Leftover smoked chicken is delicious in chicken salad, casseroles, and sandwiches.
