RICE AND BLACK BEAN PILAF

Number Of Ingredients 12

1 cup brown rice, uncooked
2 1/4 cups low-sodium chicken broth
1 tablespoon olive oil
1 small onion, diced (1 cup)
2 cloves garlic, minced
2 teaspoons fresh chopped oregano or 1 teaspoon dried
1 stalk celery, finely diced
1 large carrot, finely diced
1 teaspoon ground cumin
1/2 teaspoon dried chili flakes
1 (15.5 ounce) can low-sodium black beans, drained and rinsed
2 teaspoons finely chopped parsley leaves

Steps:

  • Place rice and chicken broth in a saucepot and bring to a boil. Reduce heat and cook rice, covered, until tender and all the liquid is absorbed, 30 to 35 minutes. Remove from heat, uncover, and fluff with a fork.
  • Heat the oil in a large saute pan over medium-high heat. Add onions and cook until onions are soft and translucent, about 5 minutes. Add garlic, oregano, celery, carrot, cumin and chili flakes and cook, stirring occasionally, until carrots are tender but not mushy, about 6 minutes. Stir in black beans and cook until just warmed through, about 1-2 minutes.
  • Combine onion-black bean mixture and hot rice in a serving bowl and toss to combine. Garnish with parsley.

EASY, ready in 15 minutes, and amps up rice and beans with an abundance of vegetables!! Healthy, Mexican-inspired food that tastes like comfort food and keeps you satisfied for hours!!

2 to 3 tablespoons olive oil
1 large sweet Vidalia onion, diced small
1 large red bell pepper, diced small
1 to 1 1/2 cups shredded carrots
1 to 1/2 cups corn (I used frozen and added it straight from the freezer)
1 cup peas (I used frozen and added it straight from the freezer)
one 15-ounce can black beans, drained and rinsed (I use no-salt added)
one 8-ounce package precooked white rice (another cooked rice may be substituted)
1 to 2 teaspoons cumin
1 teaspoon kosher salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
pinch cayenne pepper, optional and to taste
2 to 3 green onions, sliced into thin rounds
2 to 4 tablespoons fresh cilantro, finely minced
1 tablespoon lime juice

Steps:

  • To a large skillet, add the olive oil, onion, and cook over medium-high heat for about 4 minutes, or until it begins to soften; stir occasionally.
  • Add the bell pepper, carrots, and cook for about 3 to 4 minutes, or until vegetables are crisp-tender; stir occasionally.
  • Add the corn, peas, beans, rice, cumin, salt, pepper, optional cayenne, stir to combine, and cook for about 2 minutes or until warmed through; stir occasionally.
  • Add the green onions, cilantro, lime juice, stir to combine, taste and check for seasoning balance and add additional salt, pepper, cumin, etc. if desired.
  • Serve immediately.

1/4 cup olive oil
2 onions, finely chopped
2 green bell peppers, chopped
3 garlic cloves, chopped
4 bay leaves
1 tablespoon ground cumin
2 cups long-grain white rice
4 (14-ounce) cans black beans, drained and rinsed
2 (14-ounce) cans diced tomatoes with green chiles drained
2 cups water
1/4 cup apple cider vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Heat a large pot over medium-high heat and add the oil. Stir in the onions, peppers, garlic, bay leaves and cumin. Stir and cook for 8 minutes.
  • Stir in the rice, black beans, tomatoes, water, vinegar and salt and pepper. Bring to a boil, cover and reduce heat to low. Cook for about 40 minutes or until the rice is tender. Serve hot.

1 tablespoon salt
1 pound dried black beans, rinsed and checked for stones or impurities
1 tablespoon vegetable oil
1 onion, small dice
3 cups rice
1 (8-ounce) bag frozen okra, defrosted
5 fresh tomatoes, cut into wedges

Steps:

  • Bring 2 quarts water to a boil in a large saucepan. Add salt and beans. Allow beans to re-hydrate by boiling for 15 minutes, skimming off "scum" from surface of water, and allowing it to sit, covered, for 1 hour.
  • Heat oil in a separate pot, and saute onion until it begins to turn translucent. Add 6 cups of water to this pot, and then add rice, allowing to simmer until water is absorbed and rice is soft, about 20 minutes. Stir okra into pot of rice to warm okra. Gently mix rice and okra with beans and tomatoes in a bowl and serve.

1 jalapeno pepper, seeded, chopped

1 1/2 cups low sodium chicken broth

1 teaspoon crushed red pepper flakes
1/2 teaspoon cilantro
1 1/2 teaspoons oregano

2 (3 1/2 cup) cans canned black beans, semi drained

1 (14 1/2 ounce) can diced tomatoes

This spicy recipe tastes so good, it's hard to believe it's healthy. It's convenient as a one-pot meal, but a cooling side dish such as fresh sliced mango or a cucumber salad would be good too. I use red pepper flakes because I don't like the acidity of fresh; instructions are included for fresh red pepper if you prefer. You can also replace the chicken broth with vegetable broth for a vegetarian meal.

1 teaspoon olive oil
1 large onion, chopped finely
3 garlic cloves, minced
3/4 cup uncooked brown rice
2 cups low sodium chicken broth, canned or homemade (or vegetable broth)
2 tomatoes, chopped
4 cups canned black beans, drained and rinsed (kidney beans would also work well)
1/4 teaspoon red pepper flakes (or 1 red pepper, chopped, plus 1/2 teaspoon cayenne pepper)
1 teaspoon ground cumin
1 teaspoon curry powder
2 tablespoons fresh cilantro, chopped (optional)

Steps:

  • Heat oil in a stockpot over medium-high heat.
  • Saute onion and garlic until onion softens, about 4 minutes.
  • Add rice and saute for 2 minutes (this crisps the outside of the rice).
  • Add broth and tomatoes. Bring to a boil, cover and lower the heat. Cook for 40 minutes until rice is done, stirring occasionally.
  • Add beans, spices, and fresh cilantro.
  • To replace the red pepper flakes with fresh: Saute a chopped red pepper with the onion and add a 1/2 teaspoon cayenne pepper with the beans.

This is a typical dish served in Cuba or Puerto Rico, each country has their own method of preparation. You can flavor this dish with meat, but I left it out as I serve it as a side dish with my meats. It is an easy and healthy short cut and takes about 30 minutes to cook.

2 tablespoons olive oil
1/2 cup chopped onion
1/4 cup chopped green pepper
2 cloves of minced garlic
1 (15 ounce) can black beans (undrained)
3/4 cup water
1 teaspoon oregano
1/4 teaspoon sugar
1 package sazon goya (without annato *see note)
1 tablespoon cooking wine or 1 tablespoon cider vinegar
2 cups cooked white rice

Steps:

  • Heat oil in a medium sauce pan, sauté onion,green pepper, and garlic.
  • Sauté until tender@8-10 minutes.
  • Add in remaining ingredients and stir until boiling, reduce heat and simmer until sauce is reduced@ 20 minutes.
  • Serve over white rice.
  • I like to mash a few of the beans with the back of a spoon to flavor the sauce.
  • Note: if you do not have Sazòn Goya an appropriate substitute would be ground cumin, chicken bouillon, and garlic salt to taste.
