16 oz. fettuccine (I like using whole-grain)
3 Tbsp. butter or cooking oil (I use avocado or grapeseed oil)
3 cloves garlic, minced
5 Tbsp. flour
2 cups original almond milk
2 cups low-sodium chicken broth*
1/2 tsp. salt
1/2 tsp. black pepper
1/8 tsp. nutmeg
1/2 cup freshly-grated parmesan cheese

Steps:

  • In a large pot, cook fettuccine to al dente according to package directions, stirring frequently since fettuccine tends to stick together. Drain into a colander.
  • Return now-empty pot to the stove on medium-low heat and add butter/oil and garlic. Sauté garlic for about 60 seconds, until fragrant. Sprinkle in flour and whisk for another 30 seconds.
  • Add milk and broth and whisk until combined. Cook over medium-low heat, whisking frequently, for 10-12 minutes or until sauce is thickened. Add salt, black pepper, and nutmeg. Turn off heat.
  • Add parmesan cheese and stir until cheese melts. Add noodles and serve immediately. If sauce become too thick, add a splash of milk to thin sauce.

227g tub clotted cream
25g butter (about 2 tbsp)
1 tsp cornflour
100g parmesan, grated
freshly grated nutmeg
250g fresh fettuccine or tagliatelle
snipped chives or chopped parsley, to serve (optional)

Steps:

  • In a medium saucepan, stir the clotted cream, butter and cornflour over a low-ish heat and bring to a low simmer. Turn off the heat and keep warm.
  • Meanwhile, put the cheese and nutmeg in a small bowl and add a good grinding of black pepper, then stir everything together (don't add any salt at this stage).
  • Put the pasta in another pan with 2 tsp salt, pour over some boiling water and cook following pack instructions (usually 3-4 mins). When cooked, scoop some of the cooking water into a heatproof jug or mug and drain the pasta, but not too thoroughly.
  • Add the pasta to the pan with the clotted cream mixture, then sprinkle over the cheese and gently fold everything together over a low heat using a rubber spatula. When combined, splash in 3 tbsp of the cooking water. At first, the pasta will look wet and sloppy: keep stirring until the water is absorbed and the sauce is glossy. Check the seasoning before transferring to heated bowls. Sprinkle over some chives or parsley, then serve immediately.

8 oz fettuccine pasta (GF if needed)
2 chicken breasts (cut in half lengthwise (6 oz each))
Kosher salt & ground pepper (to taste)
1 tbsp olive oil
1 cup milk of choice
1/2 tbsp GF flour or cornstarch
2 large cloves garlic (minced)
4 oz cream cheese (softened or at room temp)
1/2 cup chicken broth
1 cup Parmesan cheese (grated)
Fresh parsley (chopped - to garnish)

Steps:

  • Bring a large pot of salted water to the boil, and cook the pasta according to package directions to al-dente.
  • Season the chicken breast with salt and pepper on both sides.
  • Preheat a large frying pan over medium heat and add in the oil. Cook chicken for 6-8 minutes per side, or until cooked through and internal temp reaches 165F.
  • Set aside and allow the chicken to rest until you make the sauce, then slice it.
  • In a small bowl whisk the milk and flour until no visible lumps.
  • To the same skillet over medium heat, add garlic and cook for no more than 1 minute. Stir in the milk mixture together with cream cheese and broth. Whisk continuously until the sauce is smooth and bubbly, 2-3 minutes. Add the parmesan cheese and allow it to cook for another 1-2 minutes.
  • Once the sauce has thickened stir in the sliced chicken, cooked pasta, parmesan and parsley. Season with salt and pepper and remove from heat.

1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese

  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.

I like it because it doesn't use cream cheese which I think is cheating a bit. I don't think you would find cream cheese in the traditional italian dish. This dish requires constant attention so be advised!

1 pint heavy whipping cream
1 teaspoon garlic powder
salt and pepper
1 dash cayenne pepper
2/3 cup grated parmesan cheese
16 ounces fettuccine
chopped parsley (to garnish)

Steps:

  • In a 2 quart saucepan over medium-low heat melt butter; add cream, garlic powder, salt, and peppers; simmer for 20-30 minutes stirring constantly, until thick.
  • Meanwhile, cook fettuccine noodles according to package directions, coordinating so that the sauce and noodles are done about the same time. This is important because if the sauce cooks too long it will separate and though it will still taste great it won't look pretty!
  • Remove sauce from heat and stir in cheese. Do not heat sauce after cheese has been added.

  • Chop the cauliflower. Bring the vegetable broth to a boil over medium high heat and add cauliflower. Cook until cauliflower is soft, about 15 minutes. In my experience, the longer you cook it, the smoother the sauce will be. Meanwhile, melt the butter in a large skillet over medium heat. Add the minced garlic and saute for 4-5 minutes or until soft and fragrant.
  • As the garlic and cauliflower are cooking, bring a large pot of water to boil and cook the fettuccine according to directions on package, reserving some of the starchy water to add to the sauce later.
  • Transfer cauliflower to a blender with about 2 cups of the broth. You may need to do this in batches depending on the size of your blender. Add the sauteed garlic, salt, nutmeg, and black pepper and puree until very smooth, about 5 minutes. Once the mixture is moving, stream the olive oil into the blender. Add more broth or water if the mixture is too thick to move through the blender. You want it to turn through the blender easily. When puree is very smooth, transfer back to the butter/garlic skillet.
