BAKED BRIE IN PUFF PASTRY
This wonderful, light puff pastry is filled with melted Brie cheese. Serve with crackers on the side.

- Preheat oven to 350 degrees F (175 degree C). Lightly grease a 9 inch pie pan.
- Slice the wheel of Brie in half, horizontally, so that the halves are two, flatter wheels of Brie. Lay the puff pastry in the pie pan. Place half of the Brie (rind-side down) onto the pastry dough. Sprinkle almonds evenly over the top. Place the other half of the Brie (rind-side up) over the almonds. Bundle the pastry dough around the Brie.
- Bake for 15 to 20 minutes. Let cool for 5 minutes before serving.

- Preheat an oven to 350 degrees F (175 degrees C).
- Mix together parsley, garlic, rosemary, thyme, marjoram, and salami. Slice the Brie in half crosswise, so you have two wheels. Spread the salami and herb mixture on one of the cut sides and top with the other half of the Brie wheel. Place the Brie in the center of the sheet of puff pastry. Fold the puff pastry up and over the Brie, pressing to secure the pastry together using a little bit of water if necessary. Brush the pastry with beaten egg.
- Bake the pastry in the preheated oven until golden brown, about 30 minutes. Remove from the oven and let stand for 15 minutes before serving.

- Roll puff pastry into a 14-in. square. Spread jam into a 4-1/2-in. circle in center of pastry; place cheese over jam. Fold pastry around cheese; trim excess dough. Pinch edges to seal. Place seam side down on ungreased baking sheet. Beat egg and water; brush over pastry., Cut the trimmed pastry pieces into decorative shapes and place on top; brush with egg mixture if desired. Bake at 400° for 20-25 minutes or until puffed and golden brown. Serve warm with apple slices.

HERBED BAKED BRIE
In this house we have a love of warmed, gooey baked brie. This recipe was sent to me online and is delicious, so have to save and share. Recommend serving with my recipes on here for Thyme roasted walnuts and Cranberry pear Mostarda - yum!

Steps:
- Place brie on a plate and freeze until very firm, about 30 minutes.
- Preheat oven to 350°. Cut off top rind of brie with a sharp knife (it's okay if you can't get the rind off in one piece; brie will smooth out as it bakes).
- Toss rosemary, thyme, and oil on a parchment-lined rimmed baking sheet until coated. Spread herbs evenly on parchment. Place brie in the center so that it covers about half of the herbs. Bake until cheese is melted, 15-20 minutes. Remove from oven and let rest to firm up slightly, about 5 minutes (if you skip this step, you risk spilling molten cheese all over your cutting board).
- Strip leaves from uncovered herbs and sprinkle over brie. Using parchment and a wide spatula, carefully slide brie and covered herbs onto a cutting board.
- Arrange mostarda, walnuts, pear slices, crackers, and baguette slices around cutting board; serve brie warm.
BRIE WITH STRAWBERRIES AND HERBS IN PUFFED PASTRY
Brie cheese encased in a delicate puff pastry and baked until melted is one of the world's easiest yet tastiest appetizers! In this recipe the brie is topped with fresh strawberries and jam with fresh herbs, surrounded in pastry, and drizzled with Grand Marnier. Wonderful! Enjoy with slices of crusty baguette or crackers and a nice bottle of wine or champagne!

- Preheat oven to 400°F.
- In a small bowl, combine jam, strawberries, and chopped rosemary.
- On a work surface, roll out puff pastry slightly into a 12-inch square.
- Put cheese (do not cut off rind) in center of puff pastry.
- Spread jam mixture over top of Brie.
- Fold puff pastry over Brie; wet edges and press to seal.
- Brush pastry with beaten egg.
- Transfer to a baking sheet and bake for 20 minutes.
- Cool for 10 minutes.
- Carefully transfer to a cheese board or platter and drizzle with Grand Marnier. Garnish with rosemary sprigs and grape clusters around the edges.
- Serve warm, with crusty baguette slices or crackers and a nice bottle of wine or champagne!

- Make cranberry sauce by using first 4 ingredients. Mix cranberries, brown sugar, and orange juice in 1 quart sauce pan. Heat to boiling, stirring frequently; reduce heat.
- Simmer uncovered 15 to 20 minutes, stirring frequently, until mixture thickens and cranberries are tender. Stir in orange peel and remove from heat.
- Melt butter in 8-inch skillet over medium heat. Cook almonds in butter, stirring frequently until golden brown.
- Preheat oven to 400°F Spray cookie sheet with cooking spray. Roll pastry into rectangle 16 x 9 inches on lightly floured surface. Cut out 1 8-1/2 inch circle and 1 7-inch circle.
- Place cheese on center or larger circle. Spoon cranberry sauce and almonds over cheese. Bring pastry up and press around side of cheese. Brush top edges of pastry with egg. Place the 7 inch circle on top, pressing around edges to seal. Brush top and side of pastry with egg.
- Cut decorations out of remaining pastry--things like hearts, stars--whatever you like, and arrange on top. Brush with egg; place on cookie sheet.
- Bake 20 to 25 minutes or until golden; cool on cookie sheet on wire rack for 30 minutes before serving. Serve with crackers and fresh fruit.

SWEET BAKED BRIE IN PUFF PASTRY
My favorite way of serving brie. I use a pretty fabric ribbon (must be fabric) to tie pastry with a pretty bow, before baking. Comes out fine and doesn't burn in the oven. Serve fruit on the side. I also make it with any flavor of jam. Blueberry strawberry or mixed fruit. For a shiny surface, brush pastry with an egg wash or brush with milk or cream...DIVINE!

- Roll out defrosted pastry slightly.
- Shave top crust off of brie.
- Cook fruit with sugar and cornstarch mixed with a little bit of water to make a slurry, until thickened.
- Spray pan with pam and top with parchment paper. I use a pie plate. Place pastry on parchment and spread a little fruit on center of pastry just where brie will be. Sprinkle with brown sugar.
- Place brie on top and spread a little more fruit on top. Sprinkle with brown sugar.
- Pull points up to meet and scrunch together, folding pastry around brie, like a pretty gift. Brush with egg wash or milk.
- Tie around center with a pretty fabric ribbon.
- Bake at 350 degrees for about 30 minutes.
- Let stand for about 10 or 15 minutes before serving.
- Serve with extra warm fruit on the side.
BAKED BRIE WITH HERBED GRAPES

- Pre-heat oven to 400°F
- Slice Brie wheel in half horizontally. Press grapes onto cut side of lower half of cheese. Sprinkle grapes with herbs. Press top of Brie onto grapes, sandwiching them in between the two halves of Brie. Set aside.
- On a lightly floured surface, roll puff pastry into a 16"x10' rectangle. Cut a 6" round, and an 8" round from puff pastry. Brush smaller round of puff pastry with egg.
- Set brie/grape "sandwich" onto puff pastry. Brush larger round of puff pastry with egg, and place egg side down over Brie. Press out any excess air and crimp edges to seal. You can decorate top with puff pastry scraps if desired. Brush outside of Brie with beaten egg.
- Place on cookie sheet and bake for 20 minutes. Tent loosely with foil and return to oven for 10-15 more minutes. Brie should be golden brown and puffy looking. Remove from oven and let cool for one hour before cutting into Brie.
