800 g frozen green beans
2 tablespoons frozen crushed garlic
1 dash salt
75 g margarine
100 g slivered almonds

Steps:

  • Fill saucepan with water, when boiling, add green beans and cook for about 2 minutes, until just crunchy.
  • Rinse immediately under cold water.
  • Alternately, you can cook the beans in the microwave for a few minutes until heated through.
  • Put margarine in pan and melt, add slivered almonds and toast, as the almonds begin to turn brown add lots of garlic.
  • Add green beans and toss quickly.

1 1/2 pounds French string beans (haricots verts), both ends removed
Kosher salt
2 tablespoons unsalted butter
1 tablespoon good olive oil
2 to 3 garlic cloves, sliced
Freshly ground black pepper

Steps:

  • Blanch the string beans in a large pot of boiling salted water for just 1 1/2 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
  • Heat the butter and olive oil in a very large saute pan over medium heat and cook the garlic for 1 to 2 minutes, tossing occasionally, until lightly browned. Add the string beans, sprinkle with salt and pepper, and toss together. Reheat the string beans and serve.

1 Tbsp melted butter
1 Tbsp all purpose flour
salt and pepper to taste
1 c milk
3 c green beans, fresh, frozen, or drained canned beans

Steps:

  • 1. NOTE: If using fresh green beans cook in a small amount of boiling water long enough to bring them to the tender-crisp stage. Drain and use as other beans in the following recipe.
  • 2. RECIPE: In a saucepan over medium heat combine butter, flour, and salt and pepper. Whisk in milk and cook, stirring constantly until thickened. This makes a white sauce. Place beans in a casserole dish. Pour white sauce over beans. Bake for 20-25 minutes. Serve hot.

2 1/2 pounds green beans (French-style slim haricots verts work especially well), trimmed
4 tablespoons vegetable oil
1/4 cup minced fresh ginger (about 6 inches ginger root, peeled)
4 medium-size garlic cloves, minced

Steps:

  • Bring a large pot of salted water to a boil, and fill a large bowl with ice water. Working in two batches, boil beans until just tender but still crisp and bright green. Start testing after 4 minutes or so, being careful not to overcook. When done, plunge beans into ice water to stop cooking, lift out immediately when cool and drain on towels. (Recipe can be made to this point up to a day in advance and kept refrigerated, wrapped in towels.)
  • When ready to cook, heat 2 tablespoons oil in a wide skillet over high heat. Add half the beans, half the ginger and half the garlic, and cook, stirring and tossing constantly, until beans are heated through and ginger and garlic are softened and aromatic. Sprinkle with salt, and remove to a serving dish. Repeat with remaining oil, beans, ginger and garlic. Serve.

This is so easy! The kids will thank you for it. I haven't met one yet that has turned this dish away. This is a family favorite amongst everyone. Enjoy!

1 lb fresh string beans or 1 lb frozen string bean, cut approx 1 inch
water
1/2 teaspoon salt
2 -3 medium potatoes, cubed
2 -3 garlic cloves, minced
2 tablespoons butter or 2 tablespoons margarine
enough flour, to make a blond roux
add salt

Steps:

  • In a pan put your string beans and potatoes.
  • Pour enough water to go up about 1/2 way.
  • Add salt.
  • Cover.
  • And bring to a boil.
  • Cook until potatoes and beans are tender.
  • Drain water into a large measuring cup.
  • Take a small iron skillet, melt butter, add enough flour to make a roux to thicken the beans with.
  • When the roux is a good golden color add the garlic and saute but do not brown the garlic.
  • Add some of the bean/potato liquid to the roux and stir constently until you get the consistency of sauce you would like for your beans.
  • Before you add the sauce, use your wooden spoon.
  • With the back of the spoon mash a few of the potatoes so they will blend with the sauce, but leave others whole.
  • Mix everything together and cook just a few moments until the beans and potatoes have taken on a little of the flavor of the sauce.
  • Taste to make sure there is enough salt.
  • If not this is the time to add it.
  • Last but not least just before serving stir in 1 Tblsp. sour cream.

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

1 1/2 pounds green beans, trimmed
5 thyme sprigs
Salt and black pepper
3 tablespoons unsalted butter
2 cups fresh corn kernels (from 2 to 3 ears), or use thawed from frozen

Steps:

  • Heat oven to 350 degrees. Spread almonds on a baking sheet and bake until golden, 6 to 7 minutes.
  • Meanwhile, in a large (12-inch) deep skillet with a lid, heat oil over medium. Add garlic and stir until fragrant, 30 seconds. Add green beans and thyme, season with salt and pepper, and toss to evenly coat in the oil. Add 1/2 cup of water, cover and steam until beans are softened, about 5 minutes. Stir in butter and corn, and cook, stirring occasionally, until corn and green beans are tender and glazed in the sauce, 4 to 5 minutes. Discard the thyme sprigs, and season with salt and pepper.

1 pound green beans, trimmed
Salt to taste
1 tablespoon soy sauce, low-sodium if desired
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1/4 teaspoon red pepper flakes
1 tablespoon peanut oil or canola oil

Steps:

  • Bring a pot of water to a boil, season with salt and add the green beans. Boil 1 minute, drain and rinse with cold water, then place on a kitchen towel to dry thoroughly. (If vegetables aren't dry when you add them to the hot wok or pan, they will splutter and braise instead of stir-frying.) Place within reach of your wok or pan.
  • Combine the soy sauce and wine or sherry in a small bowl or measuring cup and place within reach of your wok or pan. Place the garlic, ginger and red pepper flakes in another small container near the burner.
  • Heat a 14-inch flat-bottomed wok or a 12-inch skillet over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in the oil by adding it to the sides of the pan and swirling the pan. Add the garlic and ginger, stir-frying for no more than 10 seconds, and then add the green beans. Toss together, then add the soy sauce and sherry and stir-fry for one to two minutes, until the beans are crisp-tender. Remove from the heat and serve.
