Unsalted butter, for pan
1 1/2 tablespoons instant espresso powder
6 tablespoons hot water
21 ounces semisweet chocolate, coarsely chopped
6 tablespoons dark rum, preferably Meyer's
6 tablespoons dark rum
9 large eggs
3/4 cup granulated sugar
1 1/2 cups heavy cream
1 tablespoon confectioners' sugar
1 tablespoon pure vanilla extract
Sweetened whipped cream, for garnish (optional)

Steps:

  • Preheat oven to 350 degrees with rack set in lower third of oven. Butter a 10-by-2-inch heart-shaped pan. Line bottom and sides with parchment paper; set aside.
  • In a small bowl, combine the espresso and water. Stir to dissolve. In a heatproof bowl, combine the chocolates, espresso mixture, and rum over a saucepan of simmer water. Stir until smooth. Remove, and set aside.
  • Over the same saucepan of simmering water, combine the eggs and granulated sugar in a large heatproof bowl. Beat, using a handheld electric mixer, until thick, fluffy, and almost tripled in volume.
  • Whip the cream in a chilled bowl until soft peaks form. Add the confectioners' sugar and vanilla.
  • Fold the melted-chocolate mixture into the egg mixture. Gently fold in the whipped cream. Transfer to prepared pan. Place a large roasting pan in the oven, and fill 1 inch with boiling water. Immediately set the heart pan in the roasting pan. Bake until a toothpick inserted in the center comes out clean, about 1 hour.
  • Remove from oven, and let cool in the water bath. When cool, cover, and refrigerate overnight.
  • Just before serving, uncover the pan, and warm slightly in an inch of warm water to loosen from pan. Invert onto a platter. Pipe the sweetened whipped cream onto the chocolate heart with a decorative tip, if desired.

3-1/2 pkg. (4 oz. each) BAKER'S Bittersweet Chocolate (14 oz.), chopped
1/2 cup butter
1/4 cup milk
5 eggs
1 tsp. vanilla
1/2 cup granulated sugar
1/4 cup flour
1/4 cup strawberry jam
1-1/2 cups sliced strawberries
1 Tbsp. powdered sugar

Steps:

  • Heat oven to 325ºF.
  • Spray bottom of 8-inch heart-shaped pan with removable bottom with cooking spray. Microwave chocolate, butter and milk in microwaveable bowl on HIGH 2 to 3 min. or until chocolate is almost melted; stir until chocolate is completely melted and mixture is well blended. Cool.
  • Beat eggs and vanilla in large bowl with mixer until blended. Add granulated sugar and flour; mix well. Gradually add chocolate mixture, mixing after each addition until well blended. Pour into prepared pan.
  • Bake 30 min. or until edge is slightly puffed. Cool 20 min. Run knife around dessert to loosen from rim of pan; remove rim. Cool dessert completely.
  • Cook jam in small saucepan on medium-low heat just until melted, stirring frequently; cool slightly. Spread jam onto top of dessert; top with strawberries. Sprinkle with powdered sugar just before serving.

In a twist on a Valentine's Day chocolate sampler, the top of this six-inch Sacher torte, a classic Viennese dessert, is decorated with homemade truffles. These are dusted with three colors of cocoa powder. The small size makes it ideal for sharing with a sweetheart.

Yield Makes One 6-inch 2-Layer Cake

1/2 cup (1 stick) unsalted butter, softened, plus more for pans
Unsweetened cocoa powder, for pans
4 ounces semisweet chocolate, finely chopped
1/3 cup plus 2 tablespoons sugar
3 large eggs, separated
1 teaspoon pure vanilla extract
3/4 cup all-purpose flour
1/3 teaspoon salt
1/4 cup apricot jam
2 teaspoons orange-flavored liqueur, (optional)
8 ounces semisweet or bittersweet chocolate, finely chopped
1 cup heavy cream
Assorted Chocolate Truffles

Steps:

  • Make the cake: Preheat oven to 300 degrees, with rack in center. Butter two 6-inch heart-shape cake pans. Line bottoms with parchment paper; butter parchment. Dust with cocoa powder, and tap out excess; set aside. Melt chocolate in a heatproof bowl set over a pan of simmering water, stirring often; set aside.
  • Put butter and 1/3 cup sugar into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 2 minutes. Mix in yolks, then vanilla and melted chocolate. Reduce speed to low. Mix in flour. Transfer batter to a large bowl.
  • Put egg whites and salt into the clean bowl of an electric mixer fitted with the whisk attachment. Beat on low speed until foamy. Raise speed to medium-high; gradually beat in remaining 2 tablespoons sugar. Raise speed to high, and beat just until stiff peaks form. Stir half the egg whites into the chocolate mixture. Using a rubber spatula, gently fold in remaining egg whites.
  • Divide batter between prepared pans. Tap firmly on counter to remove any air bubbles. Bake until centers are just set, 16 to 17 minutes. Let cool completely in pans on a wire rack. Turn out cakes; remove parchment. Reinvert onto rack.
  • Trim cakes flat. Warm jam in a small saucepan over medium-low heat, stirring occasionally, until slightly runny. Stir in liqueur, if desired. Spread warm jam over 1 cake layer. Top with remaining layer.
  • Make the ganache: Put chocolate into a large heatproof bowl. Bring cream just to a boil over medium-high heat; pour over chocolate. Let stand 10 minutes. Stir until smooth. Refrigerate, stirring every 10 minutes, until cooled and the consistency of corn syrup, about 30 minutes.
  • Slowly pour ganache over top and down sides of cake (use an offset spatula to spread evenly, if needed). Let stand 30 minutes. Arrange truffles over top of cake. Serve.

This sumptuous cake is scented with a touch of rosemary, which symbolizes remembrance.

6 large sprigs fresh rosemary
1 large egg white
1/2 cup superfine sugar
1 cup (2 sticks) unsalted butter, cut into small pieces
11 ounces semisweet or bittersweet chocolate, finely chopped
5 large eggs, separated
3 tablespoons granulated sugar
1/4 cup all-purpose flour
1 teaspoon baking powder
1 recipe Chocolate Rosemary Ganache
1 recipe Hazelnut Praline, (optional)

Steps:

  • Separate rosemary into small bunches. Beat egg white with a drop or two of water until it is very loose. Place superfine sugar in a small, shallow bowl. Lightly brush one sprig of rosemary with the egg white. Sprinkle superfine sugar over the damp bunch of rosemary; shake to remove excess. Transfer rosemary to a cooling rack to dry, at least 1 hour. Repeat until all rosemary is used; set aside sugared rosemary. (It will keep at room temperature for about 24 hours.)
  • Preheat the oven to 275 degrees with two racks centered. In the top of double boiler, or in a heat-proof bowl set over simmering water, melt butter and chocolate together, stirring frequently, about 5 minutes. Set mixture aside to cool.
  • In a medium bowl, lightly beat egg yolks, and stir them into the cooled chocolate mixture. Add granulated sugar, flour, and baking powder to the chocolate mixture, and stir to combine.
  • In the bowl of an electric mixer fitted with the whisk attachment, whisk the egg whites just until soft peaks form. Stir one-third of the egg whites into the chocolate mixture to lighten it. Fold the chocolate mixture into the remaining egg whites, just until combined. Spoon the batter into twelve 3 3/4-inch heart molds with removable bottoms. Transfer molds to a rimmed baking sheet. Bake until centers spring back when touched, about 45 minutes. Transfer molds to a wire rack, and let sit 5 minutes. Unmold cakes. (After they have cooled, if not using right away, cover cakes lightly with plastic wrap.)
  • To serve, place a cake on serving plate. Pour warm ganache over it; sprinkle with praline, if using. Top with a second and then a third cake layer, drizzling each with ganache. Repeat to make 3 more servings. Sprinkle cakes with praline if desired, and garnish with sugared rosemary. Serve.

To celebrate Valentine's Day, Martha always treats her nearest and dearest to something extra-special. Follow her lead and share a little piece of your heart, too, by making these rich flourless chocolate mini cakes.

Nonstick cooking spray, for pans
1 teaspoon instant espresso
2 tablespoons hot water
5 ounces semisweet chocolate, finely chopped (1 1/4 cups)
2 tablespoons dark rum, such as Myers's
2 large eggs, room temperature
3 tablespoons granulated sugar
1/3 cup heavy cream
1 tablespoon confectioners' sugar
1 teaspoon pure vanilla extract
Swiss-Meringue Buttercream or Silky Crème-Fraîche Whipped Cream

Steps:

  • Preheat oven to 300°F. Spray the hollows of a 5-cup heart-shaped nonstick cake pan or an 8-cup silicone mold with cooking spray (see cook's note for product links). If not using silicone mold, line bottoms with parchment.
  • In a medium heatproof bowl, dissolve espresso in hot water. Add chocolate and rum and place over (but not in) a pot of simmering water. Stir until chocolate has melted and mixture is smooth. Remove from heat; let cool slightly.
  • In a heatproof bowl, combine eggs and granulated sugar. Place over (but not in) pot of simmering water and whisk until sugar has dissolved and mixture is warm to the touch. Transfer to a mixer fitted with the whisk attachment and beat on medium-high speed until mixture is thick, fluffy, and almost doubled in volume, about 3 minutes (or, if not using a stand mixer, you can beat with a hand mixer directly over the heat).
  • Whisk cream with confectioners' sugar and vanilla until soft peaks form. Fold chocolate mixture into egg mixture, then gently but thoroughly fold in whipped cream.
  • Divide mixture among hollows of prepared pan (about 1/2 cup per hollow for 5-cup; about 1/3 cup for 8-cup). Place filled pan in a large roasting pan on middle rack of oven. Add boiling water to roasting pan to come halfway up sides of cake pan. Bake until a tester inserted in centers comes out clean, 40 to 50 minutes.
  • Remove from oven and let cool completely in water bath. Remove from water, cover, and refrigerate at least 4 hours and up to 24 hours. Just before serving, dip bottom of pan in warm water to loosen, about 1 minute. Run a small offset spatula around edges of cakes, then lift each out of pan; or cover with a platter and invert to remove. Remove parchment (if using). Use a pastry bag fitted with desired tip (Martha used a variety of star and leaf tips) to pipe buttercream or whipped cream onto cakes. Serve immediately.
