Time 7h45m

Number Of Ingredients 13

1 and 1/2 cups (180g) graham cracker crumbs (about 12 full sheet graham crackers)
5 Tablespoons (71g) unsalted butter, melted
1/4 cup (50g) granulated sugar
four 8-ounce bricks (32 oz/904g) full-fat PHILADELPHIA Cream Cheese, softened to room temperature
1 cup + 2 Tablespoons (225g) granulated sugar
1/2 cup (120ml) key lime juice*
1/3 cup (80g) sour cream or plain yogurt, at room temperature
1 teaspoon pure vanilla extract
1 teaspoon key lime zest*
3 large eggs, at room temperature
homemade whipped cream
fresh berries
key lime or regular lime slices

Steps:

  • Adjust the oven rack to the center position, with a lower oven rack in place for the water bath described in step 5, and preheat oven to 350°F (177°C).
  • If your graham crackers aren't crumbs yet, use a food processor to pulse them into fine crumbs. Pour crumbs into a medium bowl and stir in sugar and melted butter until combined. Mixture will be sandy. Press firmly into the bottom and slightly up the sides of a 9-inch springform pan. No need to grease the pan first. I use the bottom of a measuring cup to pack the crust down tightly. Pre-bake for 10 minutes. Remove from the oven and allow crust to slightly cool as you prepare the filling.
  • Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese and granulated sugar together on medium-high speed in a large bowl until the mixture is smooth and creamy, about 2 minutes. Add the lime juice, sour cream, vanilla extract, and lime zest then beat on medium-high speed until fully combined. On medium speed, add the eggs one at a time, beating after each addition until just blended. After the final egg is incorporated into the batter, stop mixing. To help prevent the cheesecake from deflating and cracking as it cools, avoid over-mixing the batter as best you can.
  • Pour cheesecake batter into warm crust. Use a rubber spatula or spoon to smooth it into an even layer.
  • Boil a kettle or pot of water. You need 1 inch of water in your roasting pan for the water bath, so make sure you boil enough. Place a large metal baking or roasting pan (I usually use a 9×13-inch baking pan-do not use glass) on the bottom rack of the preheated oven. Pour boiling water into pan, about 1 inch deep. Immediately place the cheesecake on the center rack. Close oven to trap the steam inside. This unique water bath adds steam to the oven without having the cheesecake sit inside the water itself, which is the traditional water bath method explained in the recipe Notes.
  • (Note: if you notice the cheesecake browning too quickly on top, tent it with aluminum foil halfway through baking.) Bake cheesecake for 55-70 minutes or until the center is almost set. When it's done, the center of the cheesecake will slightly wobble if you gently shake the pan. Turn the oven off and open the oven door slightly. Let the cheesecake sit in the oven as it cools down for 1 hour. Remove from the oven, then cool cheesecake completely at room temperature. Then refrigerate the cheesecake for at least 4 hours or overnight.
  • Use a knife to loosen the chilled cheesecake from the rim of the springform pan, then remove the rim. Add optional toppings if desired. I used a piping tip for the pictured whipped cream. Using a clean sharp knife, cut into slices for serving. For neat slices, wipe the knife clean and dip into warm water between each slice.
  • Cover and store leftover cheesecake in the refrigerator for up to 5 days.

No-Bake Key Lime Cheesecake Bars image

Categories     dessert

Time 35m

Yield about 24 bars

Number Of Ingredients 11

1 stick unsalted butter, cut into pieces
2 ounces semisweet chocolate, chopped
1 9-ounce package chocolate wafer cookies
2 tablespoons sugar
1/2 cup fresh Key lime juice (from about 10 Key limes) or bottled Key lime juice
2 teaspoons unflavored gelatin powder (from one 1/4-ounce packet)
1/4 cup sugar
2 8-ounce packages cream cheese, at room temperature
1 14-ounce can sweetened condensed milk
1/2 teaspoon vanilla extract
2 ounces semisweet chocolate, chopped

Steps:

  • Make the crust: Line a 9-by-13-inch baking dish with foil, leaving an overhang. Put the butter and chocolate in a microwave-safe bowl; microwave in 30-second intervals, stirring, until melted and smooth. Pulse the cookies with the sugar in a food processor until finely ground. With the motor running, pour in the warm melted chocolate mixture and process until combined. Press the crumb mixture into the bottom of the prepared pan and refrigerate while you make the filling.
  • Make the filling: Warm the lime juice in a small saucepan over low heat; whisk in the gelatin and sugar until completely dissolved, then remove from the heat and let cool slightly. Beat the cream cheese in a large bowl with a mixer on high speed until smooth and fluffy, about 4 minutes. Add the sweetened condensed milk and beat until smooth. Beat in the gelatin mixture and vanilla. Spread in the prepared crust and refrigerate until firm, at least 4 hours or overnight. Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring, until smooth. Drizzle over the cheesecake and refrigerate until ready to serve. Remove from the pan using the foil handles and slice into bars. Photograph by Johnny Miller

Time 2h

Number Of Ingredients 9

2 cups Animal Cracker Crumbs
¼ tsp Salt
~½ cup Unsweetened Vanilla Almond Milk
24 oz Plain, Nonfat Greek Yogurt
8 oz Neufchâtel Cream Cheese ((or ⅓ Less Fat Cream Cheese), room temp)
5 Large Eggs
1 tbs Liquid Stevia Extract
1 tbs Key Lime Zest
⅔ cup Key Lime Juice

Steps:

  • Preheat the oven to 350 degrees Fahrenheit and prepare a 9" springform pan with parchment paper. Place a sheet of parchment paper on the springform base, then close the springform "ring" onto the base, tightly trapping the parchment paper.
  • In a large bowl, stir together the animal cracker crumbs, salt, and almond milk. It should look like a dough. Press the mixture into the prepared pan and set aside.
  • In a stand mixer bowl fitted with a whisk attachment, add the yogurt and cream cheese. Mix on medium speed until completely smooth.
  • Reduce the speed to low and add one egg at a time. When completely smooth, add the stevia and key lime zest.
  • Bake the crust you set aside earlier in the oven for 14 minutes. While that bakes, finish off the filling.
  • Finally, add the key lime juice to the mixer to whisk until the crust is done baking.
  • Take the crust out of the oven, then pour in the cheesecake filling. Bake for 1 hour and 15-20 minutes. Let cool at room temperature, then cover and refrigerate overnight. The next day, slice, serve, and enjoy!

LAYERED LIME CHEESECAKE

Layered lime cheesecake image

Make this stunning layered, citrussy dessert ahead of time if you're entertaining. It's a crowd-pleaser that's part key lime pie, part cheesecake, part trifle

Provided by Barney Desmazery

Categories     Afternoon tea, Dessert, Treat

Time 40m

Number Of Ingredients 9

250g gingernut biscuits
125g unsalted butter, melted
600g cream cheese
100g icing sugar
3 limes, zested (save the juice to use in the glaze)
300ml double cream, whipped to soft peaks
4 gelatine leaves
100g caster sugar
6 limes, juiced and pared, and zest of 3 to 6 limes, zest pared off on 3 with a peeler and all juiced

Steps:

  • Whizz the biscuits to crumbs in a food processor, or tip into a food bag and crush with a rolling pin. Mix with the melted butter, then press into the base of a 20cm springform cake tin. Chill in the fridge until needed.
  • Put the cream cheese, icing sugar and lime zest in a bowl, then beat with an electric mixer until smooth. Tip in the double cream and continue beating until completely combined. Spoon the cream mixture onto the biscuit base, working from the edges inwards and making sure that there are no air bubbles. Smooth the top of the cheesecake down with the back of a dessert spoon. Leave to set in the fridge while you make the glaze.
  • Soak the gelatine leaves in cold water. Tip the other ingredients for the glaze into a saucepan with 200ml water. Cook gently until the sugar has dissolved and the syrup is simmering. Drain and squeeze the gelatine of any excess water, then stir into the hot syrup to dissolve. Leave everything to infuse until just warm, then sieve the syrup into a jug. When cooled, pour over the cheesecake and put in the fridge overnight to set. Carefully remove the cake from tin before serving.

NO-BAKE KEY LIME CHEESECAKE

No-Bake Key Lime Cheesecake image

Provided by Food Network

Categories     dessert

Time 4h20m

Yield 12 servings

Number Of Ingredients 11

1 tablespoon wheat germ
2 cups plus 1 tablespoon sugar substitute (recommended: Splenda)
16 ounces real cream cheese, room temperature
1 cup sour cream
1 cup whole milk ricotta cheese
3/4 cup Key lime juice (fresh or bottled)
2 tablespoons no sugar added vanilla extract
1/4 cup hot water
2 limes, zested, divided
3 envelopes unflavored gelatin (recommended: Knoxx brand)
3/4 cup boiling water

Steps:

  • Sprinkle the wheat germ and 1 tablespoon sugar substitute over the bottom of the pie plate to create a "faux" crust.
  • In the bowl of an electric mixer, beat the softened cream cheese, sour cream, ricotta cheese, lime juice, 2 cups sugar substitute, vanilla extract, 1/4 cup hot water, and zest of 1 lime on medium speed until well combined.
  • Using a fork to mix, thoroughly dissolve the 3 envelopes of gelatin in 3/4 cup boiling water. Do not let cool and move onto the next step immediately. (It is important that the water be boiling hot and that you mix the gelatin powder in quickly so it is completely dissolved. If not, you will have gummy bear-type lumps.) With the mixer on high and working very quickly so the gelatin does not set, blend the hot dissolved gelatin thoroughly into cheesecake mixture. Immediately pour mixture into the prepared pie pan and sprinkle with the zest of the other lime. Chill in the refrigerator for about 3 to 4 hours or until firm. Serve.

CHEESECAKE FACTORY KEY LIME CHEESECAKE--MY VERSION

Cheesecake Factory Key Lime Cheesecake--My Version image

This is as close as I was able to come to the Cheesecake Factory Key Lime Cheesecake--a little creamier than the other versions posted here, and I think closer to the original.

Provided by LuAnn_Mason

Categories     Cheesecake

Time 1h20m

Yield 1 cheesecake, 12 serving(s)

Number Of Ingredients 10

2 cups graham cracker crumbs, crushed (approximately 2 sleeves)
1/2 cup butter, melted
1/4 cup granulated sugar
3 (8 ounce) packages cream cheese, room temperature
1 cup sugar
1 cup sour cream
1/4 cup flour
2 teaspoons vanilla
4 eggs
3/4 cup trader joe's key lime juice

Steps:

  • In 9 or 10 inch springform pan, combine crumbs, melted butter, and 1/4 cup sugar. Press evenly over bottom of pan and halfway up sides. Bake at 375 for 7-8 minutes, no longer.
  • Cream room temperature cream cheese well, add sugar, and cream until smooth, scraping sides and bottom of bowl frequently to integrate any cream cheese lumps. Cream in sour cream, eggs, flour and vanilla. When smooth once more, stir in lime juice. Note: 3/4 Cup of Key Lime juice makes a very tart cheesecake. If you prefer a less tart cheesecake, start with 1/3 cup and increase to taste.
  • Pour over prepared crust. Return to 375 oven for 15 minutes. Lower temperature to 250 and continue baking 50 minutes for 10 inch pan, 55 minutes for 9 inch pan. Cool on wire rack IN PAN for 20 minutes. Run a sharp knife around edge to loosen cheesecake, but do NOT remove from pan. Refrigerate at least 6 hours before serving. May be garnished with sweetened whipped cream, lime zest, or both.
