8 eggs
1 cup heavy whipping cream
1 teaspoon salt, divided

2 cups frozen hash browns
1 cup shredded sharp Cheddar cheese
½ cup cooked bacon, chopped
¼ cup chopped green onions

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch pie pan with butter.
  • Whisk eggs together in a large bowl. Add heavy cream; whisk until well-blended. Season with 1/2 teaspoon salt and 1/2 teaspoon black pepper.
  • Combine hash browns, Cheddar cheese, bacon, and green onions in another bowl. Season with remaining 1/2 teaspoon salt and 1/2 teaspoon black pepper.
  • Pour the egg mixture into the greased pie pan. Add the hash browns mixture gently, making sure that some of the hash browns stay above the egg mixture. Place pie pan on a baking sheet.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes. Let quiche stand until set, about 10 minutes, before slicing into wedges.

1 1/2 sticks (12 tablespoons) unsalted butter, melted, plus more for greasing the pan
32 ounces frozen, shredded hash browns, thawed, drained if needed
7 large eggs
1 1/2 cups half-and-half
1 1/2 cups shredded mixed Gruyere and Swiss cheese
1/3 cup chopped fresh chives
4 ounces sliced deli ham, diced
Kosher salt and freshly ground black pepper

Steps:

  • Position an oven rack in the bottom third of the oven and preheat it to 425 degrees F. Generously grease a 9-inch springform pan with butter.
  • Toss the hash browns with the butter in a large bowl until well coated. Evenly press the hash browns into the bottom and up the sides of the prepared pan. Bake until deep golden brown and crispy, 40 to 45 minutes. Reduce the oven temperature to 350 degrees F.
  • Meanwhile, whisk the eggs and half-and-half in a large bowl until combined. Fold in the cheese, chives, ham, 1 teaspoon salt and a few grinds of black pepper. Pour the egg mixture into the potato crust and bake until the eggs are set, 40 to 45 minutes more.
  • Let cool in the pan for 10 minutes. Run a knife around the edge of the pan, unmold the quiche and transfer to a serving plate or cutting board.

3 cups (about 10 ounces) frozen hash browns, thawed
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/2 small zucchini, diced (about 1/2 cup)
1/2 small red bell pepper, diced (about 1/2 cup)
1 ounce (about 1 slice) ham, chopped
1/3 cup shredded sharp Cheddar
1/2 cup heavy cream
1 tablespoon finely chopped fresh chives
Large pinch cayenne
3 large eggs

Steps:

  • Preheat the oven to 450 degrees F.
  • Pat the hash browns dry and add to a large bowl. Melt 3 tablespoons of the butter in a medium skillet and add to the hash browns with salt and pepper and mix well. Press the hash browns on the bottom and up the sides of a 9-inch pie pan, pushing them gently into the corners. Bake until golden brown, 20 to 25 minutes. Remove the crust from the oven and reduce the oven temperature to 375 degrees F.
  • Meanwhile, melt the remaining tablespoon butter in the same skillet over medium-high heat. Add the zucchini and bell pepper and cook, stirring, occasionally, until slightly softened, about 3 minutes.
  • Spoon the vegetables into the crust and sprinkle with the ham and Cheddar.
  • Whisk the cream, chives, cayenne and eggs together in a bowl with 1/4 teaspoon salt. Pour the mixture into the crust. Bake the quiche until golden brown and just set in the center, 20 to 25 minutes.
  • Cool at least 10 minutes before serving. Serve warm or at room temperature.

Ready, Set, Cook! Special Edition Contest Entry: This is a recipe I created. It is a vegetarian style quiche made with tofu and nutritional yeast flakes, onion, garlic, spinach, and a few spices. I also used a bit of coconut milk which, when cutting out cheese in a recipe, adds a bit of creaminess. Although coconut milk is high in saturated fat, it is also full of fiber and has been found to be very healthy. I also used Simply Potatoes hash browns for crust. It is really healthy without the eggs and cholesterol.

10 ounces Simply Potatoes® Shredded Hash Browns (half of the 20 oz bag)
3 tablespoons olive oil
1 small onion, finely chopped
3 large garlic cloves, minced
1 lb tofu, drained and mashed
2 tablespoons fresh cilantro
1 cup fresh Baby Spinach, chopped
1/4 teaspoon ground nutmeg
1/4 cup coconut milk
5 tablespoons nutritional yeast flakes
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons lemons or 2 tablespoons lime juice
1 teaspoon potato starch or 1 teaspoon cornstarch
4 slices tomatoes

Steps:

  • Put oven rack in middle position. Preheat the oven to 375 degrees F.
  • Brown half a bag of Simply Potatoes hash browns in a skillet as directed on package using a tablespoon of olive oil. When brown, mix in two pinches of salt (optional if on low-sodium diet) and a pinch of pepper. Mix together well and press the hash browns into a pie pan as a crust.
  • Meanwhile, in a skillet, heat 2 tablespoons olive oil over medium heat.
  • Saute the onion until translucent and slightly golden.
  • Add the garlic and cook until fragrant, about 30 seconds.
  • Mash up the tofu by hand with a fork or in a food processor and add to the onion/garlic along with the salt, pepper, cilantro, lemon juice, nutmeg, coconut milk, nutritional flakes and spinach.

Steps:

  • Use your hands to squeeze the thawed potatoes to remove as much liquid as possible. Place in a medium mixing bowl. Add the cheddar, salt and pepper and toss to combine.
  • Grease a 9-inch springform pan with butter and evenly press the hash browns mixture into the bottom and sides of the pan, filling in all the gaps to prevent leakage.
  • Transfer the pan to the freezer for at least 1 hour or until the crust is firm.
  • Preheat the oven to 425°F. Transfer the frozen crust to the center rack of the oven and par-bake for 17 minutes. Remove from the oven and set aside.
  • In a large skillet over medium heat, cook the bacon until crispy. Drain on paper towels then crumble and layer bacon and cheese in par-baked crust.
  • Use a whisk to beat the eggs with the half-and-half and season with salt and pepper. Pour over the bacon and cheese. Sprinkle the green onion on top and place into the oven. Lower the oven temperature to 375°F and bake the quiche just until the eggs set, about 25 to 30 minutes. Allow to cool slightly before unlocking the spring form pan. Cut into slices for serving.

Not many quiches are gluten free but this one is! This ham and cheddar quiche has a hash brown crust. It also has green onions to boost its flavor. Enjoy this quiche for brunch with a side of fresh fruit and mimosas.

3 cups thawed and drained frozen shredded hash browns
4 tablespoons melted butter
3 large beaten eggs
1 cup half and half
3/4 cup cooked diced ham
1/2 cup diced green onions
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 450 °F.
  • Gently press the drained hash browns between paper towels to dry them as best as possible. In a 9-inch pie plate, toss the hash browns with the melted butter into the plate. Press them into the bottom and up the sides to form a crust. Bake for 20 to 25 minutes until golden brown and starting to crisp.
  • Meanwhile, in a large mixing bowl, combine the remaining ingredients. When the hash brown crust is ready pour the egg mixture over it and return to the oven.
  • Lower the oven temperature to 350 °F and bake for about 30 minutes until the quiche is light golden brown on top and puffed.

1 (30 ounce) package frozen hash browns
1 1/2 cups 97% fat free cooked ham
1 1/2 cups shredded colby-monterey jack cheese
12 large eggs
1/2 cup heavy cream
1 cup 1% low-fat milk
1 teaspoon onion powder
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 350*. Break up chunks of hashbrowns and place in a 9" x 13" casserole dish. Spray top of hashbrowns with cooking spray. Bake for 20 minutes. While hashbrowns are baking, prepare ham and cheese. In a separate bowl, add eggs, cream, milk, onion powder, salt, and pepper. Use an electric mixer and beat for 1 minute. When hashbrowns are done, sprinkle ham evenly on top of hashbrowns, then sprinkle cheese evenly on top of the ham. Pour egg mixture all over and put back in oven for 25 minutes. Pull casserole out and put aluminum foil loosely over top so that it doesn't brown too much. Put back in oven for an additional 15 minutes. Let set for 15 minutes and serve.

  • Preheat oven to 325°F. Peel and coarsely shred potatoes. Place potatoes in a large bowl; add enough water to cover potatoes. Stir well. Drain in a colander set over the sink. Repeat rinsing and draining two or three times until water runs clear. Drain again, pressing out as much water as you can with a rubber spatula. Line a salad spinner with paper towels; add potatoes and spin.* Repeat, if necessary, until potatoes are dry. Transfer potatoes to a large bowl. Sprinkle potatoes with 1/4 teaspoon of the salt and the black pepper, tossing to combine.
  • In a 12-inch nonstick skillet** heat 1 tablespoon of the oil and the butter over medium-high heat until butter foams. Add potatoes to the skillet, spreading into an even layer. Gently press with the back of a spatula to form a cake. Reduce heat to medium. Cook, without stirring, about 12 minutes or until the bottom is golden brown and crisp.
  • Place a baking sheet or cutting board over the top of the skillet. Carefully invert the skillet to transfer the potatoes to the baking sheet. If needed, add the remaining 1 tablespoon oil to the skillet. Using the baking sheet, slide the potatoes back into the skillet, uncooked side down. Cook about 8 minutes more or until the bottom is golden brown.
  • Lightly grease a 9-inch pie pan or plate. Use the baking sheet to transfer hash browns to pie pan, pressing hash browns into the bottom and up the sides of the pie pan.
