Steps:
- In a large bowl, combine the flour, salt, basil and thyme; cut in shortening and butter until crumbly. Add water, 1 tablespoon at a time, tossing lightly with a fork until mixture forms a ball. Cover and chill for at least 30 minutes. , Meanwhile, in a skillet, brown beef in 1 tablespoon oil until no longer pink; sprinkle with salt and pepper. Remove with a slotted spoon; set aside. Add remaining oil to skillet; gradually stir in flour until smooth. Cook and stir over medium heat for about 2-3 minutes or until lightly browned. Gradually add water; whisk until smooth. , Return beef to skillet. Reduce heat; cover and simmer for 20 minutes. Add the potatoes, carrot and onion. Cover and simmer for 25 minutes or until tender. Remove from the heat; cool. , Divide pastry into four equal portions. On a lightly floured surface, roll out one portion into a 9-in. circle. Mound 3/4 cup filling on half of circle. Moisten edges with water; fold dough over filling and press edges with a fork to seal. , Place on an ungreased baking sheet. Repeat with remaining pastry and filling. Cut three slits in top of each; brush with egg. , Bake at 400° for 25-30 minutes or until golden brown.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Divide pastry dough into four equal portions and roll each one out in a square shape. Set pastry aside to rest.
- Place a large skillet over medium heat. Add butter or margarine and allow to melt. Add onion and saute for 5 minutes, until translucent and beginning to brown. Add carrot, turnip, potato, mushrooms, and water. Lower heat and cover skillet. Allow mixture to cook for 10 minutes, stirring occasionally.
- In a small bowl, dissolve yeast extract in milk. Whisk in 1 egg. Stir this mixture into cooked vegetables. Continue to stir until mixture thickens. Add cheese, and salt and pepper to taste. Set aside to cool.
- Place 1/4 of filling on one half of each pastry square. Fold pastry diagonally and seal edges. Brush tops of pastry with beaten egg.
- Place pasties on a baking sheet and bake in preheated oven for 30 minutes, until pastry is golden brown.

Steps:
- Rub the butter and lard into the flour with a pinch of salt using your fingertips or a food processor, then blend in 6 tbsp cold water to make a firm dough. Cut equally into 4, then chill for 20 mins.
- Heat oven to 220C/fan 200C/gas 7. Mix together the filling ingredients with 1 tsp salt. Roll out each piece of dough on a lightly floured surface until large enough to make a round about 23cm across - use a plate to trim it to shape. Firmly pack a quarter of the filling along the centre of each round, leaving a margin at each end. Brush the pastry all the way round the edge with beaten egg, carefully draw up both sides so that they meet at the top, then pinch them together to seal. Lift onto a non-stick baking tray and brush with the remaining egg to glaze.
- Bake for 10 mins, then lower oven to 180C/fan 160C/gas 4 and cook for 45 mins more until golden. Great served warm.

HERBED BURGER PATTIES
We make our burger patties from scratch rather than buying the pre-made supermarket variety, as they're too salty for me. This recipe ramps up the flavour by trading the salt for a variety of either fresh or dried herbs instead. These are good on turkish breadrolls or ciabatta rolls with salad of your choice.

Steps:
- Freeze the butter.
- Separate out the beef in a mixing bowl so it's grainy.
- Combine all herbs in a second bowl.
- Grate the frozen butter into the beef.
- Mix in herbs, and combine all ingredients loosely.
- Shape mixture into 4 large round pattiess 1cm thick. Make a depression in the centre of each.
- Grill patties 7-10 minutes (depending on how well-done you like your burger!).

Steps:
- In a bowl, combine ground beef, cold water, garlic salt, oregano, pepper and paprika. Mix to blend well.
- Divide meat into even pieces. Shape each piece into a patty, about 3/4-inch thick.
- Coat patties with flour. Let sit for a few minutes.
- Then dip patties into beaten egg and into bread crumbs.
- Brown patties on both sides in butter in a skillet.
- Arrange patties in a shallow baking dish.
- Pour a little spaghetti sauce over patties. Sprinkle with grated cheese. Pour the rest of the spaghetti sauce over patties.
- Bake at 400F for about 25 minutes or until patties are hot and cheese has melted.
- Sprinkle with herbs and serve.
