1 cup white sugar
2 eggs, beaten
½ teaspoon vanilla extract
1 cup all-purpose flour
1 cup quick cooking oats
1 teaspoon baking soda

1 ½ cups mashed bananas
½ cup chopped raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan and set aside.
  • Cream together the shortening and sugar. Add eggs and vanilla; beat until fluffy.
  • Sift together the flour, oatmeal, baking soda, salt and cinnamon. Add dry ingredients alternately with bananas and milk. Mix until blended.
  • Fold in raisins and pour into prepared pan. Bake for 50 to 60 minutes; remove from oven and cover for 5 minutes.

Steps:

  • Add oats, cinnamon, vanilla, sea salt and half of the banana slices to a medium pot. Add water and stir to combine.
  • Heat over medium-high heat for 8-10 minutes. Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats and the oats don't stick to the pot. You'll know the oatmeal is done when all the liquid is absorbed and the oats are thick and fluffy.
  • While oats are cooking, heat a skillet over medium and add coconut oil and maple syrup. Add remaining banana slices and walnuts to the skillet. Cook banana slices 2 minutes on each side or until they start to get a golden crust. Heat walnuts until just toasted. Remove from heat.
  • Place cooked oats into a bowl and top with caramelized bananas and walnuts. For sweeter oats, drizzle with extra maple syrup.

2 large eggs
2 cups rolled oats
1 tsp baking soda
3 tbsp maple syrup (for sweeter bread)
1/2 cup chocolate chips (for sweeter bread and texture)
1/3 cup chopped walnuts (for texture)

Steps:

  • Preheat oven to 350°F. Line an 8 x 4 inch loaf pan with parchment paper.
  • Add bananas, eggs, oats and baking soda into a blender (in that order). If using maple syrup, also add it in at this time. Blend on high speed until you have a smooth batter. It is okay if you can still see the oats, but they should be ground up enough to look like coarse flour. If adding mix-ins like chocolate chips or chopped nuts, stir them into the batter.
  • Pour batter into prepared pan. Bake for about 35-45 minutes or until toothpick inserted comes out mostly clean and when you gently press on the surface of the bread, it bounces back. Let bread cool in pan before slicing. Bread can be eaten as is or toasted. Uneaten bread should be stored in an airtight container in the fridge or freezer.

1 1/2 cups rolled oats (plus 1 tablespoon for sprinkling on top (do not use instant oatmeal; quick oats will work in a pinch))
1 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon baking powder
½ teaspoon ground cinnamon
1/4 teaspoon kosher salt
1 1/2 cups mashed very ripe bananas (about 4 medium bananas)
2/3 cup honey or pure maple syrup
4 tablespoons unsalted butter (melted)
1/4 cup milk
3 tablespoons nonfat plain Greek yogurt
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Spread 1 1/2 cups oats in a single layer on a rimmed baking sheet. Place in the oven and toast for 8 to 10 minutes, until very light golden and fragrant, stirring once halfway through. Set aside to cool. Line a 9 x 5-inch loaf pan with parchment paper so that two sides overhang like handles. Lightly mist with nonstick spray.
  • In a medium mixing bowl, whisk together the whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir in the toasted oats. Set aside.
  • Mash the banana in the bottom of a large mixing bowl and double check to make sure you have 1 1/2 cups. Whisk in the honey, melted butter, milk, and Greek yogurt.   • Add the dry ingredients to the banana-honey mixture. By hand with a rubber spatula, stir very slowly and gently, stopping as soon as the flour disappears. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle the batter with remaining 1 tablespoon oats for decoration.
  • Bake for 30 minutes, then loosely cover the pan with foil, making sure that the foil shields both ends of the pan (because the bread is sweetened with honey, it will caramelize and become dark at the corners). Continue baking for 35 to 45 additional minutes (65 to 75 minutes total) or until a small, thin knife inserted in the center of the loaf comes out without any wet batter clinging to it. Repeat the test once or twice. An even easier way to tell is to use an instant-read thermometer. When the bread reaches between 200 to 210 degrees F at the center, it's done.
  • Place the pan on a wire rack, and let the bread cool in the pan for 1 hour. Using the parchment paper handles, lift the bread and set it out on the rack to finish cooling completely. Slice and enjoy!

  • In a food processor or blender, add the bananas. Process until smooth. Add eggs, vanilla, and oil. Pulse to combine. Pour the wet mixture into the dry mixture. Fold in until just combined. Fold in the walnuts, if using.

Steps:

  • Preheat the oven to 375° F. Grease an 8X8-inch baking dish, set aside.
  • In a small bowl, toss together the oats, chopped pecans, ground cinnamon, salt, and baking powder.
  • In a stand mixer with the paddle attachment, mash the bananas on medium speed. Add the avocado oil, eggs, milk, vanilla extract, and maple syrup. Mix until smooth and well incorporated. Add the oat mixture and mix until everything is combined.
  • Pour into the prepared dish and bake for 35-40 minutes, or until set and golden brown. If you like your baked oatmeal a little more on the firm side, like me (and as pictured), bake for a little longer.
  • Allow the baked oatmeal to cool before slicing into 6 squares. Store in an airtight container in the refrigerator for up to 5 days, or freeze for up to 3 months.
