ONE-PAN CHEESY SPAGHETTI PIE



One-Pan Cheesy Spaghetti Pie image

A great recipe for a night when you need a delicious meal, but don't feel like spending hours making something!

1/2 cup extra virgin olive oil
6 cloves garlic, minced or grated
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon dried parsley
1 teaspoon crushed red pepper flakes
kosher salt and pepper
1 pound dry spaghetti
1 jar (24 ounce) marinara sauce
4 eggs
1 cup whole milk ricotta cheese
1 1/2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
fresh basil and/or oregano, for topping

Steps:

  • 1. Preheat the oven to 375 degrees F. 2. In a large 12-inch (or larger) oven-safe saucepan, combine the olive oil, garlic, oregano, basil, parsley, and crushed red pepper flakes. Cook over medium heat, stirring, often until the garlic is golden and caramelized, about 5 minutes. Carefully add the marinara sauce, 2 cups water, and season with salt and pepper. Add the spaghetti, breaking it in half if needed to make it fit in your pan. Increase the heat to heat to high. Bring the mixture to a boil. Stir frequently until the spaghetti is al dente, about 8-10 minutes. 3. Meanwhile, in a medium bowl, combine the eggs, ricotta, and parmesan. 4. Remove the pasta from the heat and stir in the ricotta cheese mix. Top with mozzarella. Transfer to the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly. Top with fresh basil. EAT!

2 tablespoons olive oil, plus more for greasing
Kosher salt
8 ounces spaghetti
2 large eggs
1/2 cup grated Parmesan cheese
1 pound ground turkey (or ground beef or chicken)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 cups Weelicious Tomato Sauce, recipe follows
1 cup ricotta cheese
1/2 teaspoon dried Italian seasoning
1 cup shredded mozzarella
1 tablespoon olive oil
1/2 onion, diced
1/2 teaspoon kosher salt
1 clove garlic, chopped
1/2 teaspoon dried Italian seasoning
One 15-ounce can tomato sauce
1 teaspoon sugar, honey or agave nectar

Steps:

  • Preheat the oven to 350 degrees F. Grease a deep-dish pie plate with olive oil.
  • Bring a large pot of salted water to a boil. Cook the spaghetti according to the package directions until al dente. (This is a good time to make the tomato sauce.) Drain then transfer the spaghetti to a large bowl. Add 1 tablespoon of the olive oil and toss to coat. Set aside.
  • Whisk the eggs in a medium bowl, then whisk in 1/4 cup of the Parmesan cheese. Pour over the spaghetti and toss to coat. Transfer to the prepared pie plate and spread to make a "pie crust."
  • Heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add the turkey, 1/2 teaspoon salt, garlic powder and onion powder; cook, breaking up the turkey with a wooden spoon, until the turkey is cooked through, about 5 minutes.
  • Pour the tomato sauce over the turkey and stir to combine. Set aside.
  • Place the ricotta, Italian seasoning and the remaining 1/4 cup Parmesan in a bowl and stir to combine. Spread over the pasta, then layer on the meat sauce and finally, sprinkle with the mozzarella.
  • Place the pie plate on a rimmed baking sheet and bake until the pasta is golden brown and the cheese is bubbling, about 30 minutes.
  • Let the spaghetti pie cool slightly, then cut into wedges and serve.
  • Heat the olive oil in a small saucepan over medium heat. Add the onions and salt and cook, stirring occasionally, for 5 minutes.
  • Add the garlic and Italian seasoning and continue to cook, stirring, for 1 minute. Add the tomatoes and sugar and cook, stirring occasionally, until slightly thickened, 5 to 10 minutes.

Think of this pie as a vehicle for leftovers or those stray vegetables you have in your fridge! You could add cooked mushrooms or frozen peas or leftover cooked sausage or chicken. We use spaghetti here, but any long shape of pasta will work just as well.

3 tablespoons extra-virgin olive oil, plus more for brushing
8 ounces spaghetti
2 large eggs, beaten
1/2 cup plus 2 tablespoons grated Parmesan cheese
1 small onion, chopped
1 small zucchini, chopped
2 cloves garlic, chopped
1 pound ground beef (85% lean)
1 teaspoon dried oregano
Pinch of red pepper flakes
2 tablespoons tomato paste
1 8-ounce can tomato sauce
1 cup fresh ricotta cheese (about 8 ounces)
1 cup grated low-moisture mozzarella cheese (about 4 ounces)

Steps:

  • Position a rack in the lower third of the oven and preheat to 425˚ F. Bring a large pot of salted water to a boil. Brush the bottom and sides of a 9-inch deep-dish pie plate with olive oil.
  • Add the spaghetti to the boiling water and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain the spaghetti and shake the colander to remove the excess water. Put the spaghetti in a large bowl and toss with 2 tablespoons olive oil and 1 teaspoon salt. Add the beaten eggs and 1/2 cup Parmesan, then toss.
  • While the spaghetti cooks, heat the remaining 1 tablespoon olive oil in a large skillet over medium heat. Add the onion and zucchini and cook until softened, about 5 minutes. Add the garlic and cook until softened, 1 more minute. Crumble in the beef, season with 1/2 teaspoon salt and cook, breaking it up with a wooden spoon, until browned, 3 to 4 minutes. Stir in the oregano and red pepper flakes, then clear a spot in the center of the skillet and add the tomato paste. Let it toast for 30 seconds, then stir into the beef mixture. Add the tomato sauce, 1/2 cup of the reserved cooking water and 1/4 teaspoon salt, then bring to a simmer and cook until very thick, 3 to 5 minutes. Season with more salt to taste.
  • To assemble the pie, transfer the spaghetti mixture to the pie plate and press to form a crust with a flat bottom and slightly higher sides. Spread the ricotta in the spaghetti crust, leaving a border around the edges. Spoon the meat sauce on top, then sprinkle with the mozzarella and the remaining 2 tablespoons Parmesan. Bake until the bottom and sides of the pie are golden and the cheese is browned, about 25 minutes. Transfer to a rack and let cool 5 minutes before slicing.

Nonstick cooking spray, for greasing the pan
Kosher salt and freshly ground black pepper
1 pound spaghetti
1 pound ground beef (85 percent lean)
1 tablespoon olive oil
1 medium yellow onion, chopped
2 cups marinara sauce, homemade or store-bought (I like Rao's)
1/2 cup whole-milk ricotta cheese
2 tablespoons minced fresh flat-leaf parsley
3 large eggs
1/2 cup plus 2 tablespoons grated Parmesan
1 cup shredded mozzarella

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-3-inch cake pan with cooking spray.
  • Bring a large pot of salted water to a boil. Add the spaghetti and cook for 3 to 4 minutes less than the package recommends, so that it is very al dente. Drain and reserve.
  • In a large skillet over medium-high heat, brown the beef, 5 to 8 minutes; season with salt and pepper. Transfer the beef to a paper towel-lined plate to drain. Wipe the skillet clean with a paper towel. Heat the olive oil in the skillet over medium heat and saute the onions until translucent, 4 to 5 minutes. Set aside.
  • In a large bowl, whisk together the marinara, ricotta, parsley, eggs, 1/2 cup of the Parmesan, 1 teaspoon salt and 1/4 teaspoon pepper. Add the cooked spaghetti, beef and onions and toss to evenly coat. Transfer to the prepared pan, top with the mozzarella and sprinkle with the remaining 2 tablespoons Parmesan.
  • Bake until the cheese is bubbling and golden brown, 25 to 30 minutes. Let rest for 5 minutes, then cut into wedges and serve.

8 oz. spaghetti (regular, whole wheat or gluten free)
1 - 1 1/3 cups shredded Asiago, Parmesan or Romano cheese
4 eggs, whisked
1 Tablespoon olive oil
1 1/2 cup chopped onion
3 - 5 cloves garlic, peeled & chopped
4 cups peeled, chopped eggplant (or zucchini)
3/4 cup chopped banana or bell pepper
Red Robin Seasoning (or your favorite seasoned salt), Trader Joe's 21 Seasoning Salute (or your favorite no-salt seasoning) and hot pepper flakes
1/4 cup chopped mixed fresh basil & sage
2 cups (packed) kale or spinach leaves
1 1/2 - 2 cups chopped fresh garden tomato
3 - 4 cups meat sauce (recommended: my Italian Bolognese or Greek Moussaka sauce) or for a vegetarian version: your favorite marinara
2 - 4 cups shredded part-skim mozzarella

Steps:

  • Bring a large pot of salted water to boil. Add the spaghetti and cook until tender. Strain out the liquid. Spray two pie pans with cooking spray or line with parchment paper.
  • While the spaghetti is cooking, prep the filling. Heat a large frying pan over medium heat. Add the oil and use a spatula to coat the bottom of the pan. Add the onion and garlic and saute until the onion is soft & translucent. Stir in the eggplant and pepper. Season to taste with the seasonings and cook until the eggplant is tender.
  • Add in the fresh herbs, kale (or spinach) and tomatoes and cook for a minute or two longer, until the kale is wilted.
  • Put the spaghetti back in the pan and toss with the cheese and egg. Divide the pasta amongst the two pie pans, making a well in the center and pushing the pasta up the sides to form a "crust".
  • Add half the filling to each pan, spreading out to form a smooth layer, then top with sauce and cheese.
  • Bake at 350 F. for 25 - 30 minutes or until the cheese is melted and bubbly and the pie is heated through. Let cool for about 10 minutes, then cut into pie pieces and enjoy!
