1 can (8 oz.) crushed pineapple in juice
1/2 c. butter
1/2 c. packed brown sugar
2 2/3 c. coconut
9 maraschino cherries
1 pkg. white or yellow pudding included cake mix

Steps:

  • Drain pineapple measuring juice add water to make 1 cup, set aside. Combine butter, brown sugar, pineapple and 1 cup coconut. Spread in well greased 9 x 13 inch pan. Cut each cherry almost through to make petals. Arrange in bottom of pan. Prepare cake mix as directed on package substituting measure liquid for 1 cup water, stir in remaining coconut. Pour carefully over coconut pineapple mixture in pan. Bake 35 to 40 minutes or until top springs back, at 350 degrees. Cool in pan only 5 minutes. Invert on tray and lift off pan.

This fabulous cake comes from the majestic Halekulani Hotel on Waikiki Beach in Honolulu, Hawaii, where it has been the hotel's signature cake for years. It's a light, creamy concoction that sings "spring." The cake is a light sponge cake, filled with pastry cream, and topped off with whipped cream. I saw this in the local Relish magazine that comes with our newspaper. I had to post it and share it with my zaar friends. ;)

1 1/2 cups cake flour
2/3 cup sugar
1/2 cup sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/4 cup vegetable oil
2 eggs
2/3 cup water
8 egg whites
1/2 teaspoon cream of tartar
2 cups 2% low-fat milk, divided
1/2 cup sugar
1/8 teaspoon salt
1/2 teaspoon vanilla extract
6 tablespoons cornstarch
2 eggs
2 tablespoons butter
1 1/4 cups sweetened flaked coconut
1/2 cup Amaretto
3 cups heavy cream
3 tablespoons sugar
1/2 cup sweetened flaked coconut

Steps:

  • To prepare the cake, preheat the oven to 350°F Grease and flour a 9-inch springform pan.
  • To prepare the cake, sift together cake flour, 2/3 cup sugar, salt and baking powder in a small bowl. In separate bowl, combine oil, egg and water; add to flour mixture. Mix until smooth.
  • Whip egg whites and cream of tartar. Gradually add 1/2 cup sugar and whip until stiff peaks form. Fold egg whites into batter until just combined.
  • Pour into pan and bake about 30 minutes or until center is set. Remove from pan set aside to cool. Store in the refrigerator several hours before cutting.
  • To prepare the pastry cream, combine 1 3/4 cups milk, sugar, salt and vanilla in a medium saucepan. Cook over medium-high heat until tiny bubbles form.
  • Combine remaining milk with cornstarch; add eggs and beat several times. Add ½ cup hot milk mixture to egg mixture; mix well. Pour egg mixture back into milk mixture in saucepan. Cook over medium heat, stirring constantly until thick. Remove from heat and stir in butter. Scrape custard into a bowl. Cover with plastic wrap. Store in the refrigerator.
  • To prepare the whipped cream, combine heavy cream and sugar in a mixing bowl and whip until stiff peaks form.
  • Add 1 cup of whipped cream, amaretto and 1 1/4 cups coconut to pastry cream; stir well. Set remaining whipped cream and coconut aside.
  • When cake is completely cooled, cut into three layers using a serrated knife. Place one layer on a 9-inch cake board or a serving plate. Place half the pastry cream on top and spread to edge evenly. Place second layer of cake on top of pastry cream and spread remaining pastry cream on top. Place third layer of cake on top. Frost top and sides of cake with remaining whipped cream and sprinkle with 1/2 cup coconut.

I made this cake for our Hawaiian Luau, and several times since then! It's a pretty white cake layered with haupia filling, a Hawaiian coconut pudding. If you like coconut, this cake is really nice. Not too sweet. It's a little work, but well worth it in the end. If you don't want to do the layering, just make it in a 9x13 pan and only make a half batch of the haupia filling. Please note that preparation/cooking times are approximate and don't include chilling times.

1 (18 ounce) box white cake mix
1 cup coconut milk, divided
2/3 cup water
2 egg whites
1 tablespoon unflavored gelatin
2 cups heavy cream
6 tablespoons sugar
1 teaspoon lemon extract
shredded coconut (amount needed to sprinkle over entire cake)
1 cup sugar
1/2 teaspoon salt
6 tablespoons cornstarch
1 cup water
4 cups coconut milk
2 teaspoons vanilla

Steps:

  • MAKE CAKE & WHIPPED CREAM FROSTING: Preheat oven according to directions on cake mix. Grease and flour two 8 or 9-inch round cake pans.
  • Prepare the cake according to the package directions, using 2/3 cup of the coconut milk, water, and egg whites.
  • When cakes are finished baking, cool and cut each cake horizontally into 2 layers. If your top layers are mound-shaped, cut them so they are flat. (If your layers aren't flat, your filling/frosting will seep off the cake and you'll have a mess.)
  • Soften gelatin in remaining 1/3 cup of coconut milk. Dissolve over hot water. Cool completely.
  • In a bowl, whip the heavy cream. Fold the gelatin mixture, sugar, and extract into the whipped cream. Chill frosting until it is of spreading consistency.
  • MAKE HAUPIA FILLING: In a small bowl, mix together the sugar, salt, cornstarch and water. Set aside.
  • In a saucepan, heat the coconut milk. When hot, add the sugar mixture. Cook, stirring constantly, until the mixture thickens. Remove from heat. Stir in vanilla and cool.
  • Chill the filling until it is of spreading consistency.
  • ASSEMBLE THE CAKE: Spread the Haupia Filling between each cake layer (spread it on pretty thickly, about 1/2" thick or so). You'll have the following layers: cake, filling, cake, filling, cake, filling, cake.
  • Refrigerate assembled cake until set.
  • Frost entire cake with whipped cream mixture. Sprinkle coconut all over the cake sides and top.
  • Keep refrigerated until ready to serve.
  • NOTE: Cooking times are approximate and do not include chilling times.

1 box white or yellow cake mix with pudding
1 large can of cream coconut
1 can(s) sweetened condensed milk
1 large container whipped topping
1 c flaked coconut

Steps:

  • 1. Gather ingredients. Bake cake according to directions on package in a 9x13 baking pan. Let cool halfway. Pierce with a utility fork.
  • 2. Combine condensed milk and coconut milk in a bowl and mix well. Pour the mixture slowly over the cake allowing it to filter into the holes. If the mixture pools around the outside of the cake spoon back onto cake so that it soaks in.
  • 3. Fold the coconut into the whipped topping. Spread the mixture onto the cake. Refrigerate for 2 days before serving. Note: I have to admit that this cake does not always make it to the second day, and sometimes it is eaten the day I make it. It is just too good to resist. If it does make it to the second day it is even more fantastic.

1/3 cup oil (or as called for by your cake mix)

1 (12 ounce) jar caramel ice cream topping
1 (8 ounce) container frozen whipped topping, thawed
2 Heath candy bars, crushed

Steps:

  • For best results, prepare cake 1 day in advance.
  • Bake cake in a 9 x 13 inch cakepan according to package directions.
  • Let cool completely.
  • With the end of a wooden spoon, poke holes in cake.
  • Pour sweetened condensed milk over top of cake; let soak in for 5 minutes.
  • Pour caramel ice cream topping over cake; let soak in for 5 minutes.
  • Ice cake with whipped topping.
  • Sprinkle crushed candy over top.
  • Chill overnight.
