CHEF JOHN'S LOCO MOCO
This amazing Hawaiian comfort food classic is made by topping rice with a fried burger, which is then smothered with a rich, brown gravy and finished with a fried egg. Seriously, how did it take until 1949 for someone to think of this combination? We all get hangry sometimes, so whether you're a broke student or an older professional who just wishes you were, this cheap, filling bowl of goodness is the perfect solution. Garnish with green onions.

Steps:
- Season patties with salt, pepper, and cayenne.
- Whisk beef stock, soy sauce, Worcestershire sauce, sesame oil, ketchup, sugar, and cornstarch together in a bowl.
- Melt butter in a skillet over medium-high heat. Cook patty in the hot skillet until a browned crust forms on the bottom, about 5 minutes. Flip; toss in green onions and cook the other side until both beef and onions are browned, 4 to 5 minutes more. Remove patty and most of the green onions to a plate.
- Pour beef stock mixture into the skillet. Stir, scraping up browned bits from the bottom, until thickened, about 2 minutes. Reduce heat to low and reserve gravy until needed.
- Melt remaining butter in another skillet over medium heat. Add eggs to the skillet and fry side-by-side until whites are set and yolks are still runny.
- Divide rice between 2 serving bowls. Place patties over the rice, spoon gravy on top, and add the fried eggs.

THE ANGRY HAWAIIAN BURGER
Steps:
- Make the angry Hawaiian sauce: Combine pickled jalapenos, pineapple and barbecue sauce in a bowl.
- Place bacon in large pot and cover with water. Boil until most of the fat is rendered, about 45 minutes. Drain bacon. Preheat a grill or pan, then form bacon into 4 patties and sear until crispy.
- Divide beef into 4 patties. Sprinkle beef patties with seasoned salt and cook over medium-high heat until desired doneness.
- Meanwhile, toast buns to desired doneness.
- Place one tomato slice on each bun bottom, then top with one portion shredded lettuce. Top beef patties and bacon patties with slices of provolone, then top each cheesed beef patty with a cheesed bacon patty.
- Top patties with angry Hawaiian sauce and bun tops, then finish by closing with bun bottoms.
HAWAIIAN BURGERS

- For the sauce: Stir together the mayo, teriyaki sauce, honey and cayenne in a small bowl. Set aside.
- For the burgers: Set a grill pan over medium-high heat (you can also use a skillet).
- Grill the pineapple and bell pepper rings until they have great grill marks on both sides (or brown them in the hot skillet), about 5 minutes.
- Season the ground beef and form it into 4 equal-size patties. Cook them over medium heat on the grill for 4 to 5 minutes on the first side, then flip them over and add a splash of teriyaki sauce on top of each one. Place a slice of cheese on each patty and let it melt while the burger cooks through, about 4 minutes longer.
- Butter a griddle or separate skillet set over medium heat. Place the rolls cut-side down and cook until brown, about a minute.
- Spoon a little bit of the sauce on both sides of the rolls and allow it to soak into the bread. Place the patties on the bottom buns and top each with 2 pineapple slices and some red onion slices, bell pepper rings and lettuce. Top with the top buns and smush it all together. Serve with extra sauce for dipping.
HAWAIIAN BURGER
Every bite of these burgers is an explosion of sweet and savory, thanks to the juicy pineapple topping and umami-packed mayo spread (plus bacon!).

- Preheat the oven to 200 degrees F.
- Mix the mayonnaise and 1/4 cup of the teriyaki cooking sauce in a small bowl until combined. Slice four 1/4-inch-thick rounds from the pineapple (reserve the remaining pineapple for another use). Form the beef into 4 patties and sprinkle with salt and pepper.
- Heat a grill pan over medium-high heat, alternatively prepare an outdoor grill for medium-high direct and indirect heat. Add the bacon and pineapple in a single layer in a grill pan; if using an outdoor grill place the pineapple over direct heat and the bacon over indirect heat and cover. Cook until golden on one side, about 5 minutes for the pineapple and 7 minutes for the bacon. Flip both with tongs and continue cooking until the bacon is crisp and the pineapple is golden and soft, about 6 minutes more for each. Transfer to a baking sheet along with the rolls and keep warm in the oven.
- Add the burgers to the grill pan or outdoor grill over direct heat and cook until well browned on one side, about 4 minutes. Flip the burgers and cook for 2 minutes. Brush the burgers with half the remaining teriyaki cooking sauce, top with the mozzarella and brush with more sauce. Cover the burgers with a heatproof metal bowl or grill lid and cook until the cheese is melted and the burger is cooked to desired doneness, 1 to 2 minutes for medium.
- Put a burger on the bottom half of each roll and top with 2 slices bacon and 1 pineapple round. Divide the teriyaki mayonnaise among the burgers, spooning it into the hole of each pineapple round. Top with the roll tops.

Meet the Cook: These burgers were a favorite when I was growing up. I now use them as a way to "fancy up" a barbecue without a lot of extra preparation. - In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Shape into eight 3/4-in.-thick patties. , Grill, uncovered, over medium-hot heat for 3 minutes on each side. Brush with soy sauce. This has oriental flavoring and a pineapple slice, moist and juicy and the flavors are addictive. Now I use turkey burger. Enjoy!

Steps:
- Open canned pineapple, drain juice and reserve amounts for recipe.
- In large mixing bowl, add egg, (oil if using turkey burger only) brown sugar, ginger, soy sauce, 1 tblsp pineapple juice. Mix well. Set aside.
- For dressing:.
- In small bowl mix mayonnaise, celery seed, pineapple juice, ketchup.Taste. You may add a little more Ketchup by tsp if you prefer. Refrigerate.
- Add ground meat to egg, brown sugar and spice mixture. Mix well. I use my fingers.
- Form into 8 patties.
- Put on the grill and cook about 6 minutes, then flip until done.
- You may grill the pineapple rings on the grill for about 2 minutes.
- Brush margarine on each side of buns.
- Put on the grill the last two or three minutes to toast.
- To Serve: Place one slice cheese on bun, then cooked pattie, add a spoonful of sauce on top, then romaine lettuce leaf, then one pineapple ring, top with other half of bun.
- Serve with Taro chips, Hawaiian potato chips, pastachio nuts, and fresh coconut slices if you have. Dip the coconut slices in a mixture of vanilla and evaporated milk and Splenda before serving.
- Note: I have not used fresh pineapple because there is intense natural acid. Some of the family cannot tolerate. You could substitute fresh pineapple, make sure you use some of the natural juice.
