1 pound lean ground beef (90% lean)
1 medium onion, chopped
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 can (8-1/2 ounces) peas and carrots, drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
1/4 cup water
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
1 teaspoon garlic powder, divided
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups prepared instant mashed potatoes
3 ounces cream cheese, softened and cubed
1/4 cup sour cream
1/4 cup grated Parmesan cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the soup, peas and carrots, mushrooms, water, rosemary, 1/2 teaspoon garlic powder, salt and pepper; heat through. Transfer to a greased 9-in. deep-dish pie plate., In a large bowl, beat the mashed potatoes, cream cheese, sour cream and remaining garlic powder until blended. Spread over top. Sprinkle with Parmesan cheese., Bake, uncovered, at 350° for 20-25 minutes or until heated through and potatoes are lightly browned.

1 1/2 pounds ground beef (I used 85/15)
1/2 cup chopped onion
1 cup chopped carrot
2 cloves garlic (chopped)
8 oz cremini mushrooms (sliced)
1/4 cup flour
1 cup beef stock
2 teaspoons worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1/8 teaspoon ground nutmeg
Mashed Potatoes
3 pounds large russet potatoes - Peeled and cut into 3 inch pieces (about 2.5)
4 tablespoons butter
1/3 cup sour cream
1/4 cup milk (approximately - adjust to desired consistency)
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 400 degrees.
  • Butter a 9 x 9 baking dish.
  • Bring a large pot of water to boil for potatoes.
  • In large skillet, brown beef and drain off excess fat.
  • Add carrots, onion, garlic and mushrooms to beef.
  • Saute for 5 minutes until veggies are tender.
  • Sprinkle beef mixture with flour and cook until flour is no longer visible.
  • Add beef stock, worcestershire, salt, pepper and nutmeg
  • Continue to cook until thick and bubbly. Turn off heat and mash potatoes.
  • For Potatoes
  • Drain potatoes and place back into large pot.
  • Add butter, sour cream, milk, salt and pepper.
  • Whip with electric mixer or use a hand masher (I use a hand masher).
  • Add more milk is thinner consistency is desired. A thicker mashed potato is recommended for this dish.
  • Pour beef mixture into baking dish. Top with mashed potatoes.
  • Bake for 30 minutes or until top is brown and sides of casserole are bubbly.
  • Cool for 10 minutes before serving.

2 tbsp butter
3 tbsp olive oil (divided)
1 lb sliced fresh button mushrooms
1/2 lb coarsely chopped fresh oyster mushrooms
1/2 lb pound coarsely chopped fresh chantrelle mushrooms
1 large onion (thinly sliced)
3 garlic cloves (minced)
1/2 cup dry red wine or vegetable stock
1/2 cup vegetable stock
2 tbsp minced fresh parsley
2 tbsp minced fresh thyme
1/4 tsp salt
1/4 tsp pepper
1 tbsp all-purpose flour
1 tbsp butter (softened)
6 medium red potatoes (cubed)
1/4 cup 2% milk
2-4 tbsp butter
1 tsp garlic powder
3/4 tsp salt
1/4 tsp pepper
3/4 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 425°. In a Dutch oven, heat butter and 2 tablespoons oil over medium-high heat. Add mushrooms; cook and stir 4-6 minutes or until browned. Remove and set aside.
  • In the same pan, heat remaining oil. Add onion; cook and stir 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan. Bring to a boil; cook 2-3 minutes or until wine is almost evaporated. Stir in stock, parsley, thyme, salt, pepper and mushrooms. Bring to a boil; cook 3-4 minutes longer or until liquid is reduced by half.
  • In a small bowl, mix flour and softened butter until blended; stir into mushroom mixture until thickened. Transfer to a greased 11x7-in. baking dish.
  • Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 10-15 minutes or until tender. Drain; return to pan. Mash potatoes, gradually adding milk, butter, garlic powder, salt and pepper.
  • Spread potatoes over mushroom mixture; sprinkle with cheese. Bake 15-20 minutes or until heated through. If desired, top with additional thyme or parsley.

Pastry for two double-crust pies
2 cups grated peeled potatoes
1-1/4 cups diced celery
1 cup grated carrots
1/4 cup chopped onion
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/4 teaspoon pepper
3/4 pound lean ground beef (90% lean)
MUSHROOM GRAVY (for each pie):
1 can (4 ounces) mushroom stems and pieces
2 tablespoons all-purpose flour
2 tablespoons canola oil
1 teaspoon beef bouillon granules
4 drops browning sauce, optional

Steps:

  • Divide pastry into fourths. On a lightly floured surface, roll out one portion to fit a 9-in. pie plate. In a large bowl, combine the next seven ingredients; crumble beef over mixture and mix well. Spoon half into crust. , Roll out another portion of pastry to fit top of pie; place over filling and seal edges. Cut vents in top pastry. Repeat with remaining pastry and filling. Cover and freeze one pie for up to 3 months. , Bake second pie at 375° for 15 minutes. Reduce heat; bake at 350° for 1 hour. Meanwhile, drain mushrooms, reserving liquid. Add water to liquid to measure 1 cup; set aside. , In a small saucepan, cook mushrooms and flour in oil until bubbly. Remove from the heat; stir in bouillon and reserved mushroom liquid. Bring to a boil; cook and stir for 1 minute or until thickened. Stir in browning sauce if desired. Serve gravy with pie. , To use frozen pie: Bake at 375° for 70 minutes. Prepare gravy as directed; serve with pie.

Recipe is from Southern Living and obtained in a search for recipes for shepherd's pie... this one looked the best to me, so I tried it. It is GREAT and a regular request by the kids, especially my SIL. (Yes, yes, I know... shepherd's pie has lamb and cottage pie has beef.. but SL named this recipe, not me).

1 (22 ounce) package frozen mashed potatoes (or make your own, I do)
1 lb ground beef
1 onion, chopped
1/2 cup chopped carrot
1/2 cup frozen peas
1 tablespoon tomato paste
2 tablespoons all-purpose flour
2 teaspoons salt, divided
1/2 teaspoon pepper, divided
1 cup beef broth
1 large egg
1/2 cup grated cheddar cheese

Steps:

  • If you're making your own, prepare mashed potatoes; set aside.
  • Brown beef and onion in lg skillet over med-high heat for 5 to 6 minutes, stirring til beef crumbles and is no longer pink; drain and return to skillet.
  • Add carrots and peas; stir in flour, 1 t salt, 1/4 t pepper,& tomato paste.
  • Add broth, and cook, stirring constantly, 3 minutes or until slightly thickened.
  • Spoon mixture into lightly greased 7x11" baking dish.
  • Stir together mashed potatoes, egg, and remaining 1 t salt and 1/4 t pepper; spoon over beef mixture.
  • Bake at 350 degrees for 25 minutes; top w/ grated cheddar and bake for an additional 5 minutes.
  • NOTE: I use condensed beef broth for a beefier/heartier flavor. ;).

I came up with this recipe in an attempt to match one of my favorite meals with my husband's refusal to eat anything "green" (e.g., healthy!) in a Shepherd's Pie. This is now one of his favorite meals - I hope you enjoy it.

1 lb lean ground beef
1 large red onion, chopped
2 garlic cloves, minced
1 1/2 teaspoons dried thyme, crushed
1 1/2 teaspoons dried sweet basil leaves, crushed
1 teaspoon salt
1 tablespoon lemon pepper
1 (8 ounce) jar beef gravy
1 lb mixed mushrooms, sliced
2 tablespoons butter
1/4 cup red wine
2 packages instant garlic cheddar mashed potatoes
milk and butter for instant mashed potatoes
1 cup cheddar cheese, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Over medium-high heat, saute the beef, onion, garlic, thyme, basil, salt and pepper until the beef is no longer pink and the onions are translucent.
  • Add the gravy to the beef/onion mixture and stir well. Reduce heat to low and simmer uncovered.
  • In a separate saute pan over medium heat, melt the butter and add the mushrooms. Saute the mushrooms until the butter is almost absorbed.
  • Add the wine and simmer uncovered for 5 minutes.
  • Add the mushroom mixture (with wine) to the beef mixture and simmer uncovered for 10 minutes.
  • Prepare the mashed potatoes according to directions. Add enough milk so they are spreadable.
  • Spread the beef and mushroom mixture in a casserole dish and top with the mashed potatoes.
  • Sprinkle the cheddar cheese over the mashed potatoes and bake uncovered until the cheese is melted.
  • Serve and enjoy.
  • Note: To reheat, cover with aluminum foil and place in a 350 oven for one hour. Those danged mashed potatoes take forever to heat through!

  • Put a large pot of well-salted water on to boil. Cook the potatoes at a nice simmer until fork tender. Drain. Return to the pot and allow any excess water to evaporate. Add the butter, milk, 1 1/2 teaspoons of kosher salt, and a few turns of black pepper. Mash the potatoes until soft. Stir in the sliced scallions. Taste for seasoning; you may want a little more salt. Set aside.
  • While the potatoes are boiling, heat a large, oven-proof skillet with the oil over medium- to medium-high heat. When the oil shimmers, add the carrots, onion, thyme, bay leaves, mushrooms, garlic, and 1 teaspoon of kosher salt. Cook, stirring frequently, until softened and lightly brown. Add the tomato paste and stir until coated.
  • Deglaze the skillet with the Worcestershire and red wine, scraping up any browned bits that may have stuck to the skillet. Add the stock. Bring to a simmer and add the ground meat in 2 tablespoon-sized chunks. Cover and let simmer for about 10 minutes. Stir half way to turn the meat and break the beef chunks up a bit.TIP: This may be a good time to see if the potatoes are done.
  • Use a fork and a small bowl to whisk the cornstarch with a tablespoon of water. Make a well in the beef and vegetable mix. Add the slurry and continue to simmer for another minute or two. Give everything a nice stir. The mixture should be thick and stewy, but not soupy. If it seems liquid-y, continue to cook for another minute or two.
