HEAVENLY BANANA BREAD
I got this recipe from a wonderful friend who is a chef and cooking instructor in Canada. I love it because it is super-moist, and has intense flavor. In a test of 5 different banana bread recipes, this is the one my husband and neighbors liked the best.

Steps:
- Mash or purée the bananas and buttermilk until smooth.
- Add the baking soda and mix.
- This activates the baking soda and neutralizes the soda taste.
- Cream the brown sugar and butter together until smooth.
- Beat in the egg.
- Add the banana purée and combine.
- The mixture often appears curdled at this stage.
- Add the baking powder to the flour; add gradually to the banana mixture.
- Stir just enough to combine evenly.
- Flavour with the extract.
- Pour into sprayed or greased pans.
- Fill the pans 2/3 full for even cooking.
- Bake in a preheated 375°F oven until set in the centre.
- A larger loaf pan will take about 45-50 minutes.
- Reduce the cooking time for smaller pans.
- Use a wooden skewer to test the centre.
- Leave in the pans for 10-15 minutes before turning out.
- Do not leave in the pans as the loaves sweat and become soggy.

HEAVENLY BREAD
Steps:
- Preheat the oven to 400 degrees F.
- In a bowl, combine the mayonnaise, butter, cheese, garlic and hot sauce. Spread over both halves of the bread. Bake in the oven until golden brown and bubbling, about 5 minutes. Slice and serve.
- This recipe was created by a contestant during a cooking competition. The Food Network Kitchens have not tested it for home use, therefore, we cannot make any representation as to the results.
HEAVENLY HEALTHY BANANA BREAD FROM KAF
Recieved this in an email from King Arthur Flour and liked that it's made with Wheat flour and no white sugar, or added oil and not to sweet. - Preheat your oven to 350°F Lightly grease an 8 1/2" x 4 1/2" or 9" x 5" loaf pan.
- In a large bowl, beat together the butter and sugar until smooth. Add the vanilla, baking soda, salt, and bananas, beating until well combined. The mixture will be fairly smooth, with some scattered small chunks of banana.
- Beat in the honey and eggs.
- Add the flour, then the walnuts, stirring until smooth.
- Spoon the batter into the prepared pan, smoothing the top. Let it rest at room temperature for 10 minutes.
- Bake the bread for 50 minutes, then gently lay a piece of aluminum foil across the top, to prevent over-browning. Bake for an additional 10 to 15 minutes, then remove the bread from the oven; a long toothpick or cake tester inserted into the center should come out clean.
- Allow the loaf to cool for 10 minutes; then remove it from the pan, and set it on a rack to cool completely.
- Tip:.
- For banana-pineapple bread, drain a 20-ounce can of crushed pineapple in juice, saving the juice for another use (or to drink). Place the pineapple in a double layer of paper towels, and wring it until it's as dry as can be. Substitute it for one of the bananas in the recipe; you may need to increase the baking time by 5 to 10 minutes.

- Heat oven to 350 degrees F. Spread out angel cake cubes on a large rimmed baking sheet. Bake 20 minutes, tossing three times, until lightly toasted and dry. Turn off oven.
- Whisk milk, eggs, sugar, rum and vanilla extract in a large bowl until sugar is dissolved. Gently stir in cake cubes and banana slices; pour into an 8-inch square baking dish. Cover dish with foil. Let stand 30 minutes at room temperature at room temperature for cake cubes to absorb most of the milk mixture.
- Heat oven to 350 degrees F. Bake, covered, 30 minutes. Remove foil; continue to bake 25 minutes or until pudding is set.
- Let stand 15 minutes. Dust top with confectioners sugar. Server with small scoops of vanilla ice cream.

- Remove odd pots and pans from oven.
- Preheat oven to 350º / 180º.
- Cream together butter and sugar.
- Add eggs and crushed bananas.
- Combine well.
- Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.
- Mix just until combined. Do not overmix.
- Pour into greased and floured loaf pan.
- Bake at 350º / 180º for 55 minutes.

- Preheat oven to 350.
- Spray bottom of 2 loaf pans with Non Fat Butter Flavored Cooking Spray.
- In a mixing bowl combine Splenda for Baking, Splenda Brown Sugar and apple sauce.
- Mix in eggs.
- Measure out 1/2 c Non Fat milk, add lemon juice and stir.
- Add "soured milk," bananas and vanilla and blend until smooth.
- Mix in flour, baking soda and salt.
- Divide batter in half and pour one half into each loaf pan.
- Place Pans in preheated oven and bake for an hour and 15 minutes or until a toothpick inserted in the center comes out clean.

- In a small saucepan set over medium heat, melt the butter. Once butter begins to bubble and crackle, the butter will begin to brown. As the butter cooks, swirl to move butter around. When the butter smells nutty, remove pan from heat and transfer to a medium mixing bowl. Whisk in the brown sugar, sour cream, mashed bananas, eggs and vanilla extract.
- In a large mixing bowl, whisk together the flour, baking soda, salt, cinnamon and nutmeg. Slowly fold the wet ingredients into the dry ingredients, using a spatula to scrape up any dry spots from the bottom of the bowl. Do not over-mix.
- Pour batter into prepared pan. Place in oven and bake for 45 minutes to 1 hour. The loaf will get nice and brown on top and the crack should still be slightly moist. I usually bake mine for about 48-50 minutes. Remove from oven and allow the loaf to cool in the pan for 20 minutes before inverting onto a wire rack to cool completely (or enjoy while warm).
