2 teaspoons olive oil
2 cloves garlic (minced)
1/2 medium onion (finely chopped)
1 stalk celery (finely chopped)
1 medium potato (peeled and cubed)
2 cups chicken or vegetable broth
2 cups fat-free milk
1 (6-ounce) bag baby spinach (divided)
Black pepper (freshly ground to taste)
Kosher salt (to taste)

Steps:

  • Gather the ingredients.
  • In a large saucepan or Dutch oven, heat the oil. Sauté the potato, onion, celery, and garlic for 5 minutes.
  • Add the chicken broth and fat-free milk. Bring to a boil, cover, and simmer on low for 10 minutes.
  • Stir in half of the spinach, cover, and simmer for 10 more minutes.
  • Cool slightly, then transfer the soup to a blender. Work in 2 batches if necessary to keep the hot soup from overflowing the blender as you blend. Alternatively, an immersion blender can be used to blend the soup in the pot. Add the remaining fresh spinach to the soup and blend until smooth.
  • Taste for seasoning and serve.

This heart-healthy soup gets its creaminess from cauliflower instead of high fat cream. Substitute vegetable broth for the chicken broth and it becomes vegetarian.

1 lb cauliflower
1 1/2 lbs fresh spinach
2 tablespoons olive oil
2 garlic cloves, minced
6 cups chicken broth
1 teaspoon salt
1 tablespoon Dijon mustard
1 teaspoon dried thyme
fresh ground pepper

Steps:

  • Remove the green leaves from the cauliflower, remove the stem and chop the florets coarsly.
  • Wash the spinach well, dry in a towel or salad spinner and chop coarsely.
  • In a stock pot, heat the oil over medium heat and add the garlic, cook for just 30 seconds.
  • Add the cauliflower, broth and salt; bring to a boil. Reduce heat and simmer for 15 minutes. Add the spinach and cook another 5 minutes, until the spinach is wilted and the cauliflower tender. Mix in the mustard and thyme.
  • Using a hand-held immersion blender, puree the soup in the pot until smooth.
  • Add pepper and additional salt to taste.

2 pounds baby spinach, washed and cleaned
2 tablespoons olive oil
4 shallots, minced
2 garlic cloves, minced

Steps:

  • Blanch half a pound of spinach in salted, boiling water.
  • Immediately, "shock" the blanched spinach in a bowl of iced water. Drain and squeeze out the excess water.
  • Puree in a blender. Set aside.
  • In a large skillet over medium heat, sweat the shallots and garlic until translucent.
  • Add the rest of the spinach leaves. Toss and saute until wilted.
  • Fold in the spinach puree.
  • Season with salt and pepper, transfer to a serving bowl and serve immediately.

CREAMY SPINACH SOUP

50g butter
1 medium onion , finely chopped
2 garlic cloves , finely chopped
1 medium potato , peeled and chopped into chunks
450ml chicken or vegetable stock
600ml milk
450g fresh spinach , washed if necessary and roughly chopped
finely grated zest of half a lemon
freshly grated nutmeg , to taste
3 tbsp double cream , to serve

Steps:

  • Melt the butter in a large lidded saucepan, add the onion and garlic and fry gently for 5-6 minutes until softening. Stir in the potato and continue to cook gently for 1 minute. Pour in the stock and simmer for 8-10 minutes until the potato starts to cook. Pour in the milk and bring up to a simmer, then stir in half the spinach and the lemon zest. Cover and simmer for 15 minutes until the spinach has completely wilted down. Allow to cool for about 5 minutes.
  • Pour the soup into a blender (preferably) or food processor, add the remaining spinach (this will keep the soup bright green and fresh tasting) and process until silky smooth - you may need to do this in batches depending on the size of your machine. (The soup may now be frozen for up to 1 month. Defrost in the microwave or overnight in the fridge. The soup may lose some of its vibrancy on freezing, but the flavour won't be impaired.) Return to the pan and reheat. Taste and season with salt, pepper and nutmeg. You may like to dilute the soup with a little extra stock if too thick. Ladle the soup into bowls and swirl in the cream

This spinach soup, with a touch of nutmeg and some cream, is a classic combination, and its flavor justifies that distinction.

1 pound spinach, well washed, thick stems trimmed
3 spring onions or 3 bunches scallions, trimmed and roughly chopped
3 cups chicken or vegetable stock
Small grating of nutmeg
Salt and pepper
1 cup heavy or light cream, half-and-half or milk

Steps:

  • Combine spinach, onions and stock in a saucepan, and turn heat to medium high. Bring to a boil, and lower heat so mixture barely bubbles. Cook, stirring occasionally, until spinach is very tender, about 10 minutes. Turn off heat, add nutmeg and a sprinkling of salt and pepper, and let cool at least a few minutes.
  • Pour soup into a blender, in batches if necessary, and carefully purée. Return to pan, add cream, and, over medium-low heat, reheat gently, stirring occasionally. When soup is hot, adjust seasoning, and serve.

3 cubes chicken bouillon
1 (10 ounce) package frozen chopped spinach

  • In a medium saucepan, combine water, bouillon, and spinach. Bring to a boil, and cook until spinach is tender.
  • Melt butter in a large saucepan over medium heat. Stir in flour, and cook for 2 minutes. Gradually whisk in milk. Season with minced onion, salt, and pepper. Cook, stirring constantly, until thickened. Stir in spinach mixture.

Serve this creamy spinach soup piping hot, with a fresh buttered baguette. Delicious! You can make a vegetarian version by using vegetable stock in place of the chicken stock. Also, you can add a dash of paprika, cayenne, or red pepper flakes if you like more spice. Note: I used a 32 oz. box of organic chicken stock, and we thought it was fine that way (we like ours with plenty of broth). But the three cups of chicken stock that the recipe calls for should work nicely if you like a thick soup, or are going to blend it. I don't have an immersion blender, but feel free to blend this soup if you prefer a smooth version.

1/2 cup onion, finely chopped
16 ounces frozen chopped spinach (or fresh)

1 dash garlic powder

1/4 teaspoon fresh ground black pepper
2 dashes ground nutmeg (to taste)

Steps:

  • In a medium saucepan, melt butter over medium heat.
  • Add the carrots and onion and saute in the butter until softened, about 3-5 minutes.
  • Add the stock and bring to a boil over high heat, then add the spinach.
  • Reduce heat to medium and let simmer for about 8-10 minutes, or until spinach is done.
  • Whisk in the milk or cream and the seasonings and heat through briefly (about five minutes more), stirring occasionally.
  • Remove from heat.
  • Serve piping hot.
