These easy healthy pancakes get their fluffy texture from whipped egg whites. Stack them high with fresh berries and a spoonful of low-fat yogurt

Number Of Ingredients 5

50g self-raising flour
50g wholemeal or wholegrain flour
2 small eggs, separated
150ml skimmed milk
berries and low-fat yogurt or fromage frais to serve

Steps:

  • Sift the flours into a bowl or wide jug and tip any bits in the sieve back into the bowl. Add the egg yolks and a splash of milk then stir to a thick paste. Add the remaining milk a little at a time so you don't make lumps in the batter.
  • Whisk the egg whites until they stand up in stiff peaks, then fold them carefully into the batter - try not to squash out all the air.
  • Heat a non-stick pan over a medium heat and pour in enough batter to make a pancake about 10 cm across. Cook for just under a minute until bubbles begin to pop on the surface and the edges are looking a little dry. Carefully turn the pancake over. If it is a bit wet on top, it may squirt out a little batter as you do so. In that case, leave it on the other side a little longer. Keep warm while you make the remaining pancakes. Serve with your favourite healthy toppings.

I like to seve these to guests on special occasions, such as birthdays, (with a candle), anniversaries, etc. Breakfast is served on fine china; with crystal, silver, fresh flowers and candlelight.

1 1/2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/8 teaspoon salt
1 1/2 cups skim milk
2 tablespoons corn oil
2 egg whites

Steps:

  • Combine dry ingredients in large bowl.
  • Add milk, corn oil, and mix until just moistened.
  • Beat egg whites in small bowl until stiff peaks form.
  • Fold into batter.
  • Place on greased griddle (medium high).
  • When bubbles begin to form, flip pancakes.
  • Serve with strawberry garnishes and warm real Vermont maple syrup.

1/2 cup whole wheat flour
1/2 cup cornmeal
1/2 cup quick-cooking oats
2 tablespoons sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 1/2 cups 1% fat buttermilk
3 tablespoons butter or 3 tablespoons margarine, melted
syrup

Steps:

  • In a bowl, combine the dry ingredients.
  • In a small bowl, beat egg, buttermilk, and butter; stir into dry ingredients just until moistened.
  • Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top.
  • Cook until second side is golden brown.
  • Serve with syrup or desired topping.

1/3 cup sugar
1 teaspoon baking soda

1 1/2 cups vanilla-flavored soymilk or 1 1/2 cups milk
1 egg
1/4 cup applesauce
cooking spray
1/2 cup golden raisin
1/2 cup chopped walnuts
maple syrup, to serve

Steps:

  • Combine flours, farina, sugar, soda, baking powder, salt in a large bowl, stirring with a whisk.
  • Combine milk, applesauce,and egg in a medium bowl, stirring until well blended.
  • Add milk mixture to flour mixture, stirring until well combined; let stand 5 minutes.
  • Heat a nonstick grill or skillet over medium heat;coat pan with cooking spray; Pour about 1/4 cup batter per pancake onto griddle; SPRINKLE with 2 teaspoons raisins and 2 teaspoons nuts.
  • Cook 1 minute or until tops are covered with bubbles and edges look cooked; carefully turn over, cook 1 minute or until bottoms are lightly browned; Repeat; Serve with maple syrup.

1 cup wild rice pancake mix (Arrowhead Mills brand)
1 cup organic unsweetened applesauce
2 tablespoons organic dark agave nectar
1 teaspoon cinnamon (optional)
1 1/2 cups frozen unsweetened strawberries (or other berries)
3 tablespoons agave nectar
1/2 cup applesauce
1 teaspoon earth balance vegan margarine (or other non-hydrogenated margarine)

Steps:

  • Pancakes: Mix all ingredients in large mixing bowl. Heat pan on medium-high and spray with organic, low-calorie non-stick spray. Use 2 heaping tablespoons of batter to make each pancake. While first side of pancakes are cooking, add desired items (optional, such as vegan chocolate chips, fruit, nuts, etc; [will change calorie count]). Flip pancakes when firm to cook other side. Servings: 2; Serving size: 3 pancakes; Per serving: calories 339; fat 1.7g.
  • Syrup: In a small sauce pan heat strawberries (or other berries), applesauce, and margarine on medium-low heat and cover. Berries will thaw and become soft. Mush berries with a spoon to make a chunky mixture. Add agave nectar and lower heat to simmer. Pour over pancakes hot off the stove or cold. I loved this pancake recipe. Way better than a mix at the store but I wanted to cut a little of the fat. I make them with less butter, egg whites instead of a whole egg, and nonfat milk. They are so fluffy and tasty plus I feel great about giving them to my family.
