AWESOME AND HEALTHY MEATLOAF
I came up with this recipe when I was unable to find exactly what I was looking for in my cookbooks. I hope you enjoy it as much as we did!

Steps:
- Spray a skillet with cooking spray.
- Add the first nine ingredients and saute for 10 minutes on medium heat. Allow to cool to room temperature (put in the frig to speed things up).
- In a large bowl mix ground beef, egg, salt, pepper, 1/2 of the tomato sauce, and the vegetable mixture.
- Pat into 7 small meatloaves and place on foil lined baking sheet that has been sprayed with cooking spray.
- Top each loaf with the remaining tomato sauce.
- Bake at 350 for 30 minutes.
- Enjoy!

- Preheat oven to 350ºF. Spray a 9x5" loaf pan with cooking spray.
- Mix together ground beef, onion, eggs, pepper, oats, Worcestershire sauce, garlic salt, onion salt and tomato sauce in a large bowl, using your hands. Do not overmix.
- In a small bowl, combine the ketchup, sugar and mustard. Spread on top of meatloaf and place in oven. Bake for 1 hour and 15-30 minutes, or until meatloaf is cooked through. Let cool for a few minutes and then slice and serve. Enjoy!

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Heat olive oil in a skillet over medium heat; cook and stir green bell pepper and onion in the hot oil until onion is transparent and bell pepper is softened, 5 to 10 minutes. Add garlic and cook until fragrant, 1 to 2 minutes.
- Combine ground beef, bread crumbs, eggs, carrot, zucchini, salt, pepper, and bell pepper mixture in a large bowl; mix well using your hands. Press meat mixture into the prepared loaf pan.
- Bake in the preheated oven until no longer pink in the center, 35 to 40 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Spread ketchup on the top of the meatloaf and continue baking until bubbling, about 5 minutes more.

- Heat oven to 350°F. Heat olive oil in a sauté pan over medium high heat. Add the zucchini, onions, and garlic. Sprinkle with salt and pepper. Sauté for about 5 minutes or until onions are softened. Set the mixture aside to cool.
- In a bowl combine all the meatloaf ingredients including the cooled vegetable mixture with a good sprinkle of salt and pepper.
- Mold into a loaf in a 9x13 sprayed or greased glass, baking dish.
- In a small bowl, whisk together the ketchup, Worcestershire sauce and brown sugar. Brush the mixture all over the loaf.
- Bake the meatloaf in the center of the oven uncovered for 50 to 60 minutes. You'll know it is done when an instant thermometer inserted in the center of the loaf reaches 165°F.

- In a large nonstick skillet, saute the onion, red pepper and garlic in oil until tender. Transfer to a large bowl. - Preheat the oven to 350 degrees.
- In a large cast iron skillet add the olive oil on high heat.
- Add in the onion and garlic to the pan and start cooking while finishing preparing the zucchini.
- Add the zucchini and bell pepper to some paper towels folded in half, close the edges together to form a pouch and squeeze out as much liquid from them as you can.
- Add the zucchini to the pan and stir.
- Continue cooking for 8-10 minutes until they're tender and reduced in size.
- In a large bowl add the beef, bread crumbs, milk, Worcestershire sauce, egg, salt, black pepper and the cooked vegetables.
- Mix the ingredients well then add them to a loaf pan.
- Shake some paprika over the meatloaf.
- Cook for 60-65 minutes or until cooked through to 160 degrees.
- Let stand for at least 10 minutes before slicing and serving.

- Prepare a grill for medium-high heat.
- Stir together the milk, egg, breadcrumbs, Worcestershire sauce and 1 tablespoon of the barbecue sauce in a medium bowl.
- Finely chop the spinach, scallion and garlic together on a cutting board. Transfer to the bowl, along with the ground beef and turkey, 1 teaspoon salt and several grinds of black pepper. Gently combine the mixture well with your hands.
- Coat a 20-inch piece of heavy duty aluminum foil all over with cooking spray. Pile the meatloaf mixture onto the foil just off the center and form into a 9-by-5-inch loaf that's about 1-inch thick. Fold the long half of the foil over the meatloaf, lining up the edges, and crimp and fold tightly to make a sealed packet.
- Put the packet on the grill, close the grill lid and cook for 10 minutes. Turn the packet over using 2 large metal spatulas; cover and grill 10 minutes more. Remove and let rest for 5 minutes. Carefully open the packet (hot steam will escape). The meatloaf should have some grill marks and an internal temperature of 165°F. Brush the top and sides of the loaf with the remaining 3 tablespoons barbecue sauce. Cut into slices and serve.
