This is a delicious lower fat, lower calorie baked french fry--evidently soaking the potatoes in the salt-sugar solution draws out some of their water. This way they brown and crisp instead of steam. So yummy! (to me, these taste like the fry-daddy type french fries my mom made me when I was a kid!) My non-dieter husband also deemed these delicious. 159 calories/5 g. fat, 0 mg. cholesterol/28 g. carbs/3 g fiber Weight Watchers Points per serving: 3 This came from a WW book, but I'm not sure which one.

1 1/4 lbs baking potatoes, peeled and cut into 1/2-inch strips
1/2 teaspoon sugar
4 teaspoons oil
1 teaspoon paprika
3/4 teaspoon salt

Steps:

  • Preheat oven to 450 degrees. Spray a non-stick baking sheet w/ non-stick cooking spray.
  • In a lg. bowl, combine potatoes, 1/4 teaspoons of the salt and all of sugar w/ cold water to cover. Soak 15 min, drain and blot dry.
  • In another lg. bowl, toss potatoes w/ oil and paprika. Place in a single layer on the baking sheet.
  • Bake, turning potatoes over as they brown, until cooked through and crisp. (Could take anywhere from 25-45 min., depending on how you cut your potatoes and your oven. My fries only took about 25 minute I checked on my potatoes and turned them about every 5 minute or so. You will see them browning and hear them sizzling.) Sprinkle w/ the remaining 1/2 teaspoons of salt.

2 russet potatoes, scrubbed (about 3 oz. each)
1 teaspoon herb seasoning mix (or any seasoning salt you like, I used Emeril's Essence, Montreal Steak Seasoning would be good too)
cooking spray

Steps:

  • Preheat oven to 450 degrees.
  • Line baking sheet with nonstick aluminum foil. Spray foil with cooking spray.
  • Leave peel on potatoes. Slice in half lengthwise, then slice each half into strips. Place strips on prepared baking sheet. Spray strips lightly with cooking spray and sprinkle with seasoning.
  • Bake 20-25 minutes or until golden. Serve immediately.

3 -4 russet baking potatoes
cooking spray
1 (1 ounce) ranch dressing mix

Steps:

  • Scrub the potatoes well and cut into thin strips. (I use my french fry cutter).
  • Place in a large zip-loc bag and spray with cooking spray while turning to coat.
  • Sprinkle in 1/2 the ranch mix, toss to coat; repeat.
  • Place on a large cookie sheet coated with cooking spray or non-stick foil. Bake at 450° for 25-30 minutes. Turning once. (Ovens vary so check at 20 minutes!).

Nonstick cooking spray
1/2 cup all-purpose flour
Kosher salt
2 large eggs
2 1/2 cups panko breadcrumbs (see Cook's Note)
1/2 cup finely grated Parmesan
1 pound zucchini (2 to 3 small-to-medium zucchini), cut into 3-inch-by-1/4-inch sticks

Steps:

  • Adjust 2 oven racks to the top and bottom thirds of the oven and preheat to 425 degrees F. Put the wire racks in the baking sheets and coat each generously with cooking spray.
  • Combine the flour and 3/4 teaspoon salt in a large re-sealable plastic bag. Combine the eggs and 3/4 teaspoon salt in another large plastic bag; combine the breadcrumbs, Parmesan and 3/4 teaspoon salt in a third large plastic bag.
  • Add about a half of the zucchini sticks to the bag with the flour and use a combination of your hands and shaking the bag to coat the zucchini. Remove the zucchini and shake off any excess flour. Transfer to the egg wash and repeat until coated. (It's less messy if you use only one hand for the dry ingredients and the other for the wet.) Let any excess egg drip off before transferring to the breadcrumb mixture; repeat until fully coated (you'll still see some green and white of the zucchini peeking through the breading). Transfer to the prepared baking sheets and coat the breaded zucchini generously with cooking spray (there's no need to turn them). Repeat with the remaining zucchini.
  • Bake, rotating the baking sheets from top to bottom about halfway through, until golden brown and tender, 25 to 30 minutes. Sprinkle with a little salt and serve warm with your favorite dipping sauces.

  • Slice the pototoes into thin rectangles that look like french fries.
  • Toss with olive oil.
  • Put in baking pan and lightly salt.
  • Bake at 400 for 30 minutes.
  • About halfway through baking time flip the french fries over to crisp on both sides. With about five minutes left I turn the broiler on to crisp up the fries more.
  • Once done I like to put in a bowl with paper towels to drain some of the oil.
  • Enjoy.
