EASY POTATOES AU GRATIN
Tender sliced potatoes baked to perfect with a creamy sauce made with milk, cheese, garlic, mustard, and onions.

Steps:
- Preheat the oven to 350F and spray a baking dish with cooking oil spray or olive oil.
- Add sliced potatoes and season with salt and pepper. Drizzle 2 tbsp oil and toss well to coat. Place in the preheated oven and bake for 15 minutes, or until potatoes begin to soften and the sauce is ready.
- Meanwhile, heat a rimmed pan over medium heat and drizzle with 1 tbsp oil. Sauté the onion and garlic for 2-3 minutes, or until it softens.
- Stir in the mustard and flour. Slowly pour the milk and whisk until sauce is thickened and smooth, 2-3 minutes.
- Season with salt, pepper, and nutmeg.
- Remove the potatoes from the oven and pour over the sauce, stirring gently to mostly cover and coat.
- Top with shredded cheese. (You can now cool and refrigerate the dish for make-ahead.)
- Return to the oven and bake for 60 minutes, or until potatoes are super tender, bubbly, and golden-brown on top. (Cooking time may vary depending on the size of the thickness of your potato slices.)
- Garnish with fresh thyme before serving.

- Preheat oven to 400 degrees F (200 degrees C). Lightly butter a 1-quart baking dish.
- Layer half the potatoes into the bottom of prepared baking dish. Top with onion slices and add remaining potatoes. Season with salt and pepper.
- Melt butter over medium heat in a saucepan. Mix in flour and salt, stirring constantly with a whisk, for one minute. Stir in milk. Cook until mixture has thickened. Add Cheddar cheese and continue stirring until melted, 30 to 60 seconds. Pour cheese sauce over potatoes and cover dish with aluminum foil.
- Bake in the preheated oven until cheese sauce is bubbling and potatoes are tender, about 1 1/2 hours.

- Preheat oven to 350°. In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. - 1. Preheat oven to 350. Grease a 12 x 9 inch baking dish.
- 2. Peel or scrub potatoes and slice thin.
- 3. Layer 1/3 of potatoes in prepared pan. Sprinkle with 1/3 of salt, garlic, pepper, onions, cheese and milk. Repeat with 2 more layers.
- 4. Bake til potatoes are tender, 60 to 90 minutes. Serves 6 to 8 Note: For a creamier dish, add a can of low fat cream of mushroom soup to the milk.
CREAMY AU GRATIN POTATOES
This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

- Preheat the oven to 350 degrees F.
- Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
- Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
- In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

- Preheat the oven to 400 degrees F.
- Add the cream and milk to a large saucepan over medium-low heat and bring to a gentle simmer. Add the nutmeg, a big pinch of salt and some pepper. Meanwhile, slice the potatoes on a mandoline to 1/8-inch thick. Place the potatoes in the warm cream mixture and simmer gently until the potatoes are two-thirds of the way cooked and the cream has thickened, about 15 minutes.
- Place a 9-by-12-inch flameproof gratin dish on the stove over low heat. Brush the bottom and the sides with the melted butter. Spread the garlic around the bottom of the dish. Cook just long enough to toast the garlic in the butter, 3 to 4 minutes. Add a layer of the potato mixture. Combine the Gruyere and Parmesan in a bowl, then sprinkle a third of the cheese over the potatoes. Repeat the layering 2 more times, finishing with the remaining cheese. Pick the thyme leaves and sprinkle over the top, mixing with last layer of cheese. Place the gratin dish on a rimmed baking sheet and bake until bubbly and golden, 45 to 50 minutes (see Cook's Note).
EASY AU GRATIN POTATOES
This is a very easy way to make creamy, cheesy potatoes. I used a wide baking dish. If using a taller narrower dish make 3 layers. You can vary the cheese. Last night I used a mixture of cheddar and mexican because I had a little of each left.

- Heat oven to 375°F. Grease 1 1/2-quart casserole with shortening or spray with cooking spray.
- In 2-quart saucepan, melt butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat.
- Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in 1 1/2 cups of the cheese until melted.

Yummy, creamy comfort food - this is NOT health food! I have adapted this from a recipe I found online years ago to make it as easy on cleanup as possible. **EDIT: butter amount corrected following review 2/24.

- Preheat oven to 350 degrees F. Spray a 9 x 13 inch casserole dish with non-stick spray.
- Wash the potatoes, or peel if you like. We leave the skins on. Slice them thinly, about 1/4 inch thick. Boil for about 5 minutes to soften them, but don't overcook them! They should be soft, but not done.
- While potatoes are cooking, put butter and onion in a large microwave-safe dish and cook for 2-3 minutes, until onions are soft and slightly translucent. (I use my large Pyrex measuring cup.) Add remaining ingredients, mix well, and microwave 3-4 more minutes until bubbling.
- Layer potatoes and sauce mixture into greased dish, evenly coating potatoes. Top layer should be sauce. Bake for about 45 minutes until the top is browned and bubbly.
- (If you're pressed for time, microwave the casserole for about 10 minutes, then stick it under the broiler to brown the top - my family can't tell the difference!).

- Pour one-third of the milk mixture into the bottom of a shallow baking dish. Season potatoes with salt and pepper. Arrange layer of potato slices over milk mixture, slightly overlapping each piece.
