STEAK FRITES RECIPE
Steak Frites Recipe with lemon herb butter is a classic French dish that is absolutely delicious and incredibly easy to make.

Steps:
- Butter: Add the butter to a stand mixer with the paddle attachment and whip on high speed until light and fluffy, about 5-7 minutes.
- Next, add in the rosemary, thyme, green onions, garlic, lemon zest, lemon juice, salt, and pepper until combined. Set aside.
- Fries: Add the fries to a container of cold water and move around with your hands to get some of the starch off.
- Drain and rinse the potatoes again and drain off any excess water.
- Place them in a deep fryer or a pot of oil at 300° for 3 minutes.
- When ready to serve turn the heat to 350° and cook for 3-5 more minutes. Toss with salt in a bowl and serve.
- Steak: Season the steak on both sides with salt and pepper.
- Add the oil to a large frying pan over high heat. Once smoking, add in the strip steak and turn the heat down to medium.
- Add in the thyme, garlic, and butter and cook for 3-5 minutes per side for a medium-rare internal temperature.
- Once you flip the steak over baste the steak until it's done.
- Rest the steak for 3-4 minutes before slicing and serving with some of the butter and fries.

- Place a baking sheet in the oven and preheat the oven to 425 degrees F.
- Put the fries in a large bowl and drizzle with the oil. Sprinkle with the onion powder, garlic salt and pepper and toss to coat.
- Remove the baking sheet and spread the fries onto it. Bake according to the package instructions. Transfer to a bowl, toss with the parsley and season with salt if needed.

- Brush an 8-inch square baking dish with oil.
- Combine water, polenta, herbs, and 3/4 teaspoon salt in a heavy medium saucepan and bring to a boil over medium heat, whisking. Reduce heat to medium-low and cook, stirring constantly with a long-handled wooden spoon, until polenta begins to pull away from side of pan, 15 to 20 minutes. Stir in cheese and butter until incorporated, then transfer polenta to baking dish, spreading evenly with a dampened rubber spatula. Chill, uncovered, until set, about 45 minutes.
- Preheat broiler. Line a baking sheet with foil and brush with oil.
- Unmold polenta, then cut into 16 (about 4- by 1-inch) sticks. Brush tops with oil and space evenly on baking sheet. Broil about 4 inches from heat until golden, 15 to 20 minutes.

- Heat a deep-fryer or a deep pot no more than half filled with oil to 325 degrees F.
- Peel and slice potatoes to size of your desire and fry them for 2 minutes - this isn't to make them crispy, it is just to blanch them. Drain and cool fries.
- Raise temperature of fryer or oil to 360 degrees F.
- Add salt and pepper to the flour and combine. Take fries and dip first into the evaporated milk, shaking off excess, and then into the flour mixture, shaking off excess. Fry for about 5 minutes, until browned.

- Add the sliced potatoes to a bowl of ice water and let them sit for 30 minutes. AFter 30 minutes, remove the potatoes and place them on one or two towels, patting them as dry as possible. Cover a baking sheet or two with paper towels.
- Add the oil to a large pot and heat over medium heat until the temperature reaches 350 degrees. You can do this while the potatoes are soaking. You really NEED to use a candy thermometer for this to ensure that the oil doesn’t get too hot. One the oil is hot, add the potatoes in batches and fry until slightly golden, about 2 to 3 minutes. Remove the potatoes and place them on the paper towels to drain. Let all of the potatoes cool for about 10 to 15 minutes, then make sure the oil is still at 350 and fry them in batches again. This time, you want to fry until they are even more golden and maybe a little puffy. Remove and place on the baking sheet again quickly, but this time you can let them drain for a second and them throw them on a plate or a sheet of parchment paper. Cover immediately with lots of the herb salt. Add the parmesan and toss, toss, toss. Taste to see if they need more salt or cheese. Of course they do!
- Combine the basil, cilantro, parsley, oregano, salt and garlic powder in a bowl and mix until combined.
