Time 4h

Yield 10-12 servings

Number Of Ingredients 15

1 lemon
1/2 c. butter, softened
1/2 shallot, chopped
8 large sage leaves, torn
2 tbsp. fresh thyme leaves
1 tbsp. rosemary leaves
1 clove garlic
1 (12- to 14-pound) fresh whole turkey
1 medium onion, cut into wedges
2 carrots, chopped
2 celery ribs, chopped
Kitchen string
1 c. dry white wine
1 c. low-sodium turkey or chicken broth
1/4 c. all-purpose flour

Steps:

  • Zest and juice lemon to equal 3 tablespoons into the bowl of a food processor; add butter and next 5 ingredients. Process until very smooth and herbs are minced. Reserve and chill 1/4 cup herb butter.
  • Heat oven to 425°F. Remove giblets and neck from turkey and discard. Drain cavity well; pat dry with paper towels. Loosen and lift skin from turkey breast without totally detaching skin. Rub 3 tablespoons herb butter under skin; replace skin and secure with wooden picks if desired. Sprinkle cavity and outside of turkey with desired amount of salt and freshly ground pepper.
  • Arrange onion and next 2 ingredients in a large roasting pan. Place turkey, breast side up, on a lightly greased roasting rack in pan. Tie ends of legs together with kitchen string; tuck wingtips under. Rub entire turkey with remaining herb butter. Pour wine and chicken broth into roasting pan.
  • Bake on lowest oven rack at 425°F for 30 minutes. Reduce temperature to 325°F and cook 2 to 2 hours 30 minutes or until a meat thermometer inserted into thickest portion of thigh registers 165°F, basting every 30 minutes with pan juices. Shield with aluminum foil to prevent excessive browning, if necessary. Remove from oven, and let stand 20 minutes.
  • Transfer turkey to a serving platter. Pour drippings through a fine wire-mesh strainer into a bowl, discarding solids. Reserve 2 1/2 cups pan drippings.
  • Melt reserved chilled butter in a saucepan over medium heat; whisk in flour, and cook, whisking constantly, 1 to 2 minutes. Gradually add reserved 2 1/2 cups drippings to saucepan, and bring to a boil, whisking constantly. Reduce heat, and simmer, stirring occasionally, 5 minutes or until thickened. Serve turkey with gravy.

Thanksgiving Pioneer-Style Herb Roasted Turkey image

Crown your holiday feast with this Thanksgiving Pioneer-Style Herb Roasted Turkey recipe from Throwdown with Bobby Flay on Food Network.

Provided by Bobby Flay

Categories     main-dish

Time 5h35m

Yield 8 servings

Number Of Ingredients 19

1 (17-pound) whole fresh turkey, rinsed well and patted dry
1 1/4 stick unsalted butter, slightly softened
2 tablespoons finely chopped fresh sage
2 tablespoons finely chopped fresh rosemary
2 tablespoons finely chopped fresh thyme leaves
3 tablespoons finely chopped fresh flat leaf parsley
Salt and freshly ground black pepper
3 large carrots, cut into 1-inch pieces
3 large stalks celery, cut into 1-inch pieces
2 large onions, quartered
8 cups homemade chicken stock, divided, plus more if needed for gravy
Turkey neck
1/4 cup fresh sage leaves
3 tablespoons unsalted butter
3 tablespoons flour
1 cup white wine
4 cups sage-infused stock
Salt and freshly ground black pepper
1 tablespoon finely chopped fresh sage

Steps:

  • For the turkey: Remove the turkey from the refrigerator 1 hour before roasting.
  • Combine the butter, sage, rosemary, thyme, and parsley in a food processor and process until smooth. Season with salt and pepper.
  • Preheat the oven to 450 degrees F.
  • Season the cavity of the turkey with salt and pepper and fill the cavity with half of the carrots, celery, and onion. Rub the entire turkey with herb butter and season liberally with salt and pepper.
  • Put 4 cups of the chicken stock in a medium saucepan and keep warm over low heat.
  • Place the remaining vegetables on the bottom of a large roasting pan. Put the turkey on top of the vegetables, put in the oven, and roast in the oven until lightly golden brown, 45 minutes. Reduce the heat to 350 degrees F and continue roasting, basting with the warm chicken stock every 15 minutes, until an instant-read thermometer inserted in the thigh registers 160 degrees F, about 2 to 2 1/4 hours longer. Remove the turkey from the oven, transfer to baking sheet and tent loosely with foil, and let rest 20 minutes before slicing.
  • For the sage gravy:
  • Strain the cooking liquid from the roasting pan into a medium saucepan (should be about 4 cups, if not, add more stock to make 4 cups). Add the neck, bring to a boil, add the sage leaves, remove from the heat, and let steep for 15 minutes. Remove the sage leaves.
  • Melt the butter in a medium saucepan over medium-high heat. Add the flour and cook for 1 minute. Add the wine and cook until reduced. Whisk in the stock and cook until thickened and smooth, about 5 minutes. Season with the salt and pepper and chopped sage.

ROAST TURKEY WITH CITRUS HERB BUTTER

Roast Turkey With Citrus Herb Butter image

Make and share this Roast Turkey With Citrus Herb Butter recipe from Food.com.

Provided by StreetChef

Categories     Whole Turkey

Time 3h50m

Yield 10-12 serving(s)

Number Of Ingredients 6

15 lbs whole turkey (fresh or fully defrosted)
1/2 cup butter, softened
2 cups orange juice
1 orange, zest of
1/2 cup fresh thyme
1/2 cup sage

Steps:

  • Season the bird liberally with salt & pepper.
  • Instead of trussing the entire bird, secure only the legs together. This will keep the shape of the bird, which is important for presentation and it will keep the stuffing inside the cavity of the turkey.
  • Tuck the wings of the turkey underneath to prevent them from burning.
  • Place the neck and giblets which are found in a bag inside the cavity of the turkey, in the bottom of the roasting pan. This will add to the flavour of the bird and the gravy.
  • Combine butter, orange juice, orange zest, thyme and sage in a bowl and stir with a spoon.
  • Rub outside of the bird with butter. Be sure to apply some of the butter under the skin for added flavour.
  • Pour remaining juice over the turkey.
  • Pour two cups of chicken stock into the bottom of roasting pan.
  • Preheat oven to 350 deg.
  • Roast turkey in oven for the first hour without opening the door.
  • After first hour, baste turkey every 30 minutes during cooking process.
  • Turkey should cook 15 minutes per pound.
  • If the turkey is browining too quickly during the cooking process, loosely tent the bird with aluminum foil, making sure the foil doesn't touch the top of the skin.
