Steps:
- Place room temperature ingredients in pan of bread machine in order listed; Set on dough setting; add walnuts in the last five minutes of last kneading.
- Turn dough onto lightly floured surface; punch down to remove air bubbles; shape into a round loaf and place on greased baking sheet, cover; let rise until indentation remains after touching.
- Make glaze, combine 1 egg and 1 tablespoon water, brush top of loaf, sprinkle with oatmeal; Bake in preheated 375°F oven 35 to 40 minutes; remove from oven, cool on rack.

- In bread machine pan, place the milk, 2 tablespoons butter, vanilla, brown sugar, salt, flours and yeast in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available., Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed)., Just before the final kneading (your machine may audibly signal this), add oats and nuts. Brush baked loaf with remaining butter.

In response to a request, this was found in the cookbook that came with my Toastmaster Bread Machine. I haven't tried it. Cook time includes mixing and rising time in machine, and this will vary according to your brand of machine.

HEARTY OAT AND WHOLE WHEAT BREAD
We just love the flavor of the oatmeal in this whole wheat bread. You can either make dinner rolls out of half the dough and a loaf of bread for the other half or make two loaves of bread of 18 rolls. So good warm out of the oven with butter and jam or honey.

Steps:
- 1. In a saucepan bring 2 cups water to a boil and add the oats and butter. bring back up to a boil and stir and cook for 1 minute stirring constantly. Remove from heat and cool to lukewarm.
- 2. In a small warm bowl add 1/2 cup warm water and add the yeast and 1 tblsp. of sugar. Set aside and let the yeast work.
- 3. In a large bowl combine the brown sugar, salt and the 4 3/4 cups flour. Stir to combine dry ingredients.
- 4. Add the yeast to the oatmeal mixture. Now add that mixture to the flour. Stir to combine. Add enough flour to make a soft dough. Turn out on a floured surface and knead for until smooth and elastic. Adding only enough flour to get to that point.
- 5. In a large glass bowl that has been greased, place the dough in the bowl and turn once to oil the dough. Cover and let rise in a warm place until double in size. About 1 hour.
- 6. Punch down the dough and let rest covered for 10 minutes. Divide dough into two pieces. Either shape and bake as loaves of bread or divide into 18 pc.'s and shape into rolls. Place 9 rolls in two greased round cake pans.
- 7. Cover and let rise for 45 to 55 minutes. Bake in oven at 350º for 30 minutes or until nice and browned.
- 8. Remove from oven and remove rolls from pan onto a cooling rack. Let cool to warm and serve. Makes 18 rolls.

- Add 1 cup water to measuring cup.
- Crack egg into water.
- Add additional lukewarm water to make 1 1/4 cup.
- Mix egg and water with fork and pour into bread machine pan.
- Add additional ingredients in order in recipe.
- Set bread machine settings to basic white setting with light crust.
- If dough appears too sticky, add a small amount of bread flour to pan. Keep adding until dough leaves side of pan.

Steps:
- Place ingredients in order given in bread pan. Set machine to quick bread/cake cycle, medium crust.
- After batter has mixed for 4 minutes, stir sides and bottom with rubber scraper to ensure complete mixing.
- Just before baking starts, pause machine and remove paddle (if your machine has this feature). When baking is completed, remove bread from machine, put on wire rack to cool. Bread slices best cool. Wrap in plastic wrap to maintain freshness.
