2/3 cup uncooked wild rice
2/3 cup chopped onion
2/3 cup chopped carrot
2 tablespoons butter
6 cups reduced-sodium chicken broth
2 medium potatoes, peeled and cubed
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup chopped fresh broccoli
3 cups cubed cooked chicken breast
1/2 cup all-purpose flour
1 cup fat-free half-and-half

Steps:

  • Cook rice according to package directions. Meanwhile, in a large saucepan coated with cooking spray, cook onion and carrot in butter for 2 minutes. Stir in the broth, potatoes, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add broccoli; cook 3-7 minutes longer or until potatoes are tender. , Drain rice if necessary; fluff with a fork. Stir chicken and rice into potato mixture; heat through. In a small bowl, combine flour and half-and-half until smooth. Gradually stir into soup. Bring to a boil; cook and stir for 2 minutes or until thickened.

Mexican Chicken Rice Soup is made with chicken, brown rice, tomatoes, onion and lots of garlic. This nourishing chicken and rice soup is one of my favorite Mexican soup recipes to make and it rivals any restaurant Mexican chicken rice soup there is!

2 tablespoons extra-virgin olive oil
8-10 cloves garlic
1 onion, peeled, cut in half then thinly sliced
1 pound cooked chicken meat, chopped or shredded
1 teaspoon ground cumin
6-8 cups low-sodium chicken broth
2 Roma tomatoes, seeded and chopped
4 thin slices of jalapeno, seeds removed
2-3 cups Brown Spanish Rice
2 tablespoons extra-virgin olive oil or avocado oil
1 cup long-grain brown rice, rinsed under water
1/4 cup tomato sauce
2-1/4 cups low-sodium chicken broth (or vegetable broth of you want it vegan)
1/4 cup brown onion, finely minced
1/4 cup celery, finely minced (mince a tablespoon of celery leaves to add as well if you have any - they add a ton of flavor)
1-1/2 teaspoons onion powder
1 teaspoon garlic powder
2 teaspoons dried parsley

Steps:

  • Add brown rice to a fine mesh strainer and run under cold water until the water runs clear. (This step is important for removing starches on the outside of the rice which will cause the rice to clump and stick together as it cooks).
  • Heat oil in saucepan. Add onion, celery and cook for about 2 minutes, then stir in the brown rice with the onion and celery and cook another 3-4 minutes or until the rice starts to turn golden brown.
  • Stir in the tomato sauce, onion powder, garlic powder and dried parsley.
  • Pour in the chicken broth and stir. Bring pot to a boil then reduce heat to a low simmer.
  • Place lid on pot and simmer rice for 20 minutes or until the liquid has absorbed.
  • Remove pot from heat, and leave the lid on the pot and let the rice finish steaming in the pot for about 10 minutes before fluffing.
  • Fluff rice using a fork and serve.
  • Make Mexican Brown Rice (recipe above)
  • Chop or shred chicken. Chop or shred your poached or store-bought rotisserie chicken and set aside.
  • Heat oil in large saucepan or Dutch oven and saute the onion for 2 to 3 minutes, then add in the minced garlic and saute for another 1 to 2 minutes.
  • Stir in the chicken, tomatoes and seasoning. Add in the torn pieces of chicken, chopped tomatoes, jalapeno slices and cumin with the onions and stir.
  • Pour in chicken broth and bring to a boil. Reduce heat to a simmer. Place lid on pot and simmer on low heat for 30 minutes. If you're adding 1/3 cup lime juice, you'll turn off the heat and stir in the lime juice
  • Spoon 1/4 cup Spanish Brown Rice in each bowl, then ladle soup over rice.
  • Garnish each bowl of chicken rice soup generously with avocado, chopped cilantro, and lime wedges.

3 medium onions
3 bone-in chicken breast halves, skin removed
4 cups water
3 celery ribs, halved
1 teaspoon salt
1/8 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
3 medium carrots, thinly sliced
4 teaspoons chicken bouillon granules
1 small zucchini, halved and thinly sliced
1 cup frozen peas
1 avocado, peeled and sliced

Steps:

  • Chop one onion; set aside. Quarter the other two; place in a Dutch oven with the chicken, water, celery, salt and pepper. Cover and simmer for 2 hours or until the chicken and vegetables are tender. Remove the chicken; set aside. Discard celery and onion. , To broth, add the tomatoes, carrots, bouillon and chopped onion. Cover and simmer for 30 minutes or until the carrots are tender. , Debone and cube chicken; add to soup with zucchini and peas. Cover and simmer for 10 minutes or until zucchini is tender. Spoon into bowls. Garnish with avocado.

½ cup slivered almonds
2 cups chicken broth
½ cup uncooked brown rice
½ cup uncooked wild rice
3 tablespoons butter
3 onions, sliced into 1/2 inch wedges
1 tablespoon brown sugar
1 cup dried cranberries
⅔ cup fresh sliced mushrooms
½ teaspoon orange zest
salt and pepper to taste

Steps:

  • Place almonds on an ungreased baking sheet. Toast at 350 degrees F (175 degrees C) for 5 to 8 minutes.
  • Mix broth, brown rice, and wild rice in a medium saucepan, and bring to boil. Reduce heat to low, cover, and simmer 45 minutes, until rice is tender and broth is absorbed.
  • In medium skillet, melt butter over medium-high heat. Add onions and brown sugar. Saute until butter is absorbed and onions are translucent and soft. Reduce heat, and cook onions for another 20 minutes, until they are caramelized.
  • Stir cranberries and mushrooms into the skillet. Cover, and cook 10 minutes or until berries start to swell. Stir in almonds and orange zest, then fold the mixture into the cooked rice. Salt and pepper to taste.

32 ounce carton of chicken broth
1 10 ounce can cream of chicken and mushroom soup
4 cups water
1 lb chicken (I used 5 boneless, skinless chicken thighs)
4 ribs chopped celery hearts
3 chopped green onions
1 1/2 cups sliced carrots
1 package sliced baby portabella mushrooms
1 tsp dried garlic
1 cup long grain rice
salt & pepper to taste

Steps:

  • Bring broth, cream of chicken & mushroom soup and water to a boil.
  • Add chicken and bring down to a simmer for 1 hour until chicken is tender.
  • Then remove chicken and set aside to cool. Add celery, onions, garlic and mushrooms to broth and simmer until celery is softened.
  • Then add carrots and rice. Let simmer for 20 minutes. While soup is simmering, chop chicken into bite size pieces.
  • Finally add chicken to soup and enjoy.

1 (7 ounce) package Rice-A-Roni, chicken flavored
4 boneless skinless chicken breast halves (about 1 pound)
2 tablespoons olive oil (use only 1 if you are going to bake)
1 cup apple juice or 1 cup cider
1 medium granny smith apple, chopped (about 1 cup)
1 cup sliced mushrooms (we used canned)
1/2 cup chopped onion
1/4 cup dried cranberries or 1/4 cup raisins
1 1/4 cups water

Steps:

  • In a large skillet over medium-high heat, heat 1 Tablespoon Olive Oil. Add chicken; cook 2 minutes per side or until brown. Remove from skillet; set aside. (skip this step if you are going to bake).
  • In same skillet over medium heat, saute rice-pasta mix with remaining 1 tablespoon Olive oil until pasta is golden brown.
  • Slowly stir in 1-1/4 cups water, rice's spice packet, apple juice, chopped apple, mushrooms, onion and cranberries; bring to a boil. (at this time you can either continue on the stove top or bake)
  • Place chicken on rice. Reduce heat to medium-low. Cover; simmer 15 to 20 minutes or until chicken is no longer pink inside and rice is tender. Let stand 5 minutes before serving.
  • OR.
  • Transfer the mixture to a 3 qt baking dish for baking.
  • Top with chicken and cover dish with foil.
  • Bake at 350 for 45 minutes to an hour or until chicken runs clear and rice is cooked all the way through.

3 tablespoons salted butter
1 medium onion, (diced)
3 carrots, (peeled and sliced thin)
3 stalks of celery, (diced)
1 red pepper, (diced)
2 cloves garlic, (chopped)
64 ounces chicken stock ((2) 32 ounce cartons)
5 small purple potatoes, (cut into 1 inch cubes)
1 zucchini, (cut into 1 inch cubes)
1 ear of corn, (cut off the cob)
2 chicken breasts (cut in half)
1 cup uncooked white rice
2 bay leaves
freshly ground black pepper to taste
1 tablespoon freshly squeezed lemon juice, (optional)

Steps:

  • Sauté the onion, carrots, celery and pepper in the butter on medium heat until the onion starts to turn transparent, about 3-5 minutes. Stir in the garlic and continue to sauté until fragrant.
  • Add in the potatoes, zucchini, corn, chicken, rice and seasonings.
  • Add in the chicken stock and cover and bring to a boil, reduce to a simmer until chicken is cooked thoroughly (160 degrees), about 20 minutes.
  • Remove chicken, let rest for several minutes.
  • Shred chicken and return to the pot. Squeeze lemon juice over soup to finish.
  • Serve warm with fresh parsley to garnish.
