One 16-ounce bag frozen Tater Tots®
Butter, for the baking dish
1 tablespoon olive oil
1 pound spicy bulk breakfast sausage
1 medium onion, very finely diced
1 cup milk
1/2 cup half-and-half
1/4 teaspoon seasoned salt
1/4 teaspoon cayenne
4 large eggs
1 red bell pepper, very finely diced
1 green bell pepper, very finely diced
2 cups grated Cheddar cheese
1 cup grated pepper jack cheese
Kosher salt and freshly ground black pepper

Steps:

  • Line up the tater tots in a buttered 9-by-13-inch baking dish.
  • Add the olive oil to a large skillet over medium heat. Add the sausage and onion and cook, breaking the sausage up with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Set aside to cool slightly, then sprinkle it over the tater tots.
  • In a large bowl, mix the milk, half-and-half, seasoned salt, cayenne, eggs, bell peppers, half of both cheeses and some salt and pepper. Pour over the tots and sausage mixture, then top with the rest of the cheese. Cover with foil and refrigerate overnight.
  • Preheat the oven to 350 degrees F.
  • Bake, covered, for about 25 minutes. Remove the foil and continue to bake until the cheese is brown and bubbly and the casserole is cooked through, another 20 to 35 minutes. Cut into squares and serve.

1 medium yellow onion, finely chopped (about 2 cups)
1 pound 80-percent lean ground beef
Kosher salt and freshly ground black pepper
2 cups frozen cut green beans, thawed (8 ounces)
1 3/4 cups frozen corn kernels, thawed (8 ounces)
Two 10-ounce cans condensed cream of mushroom soup
1 pound frozen potato tots

Steps:

  • Preheat the oven to 350 degrees F.
  • Add the oil to a large skillet over medium heat. Add the onions and cook until soft and beginning to brown, about 15 minutes. Add the beef to the onions and cook until the meat is brown, stirring and scraping the bottom of the skillet to release the yummy brown bits, about 10 minutes. Season with salt and pepper.
  • Transfer the beef and onion mixture from the skillet into a 9-by-13-inch baking dish. Scatter the green beans and corn evenly on top. Spread the cream of mushroom soup over top and top with frozen potato tots. Bake uncovered for 1 hour; the potato tots should be golden brown. Serve.

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 13x9-inch casserole dish with cooking spray.

25 -30 frozen tater tots

8 ounces frozen mixed vegetables

Steps:

  • This recipe makes 9 servings approximately 1 1/2 cups each.
  • Brown the ground beef and onion together until fully cooked. Mix soups and cheeses together and then mix in the beef/onions. ½ medium onion, peeled and diced
1-pound lean ground beef
12-ounce bag frozen mixed vegetables
1 ½ teaspoons kosher or sea salt
1 teaspoon dried mustard powder
½ teaspoon each celery salt, onion powder and garlic powder
½ teaspoon ground black pepper
4 tablespoons all-purpose flour
2 cups unsalted beef stock
Dash Worcestershire sauce (optional)
½ cup shredded cheddar cheese
~70-75 frozen tater tots (from a 32-ounce bag)

Steps:

  • Preheat the oven to 375 degrees.
  • Heat the oil or butter in a large stove-top casserole dish or large oven-safe skillet to medium. Add the onion and sauté 4-5 minutes or until soft. Add the ground beef and cook another 5-7 minutes or until browned, breaking up the pieces with a wooden spoon as it cooks. Stir in the mixed vegetables and sauté another 2-3 minutes. Stir in the salt, mustard powder, celery salt, onion powder, garlic powder and black pepper.
  • Stir in the flour until incorporated. Increase the heat to medium-high. Add the stock and bring to a simmer, stirring constantly for 2-3 minutes, until thickened. Taste and adjust the seasoning, if necessary. Stir in the Worcestershire sauce (if using). Remove from the heat and flatten the beef mixture in an even layer.
  • Sprinkle the cheddar cheese in an even layer over the beef mixture. Line with tater tots. Bake 20-25 minutes or until the tater tots are golden and crispy and the filling is bubbly. Let rest for 5 minutes, then scoop and serve.
