4 medium very ripe bananas (1 1/2 cups mashed)
2 eggs (large)
1/2 cup applesauce or Greek yogurt
1/3 cup maple syrup or honey
2 tbsp avocado or coconut oil (melted)
1 tsp pure vanilla extract
2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 1/4 cups whole wheat flour or spelt flour

Steps:

  • Preheat oven to 350 degrees F. Line 9 x 5 loaf pan with unbleached parchment paper. In a large bowl, mash bananas with a fork or a masher.
  • Add eggs, applesauce, maple syrup, oil, vanilla, baking powder, baking soda and salt; whisk to combine (masher works fine).
  • Add flour and stir gently just enough to mix.
  • Pour batter in prepared loaf pan and bake for 50 - 60 minutes or until a toothpick inserted in the middle comes out clean.
  • Remove from the oven and let cool for 15 minutes. Then transfer to a cooling rack to cool off completely. Cut into 10 slices and enjoy.

1/3 cup (75 grams) melted coconut oil or extra-virgin olive oil or high quality vegetable oil*
1/2 cup honey (168 grams) or maple syrup (155 grams)
2 eggs
1 cup (225 grams) mashed ripe bananas (about 2 1/2 medium or 2 large bananas)
1/4 cup (56 grams) milk of choice or water
1 teaspoon baking soda (NOT baking powder; they aren't the same!)
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground cinnamon, plus more to swirl on top
1 3/4 cups (220 grams) white whole wheat flour or regular whole wheat flour**
Totally optional: 1/2 cup mix-ins like chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit, fresh banana slices...

Steps:

  • Preheat oven to 325 degrees Fahrenheit (165 degrees Celsius) and grease a 9×5-inch loaf pan.
  • In a large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk. (If your coconut oil solidifies on contact with cold ingredients, simply let the bowl rest in a warm place for a few minutes, like on top of your stove, or warm it for about 10 seconds in the microwave.)
  • Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined. Some lumps are ok! If you're adding any additional mix-ins, gently fold them in now.
  • Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. If you'd like a pretty swirled effect, run the tip of a knife across the batter in a zig-zag pattern.
  • Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean (typically, if I haven't added any mix-ins, my bread is done at 55 minutes; if I have added mix-ins, it needs closer to 60 minutes). Let the bread cool in the loaf pan for at least 10 minutes. You may need to run a butter knife around the edges to loosen the bread from the pan. Carefully transfer the loaf to a wire rack to cool before slicing.

This is an adaptation of Sour Cream Banana Bread which I posted, then found out it was a duplicate. The difference is you use yogurt instead of sour cream. You may use plain, or be adventurous and try vanilla, lemon, or your choice of flavors! Or go ahead and use sour cream if you wish. I even used part mayonnaise once in a pinch. For the nuts, use whatever nuts you wish. So here is the recipe,I hope you enjoy! I used to make this for the Colonial Pines Inn in Highlands, NC. It was always well received, and the customers could buy a loaf to take home, which they frequently did!

1 cup sugar
2 eggs
1/2 cup margarine (you may substitute half applesauce to make it healthier!) or 1/2 cup butter (you may substitute half applesauce to make it healthier!)
1 1/2 teaspoons vanilla
1/2 cup plain yogurt or 1/2 cup sour cream
3/4 cup white flour (or try oat flour)
3/4 cup whole wheat flour (or use all white flour if you wish)
1 tablespoon wheat germ (optional)
1 tablespoon wheat bran or 1 tablespoon oat bran
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed ripe banana (about 2-3)
1/2 cup chopped walnuts (optional)
1/2 cup chocolate chips (optional)

Steps:

  • Grease one 5x9-inch loaf pan, or use 3 mini loaf pans. Some people even double the recipe and bake it in a bundt pan. Spray with cooking spray to coat pans.
  • Cream margarine, sugar, eggs and vanilla.
  • Add dry ingredients, then mashed bananas, nuts, and yogurt or sour cream. Add chocolate chips, if using. Mix well.
  • Bake at 350°F for 1 hour. If using mini loaf pans, cook for about 45 minutes. Enjoy!

low-fat spread, for the tin, plus extra to serve
140g wholemeal flour
100g self-raising flour
1 tsp bicarbonate of soda
1 tsp baking powder
300g mashed banana from overripe black bananas
4 tbsp agave syrup
3 large eggs, beaten with a fork
150ml pot low-fat natural yogurt
25g chopped pecan or walnuts (optional)

Steps:

  • Heat oven to 160C/140C fan/gas 3. Grease and line a 2lb loaf tin with baking parchment (allow it to come 2cm above top of tin). Mix the flours, bicarb, baking powder and a pinch of salt in a large bowl.
  • Mix the bananas, syrup, eggs and yogurt. Quickly stir into dry ingredients, then gently scrape into the tin and scatter with nuts, if using. Bake for 1 hr 10 mins-1 hr 15 mins or until a skewer comes out clean.
  • Cool in tin on a wire rack. Eat warm or at room temperature, with low-fat spread.

1/4 cup packed dark brown sugar
1/4 cup maple syrup
1 teaspoon pure vanilla extract
2 large egg whites, at room temperature
1 1/2 cups mashed very ripe banana (about 3 large bananas)
1/2 cup chopped walnuts, optional

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a 12-cup muffin pan with paper liners. Whisk together the whole-wheat flour, all-purpose flour, baking powder, cinnamon, baking soda and salt in a medium bowl.
  • Whisk together the coconut oil, brown sugar, maple syrup, vanilla and egg whites in a separate medium bowl until well combined. Stir in the mashed banana. Add the dry ingredients to the wet and stir until combined. Stir in the chopped walnuts if using.
  • Fill the lined muffin cups about three-quarters of the way with the batter (a generous 1/4 cup in each; see Cook's Note). Bake on the center rack until a cake tester or toothpick inserted in the center of a muffin comes out clean, 20 to 25 minutes. This Healthier Banana Bread is a guilt free way to use up those ripe bananas! Easy to make and just as tasty as the normal version, this will become a new favourite!

1 1/2 cups (390g) ripe banana, (this was 3 large bananas for me)
1/2 cup (150ml) maple syrup, (you can also use honey)
1/2 cup (100g) coconut oil, (melted and slightly cooled)
1 tsp vanilla extract
2 large eggs
1/4 cup (90g) low fat/full fat natural or Greek yoghurt, (totally up to you, I used low fat natural)
2 1/2 cups (350g) whole wheat flour
1 tsp bicarbonate of soda/baking soda
1 tsp ground cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 160C/325F and spray a 2lb loaf tin with cooking spray. Place a strip of grease proof paper across the pan with enough overhang for you to lift the banana bread out.
  • Break the bananas into a large bowl and then mash with a fork until it's as smooth as you can get it. It's not the end of the world if there are a few lumps.
  • Add in the maple syrup, coconut oil, vanilla extract, eggs and natural yoghurt and whisk until everything is well combined and smooth.
  • Add in the flour, bicarbonate of soda, cinnamon and salt and whisk just until the mixture is combined and there are no lumps of flour. Don't be tempted to over mix or beat the mixture, it will turn rubbery.
  • Tip the mixture into your prepared pan and smooth into an even layer with a spatula/wooden spoon.
  • Place in the oven for 50-60 minutes, until risen, golden and an inserted skewer into the centre comes out clean.
  • Leave to cool for at least 30 minutes before you try and dig in! It tastes great warm from the oven or at room temperature. It would be best to leave it to cool entirely in the pan, before transferring to a cutting board to slice, but I could not resist having a slice straight from the oven!
  • Healthier Banana Bread will keep in an airtight container, at room temperature, for a week. You can serve at room temperature, or reheat a slice in the microwave for 30-45 seconds.

2 cups whole wheat flour
2 teaspoons pumpkin pie spice (see recipe notes*)
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup avocado oil (or other neutral oil, see recipe notes*)
1/3 cup milk
1/3 cup pure maple syrup (or honey or agave)
2 eggs
2 teaspoons vanilla extract
1 cup mashed bananas, about 2 medium bananas
1 cup pumpkin puree (not pumpkin pie mix!)
2/3 cup chocolate chips or nuts (optional)

Steps:

  • Preheat oven to 350 F. Grease and flour (or spray with non-stick spray) a 9x5" loaf pan (see notes for muffins*). Set aside.
  • In a medium bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda and salt. Set aside.
  • In a separate bowl of your stand mixer fitted with paddle attachment or with a handheld mixer (or by hand with a whisk), mix together the oil, milk, maple syrup, eggs and vanilla. Beat on medium-high speed (or whisk) until combined. Add in mashed bananas and pumpkin puree, beat until combined.
  • Fold dry ingredients into wet ingredients, mixing just until combined. Fold in chocolate chips or nuts if using.
  • Pour batter into prepared loaf pan and bake for 55-60 minutes or until toothpick inserted comes out clean. (I like to start checking at the 50 minute mark every 5 minutes until done).
  • Remove from oven and place on cooling rack. Let cool completely before removing from pan.
  • Leftovers can be wrapped and stored room temperature for up to 2 days or in the refrigerator for up to 1 week (see notes for freezing*).

  • Add the wet ingredients to the dry, and gently stir to combine. Empty the batter into the prepared loaf pan, and bake for 40 minutes. (See notes below for decorative options)! After 40 minutes, check the loaf by inserting a toothpick into the middle of the bread. If the toothpick comes out clean, the loaf is done. If it comes out with batter, bake it for an additional 5 minutes before checking again. Remove the loaf from the oven, and allow it to cool for 10 minutes before removing the loaf to a wire rack to cool completely. Slice and serve!
