20 oz bag of frozen hashbrowns
2 cups of shredded cheddar cheese
1 teaspoon of salt
1 teaspoon of pepper
2 cups of sour cream
10.5 oz can of cream of chicken soup or one batch of homemade cream of chicken soup
1/2 cup of milk
1 lb of cooked chicken (shredded)
2 cups of corn flakes (crushed)
4 tablespoons of butter (melted)

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl mix together the salt, pepper, sour cream, cream of chicken soup and milk. Then stir in the chicken, cheese and hashbrowns.
  • Place into a lightly greased 9x13 baking pan.
  • In a small mixing bowl, mix together the crushed cornflakes with the melted butter. Sprinkle over the casserole.
  • Bake for 1 hour or until golden brown.

This copycat hash brown casserole is an incredibly comforting side dish you'll want to make for both breakfast spreads and dinner parties alike. We opted to ditch the canned creamed soup and make a homemade cheese sauce instead. The result is a homey rendition of the classic Cracker Barrel dish.

5 tablespoons unsalted butter
1/4 teaspoon garlic powder
1 small onion, finely diced
Kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
1/2 cup half-and-half
1/2 cup low-sodium chicken broth
1 cup sour cream
2 cups shredded mild Cheddar
One 30-ounce bag frozen shredded hash browns, thawed

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon of the butter.
  • Melt the remaining 4 tablespoons butter in a large saucepan over medium-high heat. Add the garlic powder, onion, 1/2 teaspoon salt and a few grinds of pepper and cook until the onion is softened, about 5 minutes. Add the flour and cook, whisking, until sizzling all over and light golden, about 2 minutes. Whisk in the half-and-half and chicken broth, return to a simmer and cook until thickened, about 1 minute. Remove from the heat and stir in the sour cream and 1 1/2 cups of the Cheddar. Add the hash browns and toss until coated in the sauce. Add salt and pepper to taste.
  • Transfer the hash brown mixture to the prepared baking dish, then top with the remaining 1/2 cup Cheddar. Bake until browned and bubbling at the edges, about 45 minutes. Raise the oven temperature to 475 degrees F and continue to bake until the top is crisp and browned all over, about 5 minutes.

1 medium green bell pepper diced
½ cup diced onion
2 cups cubed rotisserie chicken
8 ounces cheddar cheese shredded
16 ounces sour cream
10 ¾ ounces condensed cream of chicken soup
1 envelope (1 ounce) ranch dressing mix
¼ teaspoon black pepper
30 Ritz crackers crushed (1 sleeve or 2 fresh stacks)
1 tablespoon unsalted butter melted

Steps:

  • Preheat the oven to 375 degrees Fahrenheit.
  • Add the hash browns, bell peppers, onion, and chicken to a large mixing bowl and stir well.
  • Toss everything together. Toss in the shredded cheese until everything is well-combined.
  • Place all of the ingredients in a small bowl and mix well. Pour in the sour cream and stir until well combined. Using a whisk, mix all of the ingredients.
  • Toss the potato mixture with this mixture, folding it in until everything is completely combined.
  • Pour the potato mixture into a 9x13x2 inch baking dish that has not been buttered.
  • Preheat the oven to 350 degrees for 45 minutes.
  • In a small mixing bowl, combine the broken crackers and melted butter until well combined. Toss everything together.

  • Serve with a green salad to make a whole supper out of this dish.
