Beef-and-Bean Chili image

This cowboy-approved beef-and-bean chili recipe is a hearty dinner worthy of the whole family.

Categories     weeknight meals     comfort food     dinner     meat     soup

Time 2h

Yield 6-8 servings

Number Of Ingredients 12

4 lb. ground beef
6 garlic cloves, minced
2 8-ounce cans tomato sauce
1 6-ounce can tomato paste
1/4 c. chili powder, plus more to taste
2 tsp. ground cumin
2 tsp. ground oregano
2 tsp. kosher salt, plus more to taste
1/2 tsp. cayenne pepper, plus more to taste
4 15-ounce cans beans (kidney and pinto), drained and rinsed
1/2 c. masa harina (corn flour) or regular cornmeal
Shredded cheddar, crumbled bacon and sliced jalapeños, for topping

Steps:

  • In a large heavy pot, brown the ground beef with the garlic until it's totally cooked. Drain off most of the excess fat, leaving a little behind for moisture and flavor.
  • Add the tomato sauce, tomato paste, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally. If the liquid level seems low, add up to 1½ cups water to keep the chili from burning.
  • Stir the beans into the chili. In a small bowl, combine the masa harina with 1/2 cup water and stir with a fork until smooth, then stir into the chili. Let simmer for another 10 minutes to thicken. Taste and adjust the seasonings. Top with cheese, bacon and jalapeños.

Hearty chili made with loads of ground beef and three kinds of beans for a savory, prize-winning chili you'll crave.

Categories     Beef     chili     Soup     Stew

Time 2h45m

Number Of Ingredients 19

2 teaspoons granulated onion
2 teaspoons granulated garlic
1 tablespoon dried oregano
1 tablespoon ground cumin
1 tablespoon Paul Prudhomme Meat Magic
2 medium onions (, finely chopped)
4 cloves garlic (, minced)
5 pounds ground beef (85% lean)
3 (15 ounce) can pinto beans (, drained)
2 (15 ounce) can black beans (, drained)
3 (15 ounce) can kidney beans (, drained)
2 (10 ounce) can Rotel tomatoes (, drained)
5 (15 ounce) can organic stewed tomatoes (Muir Glenn)
1 cup mild green chilies (505 Southwestern)
2 cups beef stock (, more as desired, to thin chili)
1 tablespoon liquid smoke flavoring
1 cup red wine
1 package Carroll Shelby's Chili Kit
Sea salt and pepper

Steps:

  • Mix granulated onion and garlic, oregano, cumin, and Meat Magic in a small dish, set aside. Saute 1/3 of the onion and garlic in a large skillet over medium heat with 1 tablespoons olive oil until softened, about 5 minutes. Add 1/3 of the meat (small batches allow the meat to brown) to the onions and brown over medium-high heat. Stir occasionally without breaking up the meat too much to maintain hearty chunks about the size of a nickel coin.
  • As the meat is browning, sprinkle with 1/3 of the spice mix and stir to incorporate. Once browned, add 1/3 of the red wine to loosen any browned bits and simmer 2 minutes to evaporate some of the wine. Repeat these steps for each batch and transfer to a large soup pot. While the meat is browning, add the beans, crushed tomatoes and their juices, chiles, and RO*TEL tomatoes to the soup pot.
  • Stir in the beef stock, liquid smoke, and 1/2 of the Carol Shelby's spice mix. Reserve the yellow masa flour packet, cayenne, and salt included in the kit. Once all the ingredients are in the pot, simmer and cook covered for 1 to 2 hours, stirring occasionally. (Alternatively, cook on low in a slow cooker for up to 6 hours.) Taste the chili after it has simmered for 30 minutes or so to adjust spice (at this point you can add the cayenne from the kit), if desired.
  • In the last few minutes of cooking, mix masa flour (yellow packet in the chili kit) with 1/2 cup of water in a small bowl until smooth. Stir in to the chili and cook for about 10 minutes, this will thicken the chili and round out the flavors. Taste and season with salt and pepper, as needed.

HEARTY BEEF AND BEAN CHILI

Warm your Fall evenings with a comforting bowl of Hearty Beef and Bean Chili!

Provided by Shelly Maynard

Categories     Soups, Stews, Chili

Time 6h20m

Number Of Ingredients 18

2 pounds ground beef
1 large onion, diced
2 tablespoons minced garlic
2 - 14.5 oz. cans of diced tomatoes, undrained
2 - 15 oz. can chili beans in sauce
2 - 15 oz. can dark red kidney beans, drained
1 - 15 oz. can light red kidney beans, drained
1 - 15 oz. white beans, drained
1 - 32 oz. container of beef broth
2 teaspoons dried oregano leaves
2 teaspoons cumin
2 teaspoons smoked paprika
3 tablespoons chili powder
2 tablespoons cocoa powder
2 tablespoons brown sugar
Sour Cream
Shredded Cheese
Soup Crackers

Steps:

  • Slice your onion and set aside. Our family likes the onion left in larger pieces, but if you prefer them to be finely diced, that's acceptable, too! Using a large skillet, heat 2 tablespoons of canola oil. Add your ground beef and saute for at least 6 minutes, or until thoroughly cooked and brown in color. About halfway through, add in your minced garlic. Drain the grease off and return to the pan. Add chili powder, cumin, oregano, and smoked paprika to your meat. Mix in ½ cup of beef broth and simmer while you prepare the rest of your ingredients in your Dutch oven/stock pot. In a large stockpot or Dutch oven, combine your chili beans (undrained), white beans (drained), dark red kidney beans (drained), light red kidney beans (drained), diced tomatoes, and tomato sauce. Sprinkle your cocoa powder and brown sugar over the top and stir well. Mix in your onions, Worcestershire sauce, and remaining beef broth. Add in your ground beef mixture. Bring to a rolling boil, stirring frequently. Reduce your heat to a low simmer and cover. Allow your chili to cook on low for at least 6 to 8 hours (high 4 hours), stirring occasionally. Spoon into bowls and top with cheese, sour cream, hot sauce, etc. and enjoy!
