Steps:
- In a shallow bowl, combine the parsley, thyme, rosemary and oregano. Spread mustard over cheese blocks; roll in herbs to coat. , On a lightly floured surface, roll pastry to about 13 in. long (or long enough to fit cheese blocks end to end). Place cheese on pastry and fold pastry around cheese; trim excess dough. Pinch edges to seal. Place seam side down on an ungreased baking sheet. , Brush pastry with egg. With floured cutters, cut decorative shapes from dough scraps if desired; arrange over the top and brush with egg. Sprinkle with salt if desired. Bake at 375° for 20-25 minutes or until puffed and golden brown. Serve warm with crackers and fruit.

- Gather the ingredients.
- Position 2 racks in the upper and lower third of the oven. Preheat the oven to 375 F. Line 2 baking sheets with parchment or silicone baking mats. Set aside.
- In a large saucepan, bring water, butter, and salt to a rolling boil. Once the butter has melted, add the flour.
- Stir the mixture until a sticky dough ball forms and begins pulling away from the sides of the pan, about 1 minute.
- Reduce heat to low heat and cook, stirring continually, until the mixture begins to dry out a bit, 1 to 1 1/2 minutes. Remove from heat and set aside for 5 minutes.
- Beat the eggs into the flour mixture, one at a time, until fully incorporated before adding the next.
- Mix in the cheeses, nutmeg, and pepper.
- Place heaping teaspoonfuls of dough onto the prepared baking sheets leaving one inch of room between each. Alternatively, use a pastry bag and a round tip to pipe the dough, or just snip the bottom of the bag and pipe.
- Bake, rotating the sheets halfway through, until the gougères are golden brown and puffed, 25 to 30 minutes. Serve immediately.

HAVARTI CHEESE PASTRY
My mom used to make this as a special treat when we were little. It is sort of like the Brie pastry but she never cared for Brie so she swapped it. It's so easy and pleases everyone. Very rich and creamy it is perfect for an appetizer or party. You can also buy havarti cheese with various spices and herbs mixed in to switch it up a little bit. The havarti with dill is divine. If the cheese leaks out, which it occasionally will even if you think you sealed it well, that is okay. Just scoop it off the pan and pile it on top. It is not as pretty but just as tasty ;) Prep time is to let pastry thaw. Enjoy!

- Preheat oven to 400.
- Lay the puff pastry on the counter or any flat surface at room temperature to thaw for about 30 minutes, or put it in the fridge overnight so it will be thaw when you are ready.
- Carefully unfold the sheet and smooth the creases. Make sure there are no holes in the dough.
- Place the whole block of cheese in the middle and very gently fold the pastry around it like a present, making sure to seal it well. Wet your fingers and run them across the seams to make the dough adhere to itself and to ensure no cheese leaks out.
- Flip it over on a greased baking sheet seam side down. Whisk together the egg and water and brush lightly over the surface. Sprinkle with paprika to make it pretty.
- Bake for 20-25 minutes or until top is golden brown.
- Serve on your favorite cracker, I prefer Ritz.
- *If desired, spread the mustard on the pastry sheet before placing the cheese on it and folding for a little extra flavor.*.

Guests always think I spent a great deal of time on this appetizer and have a hard time guessing the simple ingredients. Havarti is a nice change from the more common Brie.

- On a large piece of waxed paper, unroll crescent dough. Starting with a short side, fold a third of the dough to the center; repeat with the opposite side. I love to serve this appetizer with crackers and apple slices. Goes great with white wine. A recipe everyone will ask for. The sweetness of the honey makes this amazing! Super easy to make.

- 1. Defrost puff pastry sheet. Wrap havarti cheese in puff pastry sheet, place seam down on baking sheet lined with parchment paper.
- 2. Bake at 325 for 25-30 minutes or until puff pastry is golden brown. Remove and place on serving platter.
- 3. Drizzle honey, coating entire puff pastry. Sprinkle slivered almonds on top.
- 4. To serve I place crackers and apple slices around the puff pastry. Put knife along the side for cutting off wedges or slices of baked havarti.

Steps:
- Preheat oven to 300°F Using small cookie cutter, cut out four rounds from each slice of bread.
- Place on cookie sheet and bake in oven for 10-15 minutes or until bread is crisp and dry, turning bread rounds over once halfway through baking time.
- Cool on wire rack.
- Heat butter and olive oil in heavy skillet and cook garlic and shrimp just until shrimp curl and turn pink.
- Remove from heat and set aside for 10-15 minutes to cool slightly.
- In large bowl, combine cheese, lemon zest, dill, mayonnaise, and pepper.
- Finely chop shrimp and add to cheese mixture.
- Top bread rounds with shrimp mixture, mounding and smoothing the shrimp.
- Freeze in single layer on baking sheet, then store in freezer container in single layer.
- When ready to eat, bake puffs, frozen, in preheated 400F oven for 10-13 minutes until golden brown and bubbly.
- Serve immediately.
- You can also bake the puffs without freezing them, in a 400F oven for 8-9 minutes.

- In a medium saucepan, combine 2/3 cup (150ml) of water, butter, spices and salt and bring the mixture to a boil over medium high heat. Once the butter is melted and mixture is boiling, add the flour all at once, reduce the heat to medium. Using a wooden spoon, continuously stir the mixture. The dough will start to form into a ball. Keep mixing for another 3 minutes until light crust forms on the bottom of the pan.
- Transfer the dough into a mixing bowl with paddle attachment and mix it for a few minutes on low speed until the mixture is at room temperature. (Alternatively, you can use a wooden spoon, it’ll just take a bit longer. Mixer is not required here!) Add the eggs one at a time, beating well after each addition. This will help to get egg absorbed into the dough quicker. The dough should not be too runny, yet not too thick. Stir in the grated cheese.
- Transfer the batter into a pastry bag and pipe into 1-inch rounds couple inches apart. Level peaked tops with wet fingertip, if needed.

- Tilsit. Tilsit is the closest to Havarti in terms of flavor and appearance, and it’s fairly easy to find, especially in European markets. If you’re not from Europe you may still find European markets in larger cities, and might even find Tilsit as an import cheese.
- Saint Paulin. Saint Paulin is a lesser known cheese, and comes from France. This cheese is very similar to Havarti in that it’s a buttery semi-soft cheese that cuts well and melts very well, much like Havarti.
- Esrom. Another Danish cheese, Esrom will also work great as a substitute for Havarti. This cheese is also buttery, has a springy texture and melts very well.
- Monterey Jack. You can use Jack in place of Havarti easily, but keep in mind that the texture is different. Jack is a it harder than Havarti, denser, but melts very well and has a great, mild flavor.
- Young Cheddar. You can substitute Havarti with Cheddar as they are close in flavor and texture. Be sure to get young Cheddar, as the aged one will have a very strong flavor.
- Emmental cheese. You can also replace Havarti cheese with Emmental. It also has a firm texture and mild flavors of butter with fruity notes to it. It is perfect for serving with sharp drinks of your choice.
- Colby. Colby is fairly similar to Cheddar, young Cheddar to be specific. So it will work just as well to replace Havarti in your recipe. It’s a bit harder than Havarti and definitely milder so it will not overpower anything.
- Edam. Edam cheese is very similar to Havarti, except for being a Dutch cheese. Even so, it’s mild, buttery, vaguely sweet and nutty.
- Gouda. Yet another Dutch cheese, Gouda is perhaps the most common cheese you can find on the market. This makes it easy to use in place of Havarti, since it’s really mild.
