ROASTED SALMON WITH GREEN HERBS

Roasted Salmon with Green Herbs image

Provided by Ina Garten Bio & Top Recipes

Categories     main-dish

Time 47m

Yield 6 servings

Number Of Ingredients 9

1 (2- to 2 1/2-pound) skinless salmon fillet
Kosher salt and freshly ground black pepper
1/4 cup good olive oil
2 tablespoons freshly squeezed lemon juice
1/2 cup minced scallions, white and green parts (4 scallions)
1/2 cup minced fresh dill
1/2 cup minced fresh parsley
1/4 cup dry white wine
Lemon wedges, for serving

Steps:

  • Preheat the oven to 425 degrees.
  • Place the salmon fillet in a glass, ceramic, or stainless-steel roasting dish and season it generously with salt and pepper. Whisk together the olive oil and lemon juice and drizzle the mixture evenly over the salmon. Let it stand at room temperature for 15 minutes.
  • In a small bowl, stir together the scallions, dill, and parsley. Scatter the herb mixture over the salmon fillet, turning it so that both sides are generously coated with the green herbs. Pour the wine around the fish fillet.
  • Roast the salmon for 10 to 12 minutes, until almost cooked in the center at the thickest part. The center will be firm with just a line of uncooked salmon in the very center. (I peek by inserting the tip of a small knife.) Cover the dish tightly with aluminum foil and allow to rest for 10 minutes. Cut the salmon crosswise into serving pieces and serve hot with lemon wedges.

SIMPLE LEMON-HERB ROASTED SALMON

Simple Lemon-Herb Roasted Salmon image

This go-to recipe uses a fish's best friends: butter, herbs and lemon. Roasting at a high temperature lets you lightly brown the fillets on foil, without having to use a skillet, so there's minimal cleanup. Make this quick entree often, and use the time you save to try a new side dish to go with it.

Provided by Food Network Kitchen

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 6

Olive oil, for the foil
Four 5- to 6-ounce skinless salmon fillets
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter, cut into 4 pieces
1 tablespoon chopped fresh dill and/or parsley
Half a lemon

Steps:

  • Position an oven rack in the top of the oven, and preheat to 450 degrees F. Line a rimmed baking sheet with foil, and brush with oil.
  • Place the salmon fillets, evenly spaced, in the middle of the prepared baking sheet. Sprinkle the tops with 3/4 teaspoon salt and a few grinds of pepper. Bake until the outside is opaque and slightly firm to the touch and the inside flakes easily (insert a small paring knife between layers to check; the color will vary from bright pink (rare) to pale pink to orange (well-done)), 8 to 12 minutes, depending on the desired doneness.
  • Remove the fillets from the oven, top each with a piece of butter and let melt over the top and down the sides. Sprinkle with herbs, lemon juice and salt to taste. Transfer the salmon to serving plates with a spatula. Serve hot or at room temperature.

HERBED SALMON FILLETS WITH SUN-DRIED TOMATO TOPPING

Herbed Salmon Fillets With Sun-Dried Tomato Topping image

Attractive and full of flavor, not to mention easy to prepare (oops, just did). You may certainly use PANKO breadcrumbs, but be sure to crumble them finely first with your fingers. This pairs nicely with parmesaned orzo and grilled zucchini.

Provided by FlemishMinx

Categories     Vegetable

Time 25m

Yield 2 serving(s)

Number Of Ingredients 13

2 salmon fillets
1/2 teaspoon sea salt
1/2 teaspoon fresh ground black pepper
1 tablespoon fresh basil, minced (or 1 tsp dried)
1 tablespoon fresh thyme, minced (or 1 tsp dried)
2 teaspoons fresh rosemary, minced (or 1/2 tsp dried)
1/2 cup dry breadcrumbs
4 teaspoons extra virgin olive oil
2 tablespoons shallots, minced
1 tablespoon fresh lemon juice
1/2 cup dry white wine
6 sun-dried tomatoes, finely minced (NOT oil-packed)
extra salt and pepper

Steps:

  • Pre-heat oven to 400°F and adjust oven rack to center of oven.
  • Lightly grease a small oven-proof baking dish (large enough to fit the fillets in one layer).
  • In a small flat bowl (large enough to accomodate one salmon fillet, or use a piece of wax paper instead), combine the sea salt, pepper, basil, thyme, rosemary and bread crumbs.
  • Press the TOP of each fillet (not the skin side) into the crumb mix, then place each in the baking dish (skin side down).
  • Sprinkle the remaining crumb mix over the salmon, dividing equally, and pressing lightly into the samon.
  • Drizzle with 2 tsp olive oil.
  • Bake in oven just until fish flakes when tested in the center, about 8-12 minutes, depending on the thickness of your fish.
  • As the fish is baking, heat the remaining 2 tsp oil in a 10-inch non-stick skillet over medium heat; add shallots and saute, stirring constantly, until lightly golden, about 1 minute.
  • Add lemon juice, wine, and sun-dried tomatoes, and cook until "sauce" is reduced to about 1/2 cup, about 2 minutes-watch this carefully, it goes quickly!
  • Spoon tomatoes and "sauce" over the salmon and serve immediately.

HERBED SALMON FILLETS

Herbed Salmon Fillets image

From Canadian Living Rush Hour Cookbook, 1985. I made it for dinner the other night and my husband loved it. The best part is that it is ready in no time. If you don't care about salmon, you can use sole, flounder or haddock instead. I'll double the sauce the next time I make it as it is delicious over steamed rice.

CRISPY SALMON FILLETS

Crispy Salmon Fillets image

Provided by Food Network

Categories     main-dish

Time 45m

Yield 8 to 10 servings

Number Of Ingredients 11

One 1.5-kilogram/3.3-pound salmon side
1/4 cup unsalted butter (56 grams)
4 cups panko breadcrumbs
2 teaspoons garlic powder
2 teaspoons dried herbs (such as Herbs de Provence or Italian seasoning)
Kosher salt
Freshly ground black pepper
3 eggs
3/4 cup mayonnaise
2 tablespoons Dijon mustard
Nonstick cooking spray

Steps:

  • Line a baking sheet with parchment paper and set aside.
  • Prepare the side of salmon by cutting away the thinner belly fat and picking out any pin bones.
  • To remove the skin, cut the meat away from the skin with a long knife starting at the tail end. Firmly hold the skin in one hand, hold the knife at a low angle, and continue slicing between the skin and meat until you reach the end. Cut the salmon into 8 to 10 equal portions and set aside in the fridge.
  • Melt the butter in a large skillet over medium heat and add in the panko, garlic powder and herbs. Season with salt and pepper and cook, stirring frequently, until the panko is golden brown. Transfer the panko into a shallow dish and allow to cool to room temperature.
  • Meanwhile, in a separate shallow dish, whisk together the eggs, mayonnaise and Dijon with 1/2 teaspoon each of salt and pepper. Retrieve the salmon from the fridge and, using a paper towel, dry off the outside of each fillet. Dip the salmon into the egg mixture, being sure to coat the entire surface, then press into the panko to coat and transfer to the prepared baking sheet.
  • At this point, you can cook the salmon or cover lightly with plastic and place the full baking sheet in the freezer. Once the salmon is frozen, transfer to a heavy-duty freezer bag and store in the freezer for up to 3 months.
  • To cook the fillets, either fresh or frozen, preheat your oven to 425 degrees F (220 degrees C) and lightly grease a baking sheet with nonstick cooking spray or line with parchment paper. Arrange the fillets on the prepared pan, leaving a few inches of space between each and bake the fresh fillets for 15 to 18 minutes, or the frozen for 22 to 25 minutes, or until cooked through and the fish flakes easily with a fork.

POACHED SALMON FILLETS WITH CREAMY HERBED CUCUMBER SAUCE

Poached Salmon Fillets with Creamy Herbed Cucumber Sauce image

Poaching salmon for any occasion just got tastier thanks to a delicious cucumber sauce.

Provided by Sheri Castle

Time 4h40m

Number Of Ingredients 21

12 ounces mini seedless cucumbers (about 6 cucumbers)
6 tablespoons plus 1¼ tsp. kosher salt, divided
6 cups cold water, plus more for cooking salmon
8 (6- to 8-oz.) skin-on center-cut salmon fillets
1 cup (8 oz.) dry white wine (such as Sauvignon Blanc; avoid oaky Chardonnay)
1 small yellow onion, sliced (about 1 cup)
2 small celery stalks, cut into 1-inch pieces (about ¾ cup)
1 medium carrot, cut into 1-inch pieces (about ½ cup)
¼ cup fresh lemon juice (from 1 lemon)
3 tablespoons chopped fresh dill, plus 2 large dill sprigs, divided
3 tablespoons chopped fresh flat-leaf parsley, plus 2 large parsley sprigs, divided
1 tablespoon pickling spice
½ teaspoon black peppercorns
1 cup plain whole-milk Greek yogurt (or sour cream)
3 tablespoons chopped fresh chives
3 tablespoons fresh lime juice (from 2 limes)
2 tablespoons olive oil
2 teaspoons whole-grain mustard
1 teaspoon granulated sugar
¼ teaspoon black pepper
Grated lemon zest or lime zest

Steps:

  • Coarsely grate cucumbers using large holes of a box grater. Line a fine mesh strainer with cheesecloth, and place strainer in a bowl. Place grated cucumbers in prepared strainer, and toss with 1 teaspoon of the salt. Place in refrigerator; drain at least 4 hours or up to 12 hours.
  • Meanwhile, stir together 6 cups cold water and 6 tablespoons of the salt in a large, shallow dish until salt dissolves. Add salmon fillets in a single layer. Refrigerate, uncovered, 1 hour.
  • Remove salmon from shallow dish; discard salt water. Working in batches, if needed, arrange salmon in a single layer in a large, shallow Dutch oven or a large, nonreactive skillet with a tight-fitting lid. Add wine, onion, celery, carrot, lemon juice, dill sprigs, parsley sprigs, pickling spice, and peppercorns. Add enough cold water to submerge salmon (about 4 cups). Cook over medium until an instant-read thermometer inserted in cooking liquid reaches 175°F, 8 to 10 minutes. Remove from heat; cover and let stand 10 minutes. Using a long spatula, lift salmon to remove from liquid. Pat salmon dry. Repeat poaching process with remaining salmon. Discard poaching liquid and solids in Dutch oven.
  • Arrange salmon on a serving platter. Cover and refrigerate until chilled, at least 2 hours or up to 12 hours.
  • Meanwhile, place yogurt, chives, lime juice, oil, mustard, sugar, pepper, and remaining ¼ teaspoon salt and 3 tablespoons each chopped parsley and dill in a food processor or blender. Process until smooth, about 30 seconds. Transfer to a bowl. Cover and refrigerate until ready to serve.
  • Remove cucumbers from refrigerator, and squeeze to remove liquid; discard liquid. Stir ⅔ cup squeezed cucumbers into yogurt sauce; reserve remaining squeezed cucumbers for garnish. Remove and discard salmon skin. Dollop salmon with sauce; garnish with lemon zest and squeezed cucumbers.
