This tasty soup is very popular in Greece and Cyprus. I remember my father making it on chilly winter days, especially when there were colds and flu in the household! Sometimes he would add chopped, cooked chicken to the soup, and other times he would serve it plain. This is a taste of my childhood.

6 cups chicken broth
3/4 cup rice or 3/4 cup orzo pasta
3 eggs
1 lemon, juice of

Steps:

  • Bring broth to boil in saucepan, and add rice or orzo.
  • Cover and cook on medium low heat for 20-25 minutes (rice) or 10 minutes (orzo).
  • While the rice cooks, lightly beat the eggs and the lemon juice together.
  • Remove the broth from heat.
  • Slowly mix about one cup of the hot broth into egg-lemon mixture.
  • Add to the soup gradually while stirring.
  • Place saucepan back on the heat, and stir until soup is heated through (DO NOT BOIL).
  • Serve.

2 cups milk
2 tablespoons cornstarch
6 egg yolks, beaten
2 quarts chicken stock
1/2 cup long grain rice
1/4 cup butter
chopped parsley
1/2 cup fresh lemon juice (or more to taste)
1 lemon, rind of, grated
salt and pepper

Steps:

  • Stir the milk and cornstarch together and beat in the egg yolks.
  • Set aside.
  • Bring the stock to boil in a 4 quart soup pot and add the rice.
  • Cook, covered, until the rice is puffy and tender, about 25 min.
  • Remove the soup from heat, add milk and egg mixture, stirring carefully.
  • Continue to cook for a moment until all thickens.
  • Remove from the heat again and add the butter, chopped parsley, lemon juice, and finely grated lemon peel.
  • Note: the amount of lemon juice in this recipe has been halved from its original 1 cup amount.

5 cups vegetable stock
1/2 cup long-grain rice (or orzo)
1 carrot, thinly sliced
1 celery rib, minced
1 dash salt, to taste
1 dash pepper, to taste
1 cup tomatoes, seeded, chopped (optional)
2 eggs
1 teaspoon lemon zest, minced
3 tablespoons fresh lemon juice (more or less)

Steps:

  • Put the stock in a large, deep saucepan & turn heat to medium-high, then just barely bring it to slight boil, before turning the heat down to medium, so that it bubbles a bit.
  • Stir in the rice, carrot & celery & cook, stirring occasionally, until the veggies are all tender, about 20 minutes.
  • Season with salt & pepper & then, if you're using it, add the tomato before turning the heat down to low.
  • In a small bowl, use a whisk to beat the eggs with the lemon zest & juice, & then, STILL BEATING, slowly add 1/2 cup of the hot stock to the egg mixture. Continue beating while adding another cup of the stock.
  • Pour this mixture back into the soup & reheat, BUT UNDER NO CIRCUMSTANCES ALLOW THE MIXTURE TO BOIL OR THE EGGS WILL SCRAMBLE!
  • Taste & add salt, pepper or lemon juice as necessary, before serving.

This is my favorite soup ever. I've loved it since I was a little girl. I think this is the closest recipe to the authentic greek restaurants.

2 cups milk
2 tablespoons cornstarch
6 egg yolks
8 cups chicken stock
1/2 cup orzo pasta
1/4 cup butter
1/2 cup fresh lemon juice
1 large lemon, zest of
salt
sliced pita bread, on the side

Steps:

  • Combine milk, corn starch, egg yolks. Set aside.
  • Boil the chicken stock in a large soup pot (4 quart is good). Once the stock is boiling, add the orzo pasta and let it cook covered for 9-12 minutes (until pasta is tender).
  • When pasta is tender, remove the pot from the heat and add the egg mixture and butter. Stir slowly until it all blends together.
  • Return the pot back to the heat and continue to cook the soup. It will thicken slightly.
  • Remove from the heat again and add the lemon juice and lemon peel.
  • Serve with pita bread.

Herbed Avgolemono (Lemon-Egg Soup) image

This is a very light and comforting soup. Great for sipping on winter days. I recommend using fresh, whole herbs because it really does wonders for the flavor, and they are easy to strain out at the end. The trickiest part is heating the soup without letting it boil after adding the egg. My recommendation is to keep a mesh strainer on hand so that you can remove any egg solids that do develop from the final product.

2 1/2 cups chicken stock or 2 1/2 cups vegetable stock
1 tablespoon lemon rind, finely grated
1 fresh thyme sprig
1 fresh parsley sprig
2 eggs
2 tablespoons lemon juice
salt and pepper (optional, and to taste)

Steps:

  • Combine stock, lemon rind, thyme and parsley in a large sauce pan. Bring to boil and simmer for about 10 minutes.
  • Beat the eggs with the lemon juice. Let the stock cool a bit after it simmers, then whisk a bit of hot stock into the egg mixture.
  • Add egg mixture to the stock and cook over medium-low heat, whisking constantly. You want to heat the soup enough that it gets hot and thickens a bit, but not so much that it boils.
  • When soup is hot pour through a mesh strainer into two bowls and serve immediately.
