HASH BROWN SAUSAGE MUFFINS RECIPE
These hash brown breakfast muffins are perfect for busy weekday mornings. Make up a batch of breakfast hash brown muffins and freeze for later.

Steps:
- Heat oven to 400 degrees F. Place baking cups in muffin trays, if using. (See note above about silicone, paper, and foil baking cups.) Set aside.
- In a large frying pan, cook pepper strips, green onions, ground beef, and chorizo over medium heat. Stir frequently. Use a spoon to break up the meat and chop peppers into small pieces. Cook until meat is thoroughly browned.
- Add raisins. Stir to thoroughly combine. Turn off heat. Remove from the stovetop and set aside.
- In a large bowl combine eggs, egg whites, salt, and pepper. Beat eggs.
- In another large bowl, combine hash browns and meat mixture. Mix until combined. Place 1/4 cup of hash brown and meat mixture into baking cups. Baking cups should be filled to almost the top. Do not overfill.
- Place almost 1/4 cup of egg mixture into the baking cup. The egg mixture should almost reach the top of the baking cup.
- Sprinkle some cheese on top of each muffin cup.
- Place the hash brown sausage muffins in the oven for 12-14 minutes until the top starts to brown. A toothpick inserted in the center of the cup should come out clean.

- Prepare sausage according to package directions. cool slightly and cut into 1/2-inch pieces; set aside.
- In a bowl, combine hash browns, butter, salt and pepper; divide evenly into 12 greased muffin cups. Press mixture onto sides and bottom of muffin cups.
- Bake at 400 degrees F for 12 minutes or until lightly browned. Remove from oven; divide sausage pieces into muffin cups.
- In a bowl, combine eggs, cheese and bell pepper. Spoon mixture evenly into muffin cups. Sprinkle with chives or onion. Return to oven, bake 13-15 minutes or until set. Serve.

- Preheat the oven to 425 degrees F (220 degrees C).
- Lightly spray a muffin tin with cooking spray.
- In a bowl, mix thawed hash browns, cheese, salt, and pepper. Evenly distribute the mixture in the muffin cups, pressing down the bottoms and up on the sides to create "cups." Bake for 20 minutes, or until golden brown around the edges.
- In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes, until browned, stirring frequently to break up the sausage into small pieces. Drain.
- In a bowl, mix the cooked Jimmy Dean sausage with the bell pepper, onion, and green chili.
- Carefully remove the muffin tin from the oven and fill halfway with the sausage and pepper mix. Top each cup with 1 raw egg.
- Place the muffin tin back in the oven for about 10 minutes, or until the eggs have set to your liking.
- Enjoy immediately, or store in the refrigerator. Reheat in the microwave or oven for 10 minutes at 350 degrees F (175 degrees C).
HASH BROWNS, SAUSAGE, AND BACON FRITTATA
This is a Schwann's recipe idea that I made over. You can make most of this the night before, and bake it in the morning (see directions). My DH doesn't like anything spicy hot, so I don't use 1/2 the jalapeno cheese, but suit yourself!

- Preheat oven to 425 degrees.
- Place hash browns into lightly sprayed 9"x11" pan and press down evenly to form a crust. Drizzle with butter and bake for 25 minutes.
- Place cheeses, sausage, and bacon over the crust. If desired, cover at this point and refrigerate until the next day.
- Beat milk and eggs together. Pour over cheese and meat.
- Cook in a 350 degree oven for 30 minutes.

SAUSAGE BRUNCH MUFFINS
These were found in a bonus book from Taste of Home's Simple & Delicious and thought they sounded very good. The recipe is credited to Beverly Borges of Rockland, MA. The recipe I adapted gave the yield at 24. There were some adjustments made to the original recipe; i.e., the addition of cheese and onions. I baked these in silicone muffin pans and the yield was 18.

- Preheat oven to 425 degrees and spray 24 muffin cups with non-stick cooking spray.
- Over medium heat, brown the sausage in a skillet; drain and set aside.
- In a large bowl, combine the biscuit mix, milk, water, chilies and egg; mix well.
- Stir in the corn and drained sausage; gently mix in grated cheese.
- Fill the prepared muffin tins 2/3 full and bake in preheated oven for 15 to 18 minutes.
- Cool 5 minutes; remove from pan and place of a wire rack to cool.
- Serve warm or allow to cool completely, place in a zip-lock bag and freeze.
- To reheat: Defrost overnight in refrigerator, wrap in foil and place in cold oven; set temperature for 350 and allow oven to come to temperature, warm for 8 to 10 minutes or until heated through.
