This vegan baked oatmeal gets its sweetness fruit and a touch of maple syrup and is packed with heart healthy oats and nuts. It's easy to make and perfect for weekend brunch and meal prepping!

2 flax eggs ((1 egg = 1 tbsp flax meal + 3 tbsp water))
2 ripe bananas
1 cup unsweetened almond milk
¼ cup maple syrup
1 tsp vanilla extract
lemon zest
2 cups old fashioned oats ((can use gluten-free oats))
⅓ cup chia seeds
¼ cup chopped walnuts
¼ cup almond slivers
1 tsp baking powder
2 tsp cinnamon
¼ tsp salt
2 cup frozen blueberries

Steps:

  • Preheat oven to 350 degrees F.
  • Spray a 8 x 8" baking dish with cooking spray.
  • In a small bowl whisk together 2 tbsp flax meal with 6 tbsp water and set aside for 10 minutes to thicken.
  • In a large bowl mash the bananas. Add in the almond milk, maple syrup, vanilla extract, lemon zest and flax eggs and stir until all ingredients are incorporated.
  • Next add in all remaining dry ingredients and lastly fold in 1 1/2 cups of the blueberries.
  • Pour the oatmeal mixture into the greased baking dish and sprinkle with the remaining blueberries, pressing them down into the oatmeal mixture.
  • Bake for about 40 minutes or until the top of the oatmeal has started to brown. Allow to cool slightly and serve warm. Store in an airtight container in the refrigerator.

  • Place oats in a large bowl; add boiling water. Let stand for 5 minutes. Stir in the remaining ingredients. , Transfer to an 11x7-in. baking dish coated with cooking spray (dish will be full). Cover and bake at 350° for 40 minutes. Uncover; bake 10-15 minutes longer or until bubbly and set.

3 cups old-fashioned oatmeal
1/2 cup margarine (1 stick) or 1/2 cup butter (1 stick)
1/4 cup packed brown sugar (more,if desired)
2 eggs
2 teaspoons baking powder
1 teaspoon salt
2 cups milk
dried fruit (such as raisins, apples, cherries or cranberries) (optional) or chopped nuts (optional)

Steps:

  • Melt margarine (butter) and cool slightly.
  • Meanwhile, mix together the oatmeal, brown sugar, baking powder, and salt in a large bowl. In a small bowl, mix the eggs, milk, and melted margarine (butter). Stir into the dry mixture.
  • Bake in a buttered 13x9x2-inch baking pan at 350 - 375 degrees for approximately 30 minutes.
  • OPTIONAL: Add 1/2 cup each chopped dried fruit and/or nuts of your choice before baking. Or, you could also bake without the fruit/nuts in the mix, serving it with a dollop of vanilla yogurt with the chopped fruit and nuts sprinkled on top.
