GRAHAM STREUSEL COFFEE CAKE
This Graham Streusel Coffee Cake is an unbelievably easy coffee cake with lots of brown sugar, graham crackers, and cinnamon. Although it's considered a breakfast food, it's really a treat for any time of the day.

Steps:
- Preheat the oven to 350 degrees and grease a 9x13 baking pan.
- In a small bowl, combine the graham cracker crumbs, brown sugar, pecans and cinnamon. Stir in butter; set aside.
- Prepare cake mix according to package directions.
- Pour half of the batter into a greased 13-in. x 9-in. baking pan. Bake for 5 minutes so that the streusel doesn't sink to the bottom. Remove from the oven and sprinkle with half of the graham cracker mixture.
- Carefully spoon the remaining batter on top. This is tricky but it's very forgiving. Sprinkle with the remaining graham cracker mixture.
- Bake at 350° for 25-35 more minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
- For the glaze: combine powdered sugar and milk; add more milk 1 tablespoon at a time to desired consistency. Drizzle over cooled coffee cake.

Steps:
- Streusal: Put your graham crackers in a Ziploc bag, close it and roll with rolling pin until crushed, put in large bowl.
- Add other dry ingredients.
- Melt butter pour over and mix thoroughly; set aside.
- Cake: Beat together until thoroughly mixed.
- Pour half into a greased 13 x 9 baking pan.
- Sprinkle with half of the streusel mixture.
- Carefully spread the remaining batter on top of the streusel and then top with remaining streusel.
- If using an aluminum pan bake for 45 minutes at 350°.
- If using a dark pan bake for 30-35 minutes at 350°.
- I've tried this several different ways and it actually bakes better with less brown edges in the aluminum pan for a longer time.
- Insert toothpick for final test.
- This is the only coffee cake I've ever made that tastes as good the second day or freezes well and can be served when thawed. Of course you lose the smell that a hot coffee cake right out of the oven provides.
- I usually drizzle icing on top made from powered sugar and milk.

- Blend cake mix, water, oil and eggs on medium speed for about 3 minutes.
- Pour half of batter into a greased and floured 9 X 13 pan.
- Sprinkle with half of the reserved crumb mixture.
- Spread remaining batter evenly over crumb mixture.
- Sprinkle batter with remaining crumb mixture.
- Bake at 350 degrees for 45 to 50 minutes.
- Cool.
- Mix powdered sugar and water and drizzle glaze over cake.
- Serve.

- Heat oven to 350*.
- Prepare streusel.
- Mix all ingredients until crumbly.
- Beat remaining ingredients in large mixer bowl on low speed 30 seconds.
- Beat on medium speed, scraping bowl occasionally, 2 minutes.
- Spread half of the batter in greased oblong pan, 13x9x2" or square pan, 9x9x2"; sprinkle with half the streusel.
- Top with remaining batter; sprinkle with remaining streusel.
- Bake until wooden pick inserted in center comes out clean, 35-40 minutes.

This cake tastes even better the next day and freezes well, you may drizzle a glaze on top of the cake after baking if desired --- Do not use the pudding-added cake mix for this.

- Set oven to 350 degrees.
- Butter a 13 x 9-inch glass baking dish.
- For the streusel; place the graham crackers in a plastic bag, seal and then roll with a rolling pin until crushed (do not crush until fine) place the crumbs in a bowl.
- Add in the brown sugar, 1/2 cup plus 3 tablespoon melted butter and cinnamon; mix until blended, then add in the pecans or walnuts; set aside.
- For the cake; in a large bowl beat all cake ingredients together until blended.
- Pour HALF the cake batter into prepared buttered baking dish.
- Sprinkle with HALF of the streusel mix evenly over the top of the batter.
- Then carefully spread the remaining cake batter over streusel.
- Then top with remaining streusel.
- Bake for about 40-45 minutes or until the cake tests done.
- If desired, drizzle glaze over the top of the cake after baking.

- In a small bowl, combine cracker crumbs and butter; set aside 1 tablespoon for topping. Press the remaining crumb mixture into a greased 8-in. square baking dish. Bake at 325° for 10-14 minutes or until golden brown. Cool on a wire rack., In a large bowl, dissolve gelatin in boiling water; stir in strawberries and lemon juice. Refrigerate until partially set, about 1-1/2 hours., In a small bowl, beat the cream cheese, sugar, vanilla and salt until smooth. Fold in whipped cream. Spread half over cooled crust.
