HEALTHY PINEAPPLE CARROT CAKE
This Healthy Pineapple Carrot Cake is a lighter version of a classic spring dessert. This moist carrot cake is easy to make, is lower in sugar & has no butter or oil!

Steps:
- Preheat oven to 350 degrees F.
- Line two 6" round cake pans, or one 9x9" square pan with parchment paper and grease. Set aside.
- In a small bowl, mix flours, baking soda, baking powder, salt and cinnamon. Set aside.
- In a large bowl, mix together egg and apple sauce.
- Add vanilla, sugar and crushed pineapple. Stir until combined.
- Pour dry ingredients into wet and gently mix with a spatula until completely combined.
- Stir in carrots until evenly distributed.
- Pour batter into prepared pan(s).
- Bake in preheated oven for 25-35 minutes or until the edges are slightly brown and a toothpick inserted into the center of the cake comes out clean.
- Let sit in pan for 5-10 minutes. Use parchment paper to lift the cake out of the pan and set it on a rack until completely cool.
- While cake is cooling, make the frosting:
- Cream the butter and cream cheese until smooth.
- Add vanilla and salt and beat until combined.
- Add the powdered sugar and beat until creamy. (you may need to add more powdered sugar to reach your desired consistency if you want to pipe it onto a cake).
- Spread on cake!

Recipe came from the inside of the lid of a Kroger brand whipped topping container and all I can say is OMG, YUMMY, YUMMY, YUMMY!!!!!! Not sure of prep and cooking times.

Steps:
- Bake cake according to pkg. directions in a 13x9 pan.
- In a small saucepan combine the undrained pineapple and brown sugar over medium-high heat.
- Boil for 5 minutes, reducing heat if necessary--DO NOT LET SUGAR MIXTURE BURN--stirring constantly.
- Pour this mixture over warm cake and let cool.
- Meanwhile, prepare the instant pudding per pkg.
- directions with the 2 cups of milk; add the softened cream cheese to the prepared pudding and blend well.
- Pour this over top of cooled cake.
- Evenly place banana slices over the top of the cake, if desired.
- Top with Cool Whip, covering bananas completely.
- Sprinkle with pecans then sprinkle with coconut.
- Decorate with maraschino cherries.
- Refrigerate any leftover cake.

- Preheat oven to 190°C (375˚F).
- Melt 30ml (2 Tbsp) butter in a 22.5-cm (9-in) round, flameproof, aluminum pan over medium-low heat (make sure to cover entire pan bottom); sprinkle sugar over top. Carefully place pineapple rings in a single layer in bottom of pan. Increase heat to medium-high and cook until pineapple caramelizes, flipping once, about 2 minutes per side; remove pan from heat.
- Melt remaining 30ml (2 Tbsp) butter on stove top or in microwave. In a medium-size mixing bowl, beat egg with remaining melted butter. Add cake mix and reserved pineapple juice; combine well.
- Pour batter over pineapple; bake until a toothpick inserted in centre of cake comes out clean, about 30 to 35 minutes. Allow cake to cool for about 15 to 20 minutes; when still warm, loosen sides with a knife and invert cake onto a serving plate. Slice into 10 pieces and serve. Yields 1 slice per serving.

PINEAPPLE RIGHT SIDE UP SNACK CAKE
This cake is easier to make the the traditional recipe, but has that same delicious taste. I usually have all the ingredients on hand and can make this when the kids come over unexpectedly.

- Drain pineapple, reserving 1/3 cup juice.
- Set both aside.
- Combine flour, baking powder, salt and sugar.
- Mix the reserved juice, milk, melted butter, eggs and vanilla, stirring well.
- Add the wet to the dry ingredients, stirring until just moistened.
- Spoon into a greased 9" x 9" baking pan.
- Top with the pineapple and the brown sugar.
- Bake at 350 degrees for 25-30 minutes and then cool in pan on a wire rack for 10 minutes.

- Preheat the oven to 350°F Lightly grease a 9 inch square baking pan.
- In a large mixing bowl combine together the flour with the powder and the 1/3 cup sugar.
- Pour in the blender the egg whites with the applesauce, the vanilla extract and the milk. Blend on high speed until it's white and creamy. Stir in the flour mixture. Stir well with a wooden spoon. Pour batter into the greased baking pan. Cover with the dry crushed pineapple. Sprinkle very well with the remaining 1/4 cup brown sugar. Place in the oven and bake about 30-35 minutes. Remove and cool about 10 minutes. Cut into squares and serve.
