CRANBERRY WASSAIL
This is a traditional spiced holiday drink with an added twist. Enjoy this wonderful wassail for a cold winter day or to serve at Christmas parties.

Steps:
- In a large saucepan or pot, combine cider, cranberry juice, lemon juice, pineapple juice, orange slices, cloves, honey, sugar, and cinnamon sticks. Bring to a boil. Reduce the heat to a simmer; add nutmeg, ginger, and allspice. Simmer for 10 to 15 minutes, stirring occasionally.
- Serve warm and garnish each cup with mint and an orange slice.

- Simmer all ingredients in a large pot for 20 minutes. Serve warm in mugs or let cool completely and serve over ice.
CRANBERRY WASSAIL
I got this recipe from my mother in law. I believe she got it years ago while she and her husband were living in Germany. I think its pretty good and I'm sure you could add alcohol to your taste if you wanted.

Steps:
- In a paper coffee filter place the nutmeg, cinnamon and allspice. Tie top together with string from teabag.
- Steep teabag(s) and spices in 2 1/2 cups water in a sauce pan for about five minutes.
- In a large bowl combine cranberry sauce, 1 1/2 cups boiling water and 3/4 cup sugar. You can do it by hand but an electric mixer saves time and energy. Mix until there are no lumps.
- Add orange juice, realemon juice and another 1 1/2 cups boiling water.
- Remove teabag and spices from sauce pan. Add the tea and cranberry mixtures together. You can use a Dutch oven or a crock pot.
- You can add more water to dilute the mixture to taste. It will keep for about 10 days, though its never lasted that long.

CRANBERRY WASSAIL (NON-ALCOHOLIC)
A nice little Autumn-Winter beverage originally from Ocean Spray. It's certainly a different take on Wassail. This is from an older magazine clipping.

Steps:
- Mix all ingredients, except for the garnishes. (If you are iffy on the sugar, add it last, a little at a time and taste as you go along).
- Heat the mix to boiling in a large saucepan, reduce the heat and allow it to simmer for 10 minutes.
- Strain the wassail to remove the spices.
- Serve very warm in a heat-proof punch bowl and garnish with the orange slices and cloves.

Place orange slices, cinnamon sticks, allspice berries, and cloves in a muslin pouch or directly into the apple cider mixture. Bring apple cider mixture to a boil; reduce heat and simmer until flavors have blended, 15 to 20 minutes. Remove orange slices and spices before serving.

- Tie whole spices in 2 layers of cheesecloth or place in tea ball.
- In large saucepan or Dutch oven, mix cranberry juice cocktail, brown sugar and nutmeg; add spices. Cook over medium heat, stirring occasionally, until sugar is dissolved. Reduce heat. Cover; simmer 10 minutes.
- Stir in wine; cook until thoroughly heated. Remove spices. Serve wassail warm; garnish each glass with orange slice and cinnamon stick.

- Combine juices in a nonreactive pot and stir in 1/2 cup sugar. Taste the mixture to determine if more sweetener is needed and adjust according to your taste. Heat just until steam begins to rise from the mixture.
- Combine the spices, zest, and ginger in a piece of cheesecloth. Gather the edges and tie them together so the spices can't fall out.
- Drop sachet bag into steaming cranberry juice mixture. Press the sachet down into the juices. Continue to heat wassail without boiling for 5-7 minutes. DO NOT BOIL. Cover pot with a lid and allow to steep for 20 minutes. Remove lid and sachet. Serve.
- Wassail can be made in advance and refrigerated. Reheat and serve. Can be made at least 1 week in advance.
