GRANOLA BREAD
A hearty, flavorful breakfast loaf perfect for those rushed, on-the-go breakfast eaters.

Steps:
- In the bowl of a stand mixer using whisk attachment, mix yeast with the water until yeast is dissolved. Replace whisk attachment with paddle attachment and add in honey, oil and cinnamon.
- Replace paddle attachment with dough hook. Add flours, granola and raisins and mix until flour is fully incorporated and dough begins to pull from the sides. No kneading is necessary. Pour dough in a lightly-greased large bowl, cover and let rise about 2 hours or until doubled in size.
- Cover bowl with risen dough lightly with plastic wrap and refrigerate overnight.
- Take refrigerated dough and shape into an oval using your hands. Place oval-shaped dough in a lightly-greased 8 x 5-inch loaf pan. Cover and let rise about 2 hours or until doubled in size.
- Preheat oven to 375°F. Once dough has risen, bake on middle rack about 30-40 minutes or until golden brown on top. Allow to cool completely on wire rack before slicing.

20 MINUTE HONEY GRANOLA - EASY
This is a super easy granola recipe. It isn't overly sweet and is a real crowd-pleaser. It also makes your house smell fabulous for hours after you bake it. I normally add about 2 Tbsp. wheat germ and a tsp. brewers yeast to my dry ingredients - for nutritional value.

Steps:
- Heat oven to 300 degrees.
- Combine oats, nuts, salt, cinnamon and flax in a large bowl and set aside.
- Combine oil, honey and vanilla in another, smaller bowl.
- Mix wet ingredients into dry - you may need to use your hands.
- Then spread the mixture onto two cookie sheets lined with foil or parchment.
- Bake 10 minutes. Then remove from oven and stir.
- Bake an additional 10 minutes or until slightly golden.
- Remove from oven and allow to cool completely.
- When cooled, transfer into an airtight container for storage.
HONEY GRANOLA
This recipe came about from tinkering with a few granola recipes. I wanted something that tasted really good, using ingredients that I usually have in the house, that was fast to make and on the whole, somewhat healthy.

- Combine oats, raisins and coconut in a large bowl; mix well and set aside.
- Combine honey, butter, cinnamon, vanilla and salt in a microwave proof bowl and cook in microwave until butter and honey are melted.
- Stir together then pour over oat mixture and toss until well blended.
- Spread on a lightly greased cookie sheet.
- Bake at 350 degrees for 20 minutes or until lightly golden.
- It will darken a little when it cools.
- Stir half way through.
- Remove and let cool.

- Preheat oven to 325 degrees F (165 degrees C).
- Spread oats and coconut flakes onto a rimmed baking sheet.
- Bake in the preheated oven for 8 minutes; stir oats and coconut and rotate baking sheet. Continue baking until oats and coconut are toasted, about 8 more minutes.
- Whisk honey, coconut oil, vanilla extract, and cinnamon together in a bowl until smooth. Add oat mixture to honey mixture and stir until evenly coated.

- In a large bowl, combine 3 cups all-purpose flour, granola, yeast and salt; blend well. In a medium saucepan, combine water, yogurt, honey and oil; heat to 120° to 130°. Add to flour mixture along with eggs; mix on low speed. Stir in whole wheat flour and 1 cup all-purpose flour to form a soft dough. Turn onto a floured surface; knead about 8-10 minutes, adding enough remaining all-purpose flour until dough is smooth and elastic. Place in a greased bowl, turning once to grease top. The advantage to using honey instead of sugar in granola is that you need significantly less. This is a good recipe as is, but please feel free to experiment with coconut, sesame seeds, sunflower seeds, powdered milk or additional oil or honey for a richer taste. I got this recipe from Hillbillyhousewife.com, but I read the original recipe wrong and only put in half the margarine it called for. This recipe reflects what I did. It served my family of 4 with enough left over for one more serving.

- Melt the margarine in a 3-quart saucepan over medium heat.
- Add the honey and salt.
- Heat the honey briefly with the margarine and then add the oatmeal. Stir.
- Turn the mixture onto an ungreased 9 by 13-inch cookie sheet. Spread the granola out evenly and bake it at 375° for 10 minutes.
- It should be a toasty brown. Remove it from the oven and allow to cool and crisp up in the pan.
- Store it in a clean coffee can or sealed canister.
- Add 1/2 cup nuts and dried fruit if desired after granola is cool.
- Serve with milk, on yogurt, or eat by the handfull. Whatever suits you best.
